INGREDIENTS
5 oz orzo. Cook it according to the packet instructions, but DON'T overcook it - drained, rinsed with cold water, and set aside
extra virgin olive oil
1 large clove garlic, finely chopped
1 onion, very finely chopped
2 Tbsp tomato paste
1/2 tsp curry powder
a pinch of ground cinnamon
10 mushrooms, chopped into small pieces
salt to taste
flat leaf parsley, chopped, for garnishing
a wedge of lemon (optional

Steps:

  • 1.Place a saucepan on the heat, and heat up the olive oil. After a few seconds add the onion and garlic, and mix, making sure they cook well, but be sure not to let them burn. 2.Next, stir in the tomato paste, and continue to mix so that it blends well with the other ingredients. 3.Now add all the spices, and the mushrooms, and allow the mushrooms to soften, and for their juices to slightly reduce. This will probably take around 10 minutes. 4.Next, add the cooked orzo, lower the heat, and gently mix all the time. Lower the heat to its minimum, and whilst stirring, allow the orzo to mingle with the sauce, spices and aroma. Within a few minutes it will be ready to serve. 5.Garnish with parsley, and a squeeze of fresh lemon, if you wish. 6.Serve with a Greek style salad

¼ cup olive oil
½ cup fresh lemon juice
½ cup pitted kalamata olives, chopped
2 ripe tomatoes, seeded and diced
1 red bell pepper, chopped
1 red onion, chopped
2 cloves garlic, minced
1 teaspoon finely chopped fresh oregano
1 (8 ounce) package crumbled feta cheese
½ pound dried orzo pasta
1 cup chopped fresh parsley

Steps:

  • Stir together olive oil, lemon juice, olives, tomatoes, red pepper, red onion, garlic, oregano, and feta cheese in a large bowl. Let stand at room temperature for 1 hour.
  • Bring a large pot of lightly salted water to a boil. Add the orzo and cook for 8 to 10 minutes or until al dente; drain and toss the tomato mixture. Sprinkle with chopped parsley to serve.

1/2 cup water
1 1/4 cups orzo pasta, uncooked
1 tablespoon olive oil
1 (14 ounce) can Italian-style tomatoes
1 (14 ounce) can chicken broth
1 lb fresh white mushroom, sliced
1 ounce feta cheese, crumbled

Steps:

  • Heat oil in a large saucepan over medium heat.
  • Add mushroom. Cook, stirring occasionally, until tender and mushrooms just release their liquid (about 6 minutes).
  • Stir in orzo, tomatoes, chicken broth and water. Simmer covered, stirring occasionally, until orzo is tender and most of the liquid is absorbed (about 9 minutes).
  • Stir in Feta cheese and serve immediately.
