2 tablespoons butter
8 ounces green beans, trimmed
1 garlic clove, crushed
2 cups vegetable stock
1/2 cup parmesan cheese, grated
1/4 cup light cream
salt
black pepper, freshly ground
2 tablespoons parsley, chopped to garnish

Steps:

  • Melt butter in a medium saucepan and add the green beans and garlic cooking for 2-3 minutes over medium heat,stirring frequently.
  • Stir in the stock and season with salt and pepper;bring to a boil.
  • Lower heat and simmer,uncovered,for 10-15 minutes until beans are tender.
  • Pour soup into a food processor and process until smooth.
  • Return to pan and reheat slowly.
  • Stir in Parmesan cheese and cream and sprinkle with parsley.

Fresh green beans and parmesan cheese make a simple but delicious combination of flavors.

Number Of Ingredients 8

2 Tbsp butter or margarine
8 oz green beans, trimmed
1 clove garlic, crushed
2 c vegetable stock
1/2 c grated parmesan cheese
1/4 c light cream
salt and freshly ground pepper
2 Tbsp chopped fresh parsley, to garnish

Steps:

  • 1. Melt the butter or margarine in a medium saucepan. Add the green beans and garlic and cook for 2 to 3 minutes over medium heat, stirring frequently.
  • 2. Stir in the stock and season with salt and pepper. Bring to a boil. Lower the heat and simmer, uncovered, for 10 to 15 minutes until the beans are tender.
  • 3. Pour the soup into a blender or food processor and process until smooth. Alternately, puree the soup in a food mill. Return to the pan and reheat slowly.
  • 4. Stir in the parmesan cheese and cream and sprinkle with parsley. Serve hot.
