AUTHENTIC GREEK TZATZIKI

Authentic Greek Tzatziki image

This is a lovely, cool, refreshing Greek tzatziki dip that I first tasted and fell in love with in the Greek Islands. It is lovely with hot toasted pita bread and veggies or lamb kebabs! The key is strain the liquid from the cucumber very well so the dip stays creamy and not watery and to always use thick, full-fat Greek yogurt. Low-fat versions won't cut it. Enjoy!

GREEK TZATZIKI-STYLE COLE SLAW

Greek Tzatziki-Style Cole Slaw image

from www.npr.org: "This festive coleslaw mimics colors of summer. It serves as a perfect dip with pita chips or bread, a chunky sandwich spread and a topping for other julienned vegetables. Kids love to top off their red and green pepper slices with this slaw and crunch away. It is also a perfect accompaniment to grilled cheese sandwiches."
