This is by far my favourite way of eating tempeh. I am craving it right now! You can make it vegan by using vegan tzatziki.

1 (8 ounce) package tempeh
olive oil
soy sauce
3 -4 crushed garlic cloves
1 tablespoon dried oregano
1 lemon, juice of
greek pocketless pita
tzatziki
2 tomatoes, diced
1/2 cucumber, diced
2 crushed garlic cloves
1/2 onion, diced
balsamic vinegar
olive oil

Steps:

  • Slice tempeh medium thin.
  • Marinate in olive oil, soy sauce, crushed garlic, dried oregano and lemon juice. After 1 hour (or longer) saute in frying pan until crispy.
  • Meanwhile mix diced tomatoes, cucumber, onion, garlic, balsamic vinegar and a drizzle of oil in a small bowl.
  • Heat pita on each side in frying pan.
  • To assemble, place pita on a plate, lay tempeh over pita, spoon on tomato and cucumber mixture and top with tzatziki.
  • I eat mine with a knife and fork, but my husband prefers to fold his in half and eat with his hands. Either way, this is my favourite tempeh dish!

Traditional seasonings, traditional taste, traditional food. A meal your whole family will love. Authentic Greek cooking at its finest. I only use non-GMO organic silken tofu.

1 cup vegetable broth
2 tablespoons soy sauce
2 tablespoons lemon juice
2 teaspoons dried oregano
2 teaspoons ground thyme
1 ½ teaspoons minced garlic
1 (8 ounce) package tempeh
4 (6 inch) whole-wheat pitas
1 dash pink Himalayan salt
1 dash ground black pepper
2 small cucumbers, peeled and grated
1 (12.3 ounce) package silken tofu
1 tablespoon (packed) fresh dill
1 teaspoon minced fresh garlic
salt and ground black pepper to taste
2 tomatoes, sliced
½ red onion, thinly sliced

Steps:

  • Combine vegetable broth, soy sauce, lemon juice, oregano, thyme, 1 1/2 teaspoons garlic, Himalayan salt, and dash of pepper in a large bowl.
  • Bring a saucepan of water to a boil. Cut tempeh in half and add to the boiling water. Boil for 10 minutes to remove any bitter taste. Transfer tempeh to a cutting board and allow to cool slightly.
  • Cut tempeh into 1/4-inch slices and place them in the vegetable broth marinade. Cover with plastic wrap and marinate in the refrigerator 8 hours to overnight, stirring occasionally to be sure tempeh is covered with marinade.
  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Transfer marinated tempeh slices to the prepared baking sheet.
  • Bake in the preheated oven, turning halfway through, until golden brown and beginning to crisp at the edges, 30 to 35 minutes.
  • Place pitas in the hot oven until warmed through, 3 to 5 minutes.
  • Squeeze excess water from cucumbers using a paper towel. Place tofu, cucumbers, dill, 1 teaspoon garlic, salt, and pepper in a food processor. Blend until tzatziki is well mixed. Adjust seasonings if desired.
  • Assemble a gyro by placing 1/4 of tempeh slices, tomatoes, and red onions on top of a pita. Cover with tzatziki. Repeat with remaining tempeh, tomatoes, onion, and pita.

1 1/2 teaspoons dried oregano
1 teaspoon onion powder
1 teaspoon salt
1 teaspoon pepper
1/2 tablespoon garlic
1 teaspoon thyme
4 tablespoons olive oil
1/8 teaspoon cinnamon
1 teaspoon rice vinegar or 1 teaspoon other vinegar
1/2 cup peeled grated cucumber
1 tablespoon garlic powder
1 chopped garlic clove
1/2 teaspoon salt
1/4 teaspoon dill weed
1/2 teaspoon mustard powder
1 cup plain Greek yogurt
1/2 cup sour cream
1 tablespoon parsley
2 teaspoons onion powder
1 tablespoon olive oil
1 teaspoon rice vinegar or 1 teaspoon other vinegar
1 teaspoon oregano
4 -6 Greek pita breads
olive oil (for cooking)
lettuce
tomatoes

Steps:

  • To make gyro "meat" cut tempeh into thin strips 1/2 - 1.5 cm in thickness works well.
  • Next make tempeh marinade with all ingredients listed under "Gyro Tempeh".
  • Pour the marinade over the tempeh, make sure all surfaces are covered and place in fridge to marinate for at least 4 hours, preferably overnight.
  • Next, make Tzatziki- combine all ingredients listed under Tzatziki. Stir well and also place in fridge to sit for at least 4 hours, preferably overnight.
  • When you are ready to eat, set the Tzatziki out to warm slightly while you cook the tempeh.
  • Heat a large skillet with 3-4 tbsp olive oil and heat over medium, once heated place tempeh strips in and let them cook until each side is golden brown.
  • Remove tempeh from pan, and one at a time heat the pitas over medium heat until warmed on each side.
  • Then layer your gyro (pita, tzatziki and tempeh) as you choose with lettuce, and/or tomato if you like.

Made up as a great vegetarian gyro! If you are not vegetarian, this marinade/recipe would be fabulous with chicken as well.

14 ounces extra firm tofu
2 tablespoons olive oil
1/2 cup broth
1/4 cup pesto sauce
3 large garlic cloves, minced
2 teaspoons dried oregano
2 teaspoons dried thyme
2 teaspoons dried rosemary
1 teaspoon lemon juice
salt
pepper
1/3 cup crumbled feta
1/3 cup tzatziki, sauce
1 cucumber, chopped
1 large tomatoes, chopped
1/4 cup pitted kalamata olive, chopped
4 pita bread

Steps:

  • drain the tofu and press for 30 min by putting between paper towels with a large weight (book or heavy pan) on top.
  • Prepare the marinade by mixing oil, broth, pesto, garlic, oregano, thyme, rosemary, lemon and salt and pepper to taste.
  • cut the tofu into thin strips. Marinate the tofu for 1hr minimum, tossing a few times to make sure it is evenly distributed but being careful not to break pieces.
  • meanwhile, combine cucumber, tomato, olive and feta in a bowl.
  • Take the tofu out of the marinade (reserve marinade) and fry over very high heat in a non-stick skillet until darkly browned (very important that it is non-stick!). Turn off heat and immediately pour extra marinade over tofu. The pan will be very hot and the marinade should mostly cook off immediately,.
  • Meanwhile, heat up pitas in oven or microwave. Cut in half and fill each one with tofu, tzatziki, and veggies.
