HOT DOG CASSEROLE

Steps:
- Preheat oven to 350°. In a small saucepan, melt butter. Stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir until thickened and bubbly, 2 minutes. , In a greased 2-1/2-qt. baking dish, layer with a third of the potatoes, half of the hot dogs and half of the onion. Repeat layers. Top with remaining potatoes. Pour white sauce over all., Bake, covered, for 1 hour. Uncover; sprinkle with cheese. Bake until potatoes are tender, 10-15 minutes longer.

Another recipe from the 1980 version of the Grace Evangelical Congregational Church cookbook from Muir, Pennsylvania that was given to me by my Nana when I became an adult. This recipe was submitted to the cookbook by April Schaeffer. She didn't specify how many servings the recipe made. So, I am guessing a bit.

- Cut half of hot dogs in slices on bottom of Pyrex pan.
- Place sliced potatoes on hot dogs.
- Drain peas, then pour over potatoes.
- Put remaining sliced hot dogs on top of peas and pour cream of mushroom soup over top.
- Bake at 375 degrees for 1 hour or until potatoes are tender.

- Heat oven to 350. Coat a 13x9x2"-inch baking dish with nonstick cooking spray.
- Heat a large nonstick skillet over medium-high heat. Add the hot dogs and cook about 3 minutes per side until nicely browned. Remove to a cutting board and cut into 1/2"-inch pieces on the bias.
- In large bowl, mix together hot dogs, beans, barbecue sauce and brown sugar. Spoon into the prepared baking dish.
- Prepare corn bread following package directions, using milk and egg. Spread evenly over the top of the casserole.
- Bake at 350 for 45 minutes, until bubbly. Allow to cool slightly before serving. May be served hot or slightly warm.

- Cook onion and green pepper in 1 tablespoons butter.
- Stir in hot dogs, beans, chili sauce and catsup.
- For a sweeter flavor, add brown sugar.
- Simmer 2 minutes.

- Separate biscuit dough into 10 biscuits;.
- Arrange 10 biscuits over hot meat mixture;.

- Heat oven to 350°F. In 2-quart saucepan, heat water, butter and salt to boiling. Remove from heat. Stir in milk and dry potatoes just until moistened. Let stand about 30 seconds or until liquid is absorbed; whip with fork until fluffy. Stir in relish, mayonnaise, onion and mustard. Spread in ungreased 1-quart casserole.
- Cut each hot dog lengthwise in half, then crosswise in half. Arrange hot dog pieces around edge of mashed potatoes.

- Preheat oven to 350 degrees. Spray 9 x 13 baking dish with nonstick cooking spray. Heat oil in pan over medium high heat until hot. GREEN BEAN & HOT DOG CASSEROLE
This recipe is a favorite with my children who are now grown and want me to make it when they come to visit. It is filling and most of all fun food using the hot dogs and getting little ones to eat their veggies too!

- 1. Fill 5 qt pot with water and add hot dogs cut into 1/2 in. pieces and thawed green beans. Cook until done. While cooking start the roux.
- 2. To make roux: melt butter in sauce pan, whisk in flour until smooth Add seasonings and 1/2 of milk whisking until smooth, add onions and rest of milk mixing well. Bring to a boiling start and remove from heat.
- 3. Drain hot dogs and green beans and return to pot. Pour roux into hot dogs and mix thoroughly. Layer bottom of 9 x 13 in. pan with 1/3 of the croutons. Pour 1/3 of mixture over croutons. Alternate layers of croutons and mixture ending with croutons on top. Sprinkle cheese on the top layer of croutons.(If you choose add some cheese with each layer.) Bake in a 400 degree oven for 30 minutes.
