Time 6h20m

Number Of Ingredients 14

3 lb/ 1.360 kg Bone less leg of lamb, fat trimmed
Kosher salt
Black pepper
Early Harvest Greek extra virgin olive oil
12 garlic cloves (6 thinly sliced and 6 minced)
2 tsp / 2.3 g dry rosemary
2 tsp fresh thyme (from 4 or 5 springs)
1 tsp dry oregano
3/4 tsp sweet paprika
Juice of 1 lemon
1 lb pearl onions, peeled (or shallots, if you prefer)
1 cup dry red wine
1/2 cup low-sodium broth (beef or chicken broth is fine)
Parsley for garnish

Steps:

  • Pat lamb dry and season generously with kosher salt and black pepper on all sides (if you have the time, set it aside at room temperature for up to 1 hour, otherwise continue on)
  • Coat the bottom of a large skillet (I used my cast iron skillet) with a little bit of extra virgin olive oil. Heat skillet over medium heat until oil is shimmering but not smoking. Add the lamb and brown well on all sides (increase heat to medium-high if needed); about 7 minutes. Remove from heat and let cool enough to handle.
  • Cut a few slits into the lamb on both sides and insert a slice of garlic in each of the slits.
  • Now make a wet garlic spice rub for the lamb. In a small bowl, combine the minced garlic, rosemary, thyme, oregano, and paprika. Add lemon juice and 3 tbsp extra virgin olive oil. Coat lamb on all sides with the garlic spice rub.
  • Add pearl onions (or shallots) to the bottom of a large slow cooker (crock pot). Add wine and broth, then add the spiced lamb on top.
  • Cover slow cooker and set on high for 3 to 4 hours or on low for 5 to 6 hours until lamb is fork-tender and you can easily pull it apart.
  • Transfer to a serving platter adding the cooking juice on top or to the side to serve along. (See sides to serve along in the notes)

GREEK YOGURT-HONEY BRAISED LAMB

Greek Yogurt-Honey Braised Lamb image

From: New York's 25: Taste Of Greece - Oct 16-Nov 18, 2006 "Greek cuisine is truly a natural cuisine. It exemplifies garden to table cooking," says chef Marc Meyer. He says he "loves" Greek yogurt. "I've always been fascinated by the fact that its use runs the gamut from sweet to savory. In the States we think of yogurt as a sweet or a bedtime snack. But it makes a great sauce or marinade and I wanted to incorporate it in that way." - Chef Marc Meyer of Five Points

3 tablespoons chopped fresh rosemary leaves
1 1/2 teaspoons dried oregano
Kosher salt and freshly ground black pepper
1/2 cup freshly squeezed lemon juice (4 lemons)
1/2 cup good olive oil
1/2 cup dry red wine
2 racks of lamb, frenched and cut into 8 chops each
Yogurt Mint Sauce, recipe follows
6 scallions, white and green parts, chopped
1/2 cup chopped fresh mint leaves
2 tablespoons minced fresh dill
Pinch crushed red pepper flakes
1 tablespoon good olive oil
1 tablespoon freshly squeezed lemon juice
7 ounces Greek-style yogurt (recommended: Fage Total)
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Place the garlic, rosemary, oregano, 1 1/2 teaspoons salt, and 3/4 teaspoon pepper in the bowl of a food processor fitted with the steel blade and pulse until the herbs are finely minced. Remove the lamb from the marinade, sprinkle generously with salt and pepper, and grill for 4 to 5 minutes on each side. Remove to a platter, cover tightly with aluminum foil, and set aside to rest for 10 minutes. Serve hot with the cold Yogurt Mint Sauce.
  • Place the scallions, mint, dill, red pepper flakes, olive oil, and lemon juice in the bowl of a food processor fitted with the steel blade and puree until it's a coarse paste. Add the yogurt, salt, and pepper and pulse until combined. Transfer to a bowl, cover, and refrigerate for a few hours to allow the flavors to develop.
