Nailed it, finally!!! Fantastic sauce for tempura battered or grilled veggies like beans, asparagus, carrots, anything. I could just guzzle it out of the bowl :) We purchased the mayo at an Asian food store locally along with some fabulous 1 - 1 & 1/2 foot long green beans that we cut into 3 pieces each. Simply divine.

1 cup japanese mayonnaise, we used Kewpie brand (regular mayo will do the trick)
2 1/2 tablespoons sirachi hot chili sauce
6 green onions, whites only, coarsely chopped
4 garlic cloves, coarsely chopped
1/2 teaspoon prepared horseradish

  • Place ingredients in blender or food processor and mix til smooth.

  • Make a tempura batter and dredge your green beans, asparagus or any veggie in it and either flash fry in oil on the stove or in the oven for a healthier spin.

½ cup all-purpose flour
½ teaspoon salt, divided, or more to taste
½ teaspoon ground black pepper
2 eggs
2 tablespoons water
1 cup panko bread crumbs
2 teaspoons vegetable oil
½ cup whole green beans
½ cup whole asparagus spears
½ cup red onion rings
½ cup sweet pepper rings
½ cup avocado wedges
½ cup zucchini slices

Steps:

  • Mix together flour, 1/4 teaspoon salt, and pepper in a shallow dish. Whisk together eggs and water in another shallow dish. Stir together panko and oil in a third shallow dish. Add desired seasoning to either panko and/or flour mixture.
  • Sprinkle vegetables with remaining 1/4 teaspoon salt. Dip in flour mixture, then in egg mixture, and finally in panko mixture to coat.
  • Preheat the air fryer to 400 degrees F (200 degrees C) and the oven to 200 degrees F (95 degrees C).
  • Arrange half of the vegetables in a single layer in the air fryer basket. Cook until golden brown, about 10 minutes. Sprinkle with additional salt, if desired. Transfer vegetables to oven to keep warm. Repeat with remaining vegetables.

  • Heat 1 1/2 inches peanut oil to 365 degrees F in a pot over medium-high heat. Whisk 1/2 cup each flour and cornstarch, 3/4 cup seltzer and 1/4 teaspoon kosher salt; toss with 1 pound green beans. Remove the beans from the batter and fry in batches, stirring, until golden, 2 minutes. Drain on paper towels. 1 ripe avocado
3 tablespoons mayonnaise
2 tablespoons freshly squeezed lemon juice
Kosher salt
3/4 cup cornstarch
3/4 cup all-purpose flour
1 1/2 cups seltzer
1 pound trimmed green beans

Steps:

  • Puree the avocado, mayonnaise, lemon juice, 1/4 cup water and 1/2 teaspoon salt in a blender. Cover and refrigerate until ready to use.
  • Pour enough oil to fill a large, heavy-bottomed saucepan, about a third of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 375 degrees F.
  • Whisk together the cornstarch, flour and seltzer. Submerge the green beans in the batter. Working in batches, carefully drop the beans into the oil and fry until crispy and golden, about 3 minutes. Use a slotted spoon to transfer to a paper-towel-lined plate and sprinkle with salt. Serve with the avocado mayonnaise for dipping.

1/2 cup canola oil, plus more for frying
1 lemon, zested and juiced
1/2 cup flat-leaf parsley leaves and tender stems, finely minced, plus 1 cup left intact
2 cloves garlic, finely minced
2 large eggs, separated
1/2 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 cup rice flour
1 cup cold seltzer or club soda
1/2 pound green beans, trimmed
1/2 pound shrimp, shelled, deveined and tails intact

Steps:

  • Heat 2 1/2 inches canola oil in a Dutch oven over medium heat until a deep-fry thermometer registers 375 degrees F. Line a rimmed baking sheet with paper towels.
  • While the oil is heating, place the lemon zest, minced parsley and half of the garlic on one side on the prepared baking sheet.
  • In a mini food processor, combine the remaining 1 cup parsley and minced garlic with the egg yolks and lemon juice. Process on high speed until the parsley is well incorporated. Add the 1/2 cup canola oil and pulse until the aioli is emulsified. Transfer to a medium bowl. While whisking, slowly stream in the olive oil, until the aioli has thickened. Season with salt and pepper. Set aside.
  • Whip the egg whites in a large bowl with a handheld mixer until stiff peaks form, about 3 minutes. Whisk in the rice flour and seltzer.
  • Dip the green beans into the tempura batter then remove with a slotted spoon or a spider, letting any excess batter drip off. Fry in batches (to prevent the beans from clumping together) until golden brown and crispy, 2 to 3 minutes. Transfer to the other side of the baking sheet to drain.
  • Dip the shrimp in the batter, letting any excess drip off, and fry until golden and crispy, 2 to 3 minutes. Transfer to the baking sheet to drain.
  • To make the gremolata, combine the minced parsley and garlic with the lemon zest in a small bowl. Toss together with a spoon until well incorporated.
  • Combine the green bean tempura with 1/2 of the gremolata in a medium bowl; season with salt, toss to evenly coat, then transfer to a plate. Repeat with the shrimp tempura and remaining gremolata.
  • Serve the tempura with the lemon-parsley aioli, for dipping. Enjoy!

If you like your green beans a little more tender you need to put them in the pan first to give them a little more cooking time. I make this when I have the ingredients fresh in the garden and the flavors are so bright and simple.You can add baby carrots too if you have them.

1/4 cup Coleman's dry mustard
1/2 cup rice wine vinegar (unseasoned)
1/4 cup sugar
1 egg
1 1/2 tablespoons yellow miso
to taste salt and pepper
1 cup all-purpose flour
1 1/4 cups cold water
1 tablespoon baking powder
1 tablespoon chopped fresh mint leaves
1/2 lb fresh green beans, trimmed of the stem end
4 cups peanut oil (or the amount suitable for your pot or deep frier)

Steps:

  • Combine the dry mustard, vinegar, sugar and egg in the top of a double boiler and mix until smooth using a wooden spoon. Place over the heat and cook for four or five minutes until slightly thickened stirring with a wooden spoon. Chill.
  • Remove from the heat and stir in the miso. Season to taste with salt and pepper.
  • In a suitable bowl, combine the flour, baking powder and mint and mix well. Stir in the water and mix until smooth. Season to taste with salt and pepper.
  • In a deep frier or deep pot, heat the oil to 350°F.
  • Dip the beans into the batter and coat evenly. Remove from the batter and allow it to drip off slightly. Deep fry until golden brown.
  • Remove the fried beans to a baking pan covered with absorbent towels and sprinkle with salt and pepper. Serve with the sauce on the side for dipping.

1 -1 1/2 lb asparagus or 1 -1 1/2 lb green beans
1/2 teaspoon cajun pepper or 1/2 teaspoon cayenne pepper
1/2 teaspoon seasoning salt
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon minced onion (or more)

Steps:

  • Cut up veggies (asparagus: cut off bottom and cut each "tree" into about three pieces. green beans: cut off both ends and slice into one or two pieces each.).
  • Melt butter or margarine in frying pan over medium heat.
  • Add cut up veggies and all seasonings.
  • Toss to coat.
  • Cover pan and fry for about 8 minutes for asparagus and 10-15 minutes for green beans.
  • Stir once or twice (if at all) until cooked the way you like them (we like our veggies soft -- you might like them crunchy).
