2 pounds fresh green beans, trimmed and cut into 1-1/2-inch pieces
1/4 cup olive oil
3 tablespoons lemon juice
3 tablespoons balsamic vinegar
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon ground mustard
1/8 teaspoon pepper
1 large red onion, chopped
4 cups cherry tomatoes, halved
1 cup (4 ounces) crumbled feta cheese

Steps:

  • Place beans in a 6-qt. stockpot; add water to cover. Bring to a boil. Cook, covered, 8-10 minutes or until crisp-tender. Drain and immediately place in ice water. Drain and pat dry., In a small bowl, whisk oil, lemon juice, vinegar, salt, garlic powder, mustard and pepper. Drizzle over beans. Add onion; toss to coat. Refrigerate, covered, at least 1 hour. Just before serving, stir in tomatoes and cheese.

1 cup white vinegar
1 tablespoon sugar
1 tablespoon salt
2 lbs green beans, stem ends trimmed
1/2 small red onion, sliced thin
1/2 cup mayonnaise
1/4 cup plain yogurt
1 tablespoon extra virgin olive oil
1 tablespoon white vinegar
1 garlic clove, minced
salt and pepper

Steps:

  • Fill large bowl with ice water and set aside.
  • In a large pot over high heat, bring 4 quarts water and 1 cup vinegar to boil. Add sugar, salt, and beans and cook until beans are just tender, about 3 minutes.
  • Add onion to pot and cook until just softened, about 30 seconds.
  • Drain vegetables in colander and immediately transfer to ice water.
  • Once beans and onion are cool, drain again and dry thoroughly with paper towels.
  • Whisk mayonnaise, yogurt, oil, and 1 tablespoon vinegar in large bowl. Add chilled beans and onions and toss until well coated. Season with salt and pepper.

What makes this cold green bean salad so good is that the beans marinate while they are still warm--that way the beans soak up the vinaigrette and become more flavorful.

2 pounds fresh green beans, trimmed
½ cup balsamic vinegar
⅓ cup extra-virgin olive oil
1 small sweet onion, thinly sliced
1 clove garlic, minced
2 teaspoons chopped fresh parsley
1 teaspoon white sugar
1 teaspoon salt
freshly ground black pepper to taste

Steps:

  • Bring a large pot with lightly salted water to a boil over high heat. Add beans and cook, uncovered, until soft but still firm to the bite, 7 to 10 minutes. Check often so beans don't overcook.
  • Combine vinegar, olive oil, onion, garlic, parsley, sugar, salt, and pepper in a large bowl.
  • Drain cooked green beans and mix with dressing in the bowl while still warm. Allow to marinate at room temperature for at least 1 hour. Serve at room temperature or chilled.

2 cups canned green beans (drained and liquid reserved)
2 tablespoons chopped onions
2 tablespoons butter, melted
2 tablespoons flour
1 dash salt and pepper
1 tablespoon vinegar
1 tablespoon sugar
1/2 cup sour cream
2 tablespoons chopped parsley

Steps:

  • Drain beans and save liquid.
  • Brown onion in butter. Blend in flour. Add liquid from beans and cook until thick, stirring constantly.
  • Add salt, pepper, vinegar, sugar and sour cream.
  • Add beans and heat thoroughly. Serve immediately, garnished with chopped parsley.

500 g green beans
30 g butter or 30 g margarine
2 tablespoons onions, finely chopped
1/2 cup sour cream or 1/2 cup plain yogurt, at room temperature
1 1/2 teaspoons paprika

Steps:

  • Bring about 2 cm of lightly salted water to the boil in a medium-size saucepan. Add the trimmed beans and cook, covered, for 8 minutes or until crisp-tender. Drain in a colander.
  • In the same saucepan, melt the butter and cook the onion over low heat for one minute.
  • Return the beans to the saucepan, add the sour cream and paprika, and stir together. Heat the mixture gently. but do not let it boil or the sauce will curdle.
  • Serve!

2 tablespoons unsalted butter
1 pound cremini mushrooms, sliced
1 tablespoon fresh thyme leaves
1 teaspoon Worcestershire sauce
2 ribs celery, thinly sliced
2 cloves garlic, minced
Kosher salt
1 pound green beans, trimmed
1 large head romaine lettuce, roughly chopped
1/2 cup sliced almonds, toasted
1/2 cup crispy fried onions (more if desired!)
1/2 cup low-fat yogurt
1/3 cup grated Parmesan
1/4 cup mayonnaise
2 tablespoons sherry vinegar
Kosher salt and freshly cracked black pepper

Steps:

  • For the salad: Melt the butter in a large, heavy-bottomed skillet over medium-high heat. Add the mushrooms to the melted butter and cook, stirring occasionally, until they are golden brown and have released their moisture, about 6 minutes. Stir in the thyme, Worcestershire, celery, garlic and salt to taste. Cook until the garlic and thyme are aromatic and the celery is starting to brown on the edges, about 2 minutes. The celery should still be lightly crisp. Add more salt if desired. Take off the heat and spread on a sheet tray to cool.
  • Meanwhile, bring a medium pot of water to a boil. Set up a large bowl of ice water and line a sheet tray with a paper towel or kitchen towel. Generously season the boiling water with salt. Add the green beans and cook for 2 to 3 minutes. Remove with a spider or drain in a colander and transfer to the ice bath. Once cooled, transfer the green beans to the lined sheet tray and thoroughly pat dry.
  • For the creamy Parmesan dressing: Whisk together the yogurt, Parmesan, mayonnaise, sherry vinegar, 1/4 teaspoon salt and 1 teaspoon pepper in a large bowl. Refrigerate if not using immediately.
  • To assemble: To the bowl of dressing, add the green beans, mushroom mixture and romaine. Toss to combine and everything is fully coated. Transfer to a serving dish and top with the almonds and crispy fried onions. Serve immediately.

CREAMY HORSERADISH AND GREEN BEAN SALAD



Creamy Horseradish and Green Bean Salad image

3 tablespoons creamy horseradish
2 tablespoons extra-virgin olive oil
1 tablespoon apple cider vinegar
Zest and juice from 1 large lime
Kosher salt and freshly ground black pepper
3/4 pound small to medium green beans, trimmed
6 sprigs fresh basil, stemmed

Steps:

  • Make the dressing: Whisk together the horseradish, olive oil, vinegar and lime zest and juice with a pinch of salt in a large bowl. Taste for seasoning.
  • Cook the green beans: Fill a medium saucepot with water and bring to a boil. Fill a large bowl halfway with ice cubes and add some cold water. Place a colander squarely inside the bowl to make an ice bath. (The colander will keep you from having to pick the beans out from among the ice cubes.) Add salt to the boiling water until it tastes like seawater. Plunge the beans into the boiling water and cook until crisp-tender, 1 to 2 minutes. With a slotted spoon, remove the green beans from the water and transfer to the colander inside the ice bath. Move them around gently so the ice water penetrates the beans and accelerates the cooling process. When fully cooled, drain and arrange in a single layer on a kitchen towel to drain any excess moisture.
  • Make the salad: If the green beans are long, cut in half. Toss the green beans in the dressing and toss to coat. Season with salt and pepper. Refrigerate 30 minutes, then stir to coat with the dressing again and marinate at least another 30 minutes and up to 6 hours. Stir in the basil leaves and serve.

Anytime Sour Cream Green Beans image

This has been a holiday staple since I was small. It is unbelievably wonderful! Never tried the regular green bean casserole because we had this. We look forward to this MORE than the main dish. Please don't let the sour cream keep you from trying this. You will not be disappointed!

28 oz cut green beans
8 oz bacon-chopped
1/8 c chopped onion
1/2 c sour cream
salt and pepper to taste

Steps:

  • 1. Put undrained cut or french cut green beans in a pot. Heat slowly.
  • 2. Chop bacon and put in frying pan. Saute to crisp or soft..they both work for this. Add chopped onions and saute until just clear.
  • 3. Drain green beans and put back in pan. Add bacon and onions. Stir over low heat to keep green beans warm. Add sour cream, salt and pepper. Stir over low heat until sour cream is just heated through. Very low temp works because high heat will cause the sour cream to separate. Enjoy!!
