8 small new potatoes, halved if large
Salt and freshly ground black pepper
4 slices bacon, cut into thirds
1 medium onion, finely chopped
2 pounds fresh green beans, ends trimmed

Steps:

  • In a large saucepan or medium Dutch oven, cook bacon over medium heat until it has rendered most of its fat and has begun to brown, about 5 minutes. Add the onion and saute until translucent, about 5 minutes. Add the green beans and potatoes and enough water to just cover them. Bring to a boil, then reduce the heat to low. Season with salt and pepper, to taste, then cover the pan and simmer until the beans are very tender, about 1 hour, stirring occasionally and adding more water if necessary to keep the beans covered. As the beans get close to being done they will become quite fragile, so take care when stirring.

3 pounds green beans
1/2 cup sugar
2 pounds small red new potatoes
2 tablespoons seasoned salt

Steps:

  • In a large pot, fill with enough water to just cover ham hocks and bring to a boil. Cover and simmer 45 minutes. Add beans and sugar and continue cooking another 25 minutes. Add potatoes and salt and cook until potatoes are tender, about 20 minutes more. Remove hocks from pot and remove meat from the bone. Add meat back to the pot, add salt and pepper, to taste, and serve.

This recipe was given to me by my Mother-in-law who raised 9 children and taught school for 40 years and didn't have much time to cook. It remains a family favorite with my children. Last night I had no broth, so I mixed Lipton's Garlic and Herb soup (1 packet) and 4 cups of water and it was wonderful, really added richness to the broth.

1 (16 ounce) package frozen green beans (or fresh)
1 large onion, cut into about eight wedges
2 cups ham, cut into bite sized pieces
vegetable broth or chicken broth
salt and pepper

  • I cook this in a crockpot all day, but may be cooked in a dutch oven on the stove, also.
  • Add all the ingredients and cover, cook on low for 8 to 10 hours.
  • If cooking on the stove you may need more broth, but the crockpot makes broth as it cooks, so you shouldn't need any more.
  • Use your own judgement on the amount of broth.
  • Serve with fresh, sliced tomatoes and corn bread for a great Southern meal.

This recipe was entitled "Abraham Lincoln's Favorite Dinner" in the The Big Platter Cookbook by Lou Jane Temple and A. Court Simmes. It calls for sliced ham hocks, which your butcher can cut up for you. I have made it with a big chunk of ham and it turned out great. You could also use smoked pork shank. We prefer to cook the onion with the rest of the vegetables rather than serve raw.

5 lbs ham hocks, sliced in 3 pieces
4 lbs tiny new potatoes, skins on
3 lbs string beans, ends snipped
4 tablespoons butter
1/4 teaspoon ground pepper (to taste)
1 white onion, peeled and diced

Steps:

  • Place the slices of ham hock into the bottom of a tall stockpot. Add enough cold water to barely cover. Place the new potatoes on top of the pork and the string beans on top of the new potatoes.
  • Bring to a boil over high heat. Cover and reduce the heat to a simmer. Cook for 2 hours.
  • Remove string beans, new potatoes, and pork from the pot. Reserve the cooking liquid (known as "pot likker" in some parts of the country.). Take the meat off the bones, trim off the fat, and reserve the meat.
  • Roughly chop the potatoes and spread them in a layer on a large platter. Dot generously with butter and freshly ground pepper. Place the string beans on top of the potato layer and then top with the pork. Drizzle some of the reserved "pot likker" over all and sprinkle with the diced white onion.
  • Everyone should take some of everything, along with a slice or two of cornbread. Good eatin!

"BEST EVER" GREEN BEANS AND NEW POTATOES



This simple, delicious recipe dates back generations in my family...we always get half-runner beans for this recipe and we can find them at our local produce store around Memorial Day (they are shipped in but first taste of the season is still OH SO GOOD!!! You can tweak the recipe according to your tastes by making it sweeter...

3-4 lb fresh half runner beans (ends snapped off, strings removed, broken in half or thirds)
1-2 lb jowl bacon (skin removed and sliced)
1 large yellow onion diced
1/4-1/2 c bacon grease or if you don't have any saved bacon grease you can use lard but bacon fat is most flavorful
salt and pepper to taste
1-2 lb red new potatoes
1 stick butter

Steps:

  • 1. Half runners have the very distinct feature of a string that runs down both sides of the bean...i find it easiest to snap off one end of the bean and pull the string down then snap the other end and remove the string on the other side....This will help you remove most of the strings but you will never get them all so don't get frustrated...small price to pay for the end result! So, step one is to snap off the ends and remove the string and break the beans into halves, or thirds...then put them in your kitchen sink and run water over them to wash them off
  • 2. Dice up your onion and remove the skin off of a 1-2 lb chunk of jowl bacon...salt pork can also be used but I prefer the jowl bacon...slice the jowl in about 1/4 in. slices...put your bacon grease or lard in a large stock pot on med. hi heat, add your jowl bacon and let it get kinda brown on the edges and fry up a little bit...add diced onion at this point as well...Saute onion for about 5 min.
  • 3. Put all of your beans into the stock pot, add water just up to the top of the beans (do not cover completely), add salt & pepper (I use about an 1/8 of a cup each of the salt and pepper for optimum flavor but you can adjust according to your dietary allowances and taste. Cover and bring to a hard boil then turn heat down and just cook with a steady light boil on about medium for approximately an hour.
  • 4. While the beans are cooking boil your potatoes. Tiny potatoes are rare at the grocery store though the earliest new potatoes at the farmers market can be just this small. I would pick out the smallest red-skinned potatoes available, of similar size so they cook evenly. Cook them whole,(you can peel them if you want, but it can be tedious with potatoes of a very small size) then cut into halves or quarters when tossing with the butter. In a large sauce pan boil till fork tender....drain and add the stick of butter to the potatoes...when melted and your beans are done dump the potatoes (with butter) over into the bean pot and stir...Adjust seasonings and Enjoy!!

3 or 4 new potatoes
1/2 small onion, chopped
chicken broth or water
salt to taste
3 slice bacon
2 or 3 Tbsp pimento, diced (i used jarred) optional

Steps:

  • 1. Wash, clean and snap green beans. Wash new potatoes and remove any bad spots; cut in half. NOTE: if potatoes are small enough it's not necessary to cut in half.
  • 2. Place beans, potatoes, and onion in appropiate size pot, cover beans with chicken broth or water. Add salt to taste and place strips of bacon on top.
  • 3. Cook over medium heat until beans and potatoes are tender. Stir in pimento if desired. Remove bacon strips before serving.

Fabulous Southern Green Beans and New Potatoes with Ham~
2 tablespoons butter
1 onion, diced or chopped
3 cloves garlic, minced
3 or 4 ham hocks, ham end pieces or ham shanks
2 to 3 pounds of fresh green beans, cleaned and snapped
3 cans chicken broth
3 cans water (use a broth can to measure)
8 or more, new potatoes, pealed and washed
1 tablespoon sugar
Kosher salt and pepper to taste

Steps:

  • Place ham hocks or shanks in water enough to cover & let simmer a good 2 hours. Remove ham & set aside to cool. Reserve broth. When cool enough to handle, cut into chunks. In a large heavy stock pot, melt butter on medium high. Add onions and garlic and ham. Cook until onions and garlic are tender and meat has browned a bit. Turn down the heat to medium and add green beans, chicken broth and 3 cans full of the broth from the cooked ham hocks. Just cover the beans with the liquid. If you need a bit more water, add it. Cover and cook beans for about an hour. Add, sugar, salt and pepper and stir well. Add potatoes and cook covered for another 25 to 35 minutes, or until the potatoes are fork tender. Remove lid for the last 10 minutes of cook time. Check and re-season if necessary. Crock pot method: place all in the pot & cook on low all day! Before serving remove the ham & cut into pieces & stir back into the beans & potatoes!

1 1/2 lb thick ham steak, cut into 1 inch cubes ( leftover ham is perfect )
3 can(s) whole potatoes, quartered (you can use fresh potatoes, parboiled about 4 cups, cubed)
4 can(s) green beans, drained
3 Tbsp dried minced onion
1 stick butter, unsalted, melted
1/3 c soy sauce
1 1/3 c brown sugar, firmly packed
1 Tbsp garlic powder

  • 1. Mix together brown sugar, soy sauce, butter and garlic powder together till smooth. set aside.

This dish is one we both grew up on, and when we cook it at home, the smoky aroma of these simmering vegetables instantly transports us to our mothers' kitchens. There are few flavors more satisfying to any Southerner than the taste of tender new potatoes and green beans that have absorbed the salty, porky goodness of a smoked ham hock.

2 teaspoons kosher salt
2 pounds small red new potatoes, rinsed and trimmed of any imperfections
1 recipe Smash Seasoning (page 112)
Freshly ground black pepper
Hot sauce, for serving (optional)

Steps:

  • Place the ham hocks in a large pot, and add enough water just to cover, then bring the water to a boil. Reduce the heat to low, cover, and simmer for 1 1/2 hours, skimming any scum that rises to the surface, until the ham hocks are very tender and the meat is falling away from the bone. Add the green beans, sugar, and salt to the pot and continue cooking, stirring occasionally, for another 25 minutes. Add the potatoes and Smash Seasoning to the pot, and cook until the potatoes are tender, about 20 minutes more.
  • Remove the ham hocks from the pot. Discard the leathery skin (it should pull off easily), and, using a fork, pull the meat from the bone. Coarsely chop the meat, and add it back to the pot. Taste for seasonings, and then serve with hot sauce, if desired.

I am on a low salt diet so the spices and seasonings can be modified.

1 pound(s) green beans, fresh
1 box(es) new red potatoes
3 slice(s) turkey bacon
1 cup(s) onion
3 cup(s) water
3 tablespoon(s) butter
5-6 pinch(es) seasonings

Steps:

  • First, wash and snap your green beans
  • Wash and cut your potatoes into slices *Note I used box of potatoes since I got from farmers market. You can use as much as you want
  • take your turkey bacon and and rinse off and chop into diced squares
  • chop your onion into one cup
  • add all ingredients into crockpot
  • Add 2-3 cups of water, 3 TBSP of butter( I use Brummel and Browns) and I added Mrs. Dash Salt Free spices, Oregano, and a shake of garlic powder. You don't have to use the seasonings I use. Anything tastes good in it.
  • Cook on low for 5 hours
