This is the one and only Greek salad recipe that you'll ever need! Enjoy this Greek salad for summer BBQs, Greek dinner parties, picnics, and more. Ripe, red tomatoes will yield the best result. Serve with loads of good crusty bread to mop up the gorgeous juices.

5 large tomatoes
1 small red onion, thinly sliced
sea salt to taste
1 ½ teaspoons dried oregano
1 (4 ounce) container crumbled feta cheese
½ cucumber, sliced
1 small green bell pepper, sliced
¼ cup Greek black olives
3 tablespoons extra-virgin olive oil

Steps:

  • Cut your tomatoes into wedges over the bowl that you're serving the salad in, so that any extra juices land in the bowl. Add onion slices. Liberally season with salt and oregano. Mix and allow tomatoes to sit at room temperature for at least 30 minutes, up to 2 hours, so that the salt releases the tomatoes' juices.
  • Mix in feta cheese, cucumber, bell pepper, and olives just before serving. Stir everything together. Drizzle with olive oil.

I tried to recreate the best Greek Salad I've ever had.Serve with crusty bread to soak up the wonderful juice at the bottom of the salad bowls. If available please use fresh herbs.

4 tomatoes, cut in wedges
1 slender green cucumber
1 green pepper
2 red peppers
1 red onion, sliced
1/2 cup kalamata olive
8 ounces feta cheese, sliced
3 tablespoons olive oil
1 tablespoon red wine vinegar
2 tablespoons fresh lemon juice
1/2 teaspoon dried oregano
1 teaspoon parsley, chopped
3 garlic cloves, crushed
1/2 teaspoon salt
fresh ground black pepper

Steps:

  • Cut tomatoes into wedges.
  • Slice cucumber in 1/2 lenghtwise then in cut in chunks.
  • Wash, core and seed peppers. Cut in half then cut into thick strips.
  • Separate onion slices into rings.
  • Place prepared ingredients in a bowl; top with the olives.
  • Pour on dressing just before serving.Top with strips of Feta Cheese and sprinkle with oregano.
  • For dressing: Put ingredients a screw top jar, seal and shake well.
  • Shake again just before serving.
  • Serve in individual salad bowls.

3 firm tomatoes, thinly sliced into rounds
1 large cucumber, peeled and thinly sliced into rounds
1 onion, thinly sliced into rings
2 green bell peppers, stems removed, cut into rings
1 cup pitted Kalamata, or other black Greek olives
6 ounces feta cheese, cut into chunks
1/2 cup olive oil
1/4 cup red wine vinegar
2 teaspoons finely chopped fresh oregano
Salt and freshly ground black pepper

Steps:

  • Place the tomatoes, cucumbers, onion and bell peppers in a bowl. Mix in the olives and feta cheese. In a small bowl, whisk together the olive oil, vinegar, oregano, and salt and pepper, and pour over the salad to coat.

Recipe from one of our favorite places to eat when in the city - Nicky's! Love this recipe shared by Nick and Marina Makris in a local cookbook. An awesome salad that allows the fresh taste of the ingredients to shine and just the way I like it! I do offer a Greek dressing when serving to guests, but find most enjoy the salad unadorned - and always an empty bowl.

4 large tomatoes (not over ripe, cut into small wedges)
1 English cucumber (cut in 1/2 inch cubes or smaller )
1 medium red onion (cut in thin wedges)
1 large green pepper (sliced)
1/2 lb feta cheese (cubed or crumbled)
12 black Greek olives (or green)
4 ounces extra virgin olive oil
salt (to taste)
1/4 cup Italian parsley (optional)

Steps:

  • Cut the tomatoes into small wedges, cube the cucumber, cut red onion into thin wedges, slice green pepper, and place into large bowl.
  • Add the cubed or crumbled feta cheeses, olives and olive oil and salt to taste.
  • At this point I toss and sprinkle with Italian parsley and some of the crumbled cheese.
