4 tablespoons butter
1 cup long grain white rice
4 pork chops, bone in
Salt
One 10-ounce can beef broth, plus more if needed
4 onion slices, separated into rings
1/4 teaspoon pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium skillet, melt the butter over medium-low heat. Add the rice and saute until it is light brown, about 5 minutes.
  • Spread the rice in a 9- by 13- by 2-inch casserole. Sprinkle the pork chops with salt and arrange them on top of the rice. Pour the broth and 2/3 cup water over the chops. Spread the onion rings over the chops and sprinkle them with the pepper. Cover the dish with aluminum foil and bake until the pork chops are tender, about 45 minutes.
  • Change the oven to broil, add a bit more broth if the rice is dry and return the dish to the oven for a couple of minutes until the pork is browned.

1 1/4 pounds Yukon Gold potatoes, cut into 1-inch cubes
5 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
4 boneless pork chops (3/4 inch thick; about 1 1/2 pounds)
1 teaspoon dried oregano
1 1/2 cups halved cherry tomatoes
2 cloves garlic, thinly sliced
1/4 cup dry white wine
12 pitted kalamata olives, halved
1/4 teaspoon sugar
1/3 cup crumbled feta cheese
1/4 cup chopped fresh dill

Steps:

  • Put a baking sheet in the oven and preheat to 475 degrees F. Toss the potatoes with 2 tablespoons olive oil, 1/2 teaspoon salt and a few grinds of pepper. Spread out on the hot baking sheet and roast, flipping halfway through, until browned and tender, about 25 minutes.
  • Meanwhile, make 3 shallow cuts in the fat on the side of the pork chops to prevent curling. Rub the pork with 3/4 teaspoon oregano and season with salt and pepper. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the pork and cook until just cooked through, 2 to 3 minutes per side. Remove to a large plate.
  • Add the tomatoes, garlic and remaining 1/4 teaspoon oregano to the skillet. Cook, stirring, until the tomatoes soften, about 2 minutes. Add the wine and cook until mostly dry, 1 to 2 minutes. Add 1/4 cup water and cook, lightly crushing the tomatoes, until slightly thickened, 1 to 2 minutes. Stir in the olives, sugar and any juices from the plate of pork; season with salt and pepper.
  • When the potatoes are done, sprinkle with the feta and let soften for a minute. Sprinkle with the dill and gently toss. Divide the potatoes and pork among plates. Spoon the tomato sauce over the pork and drizzle with the remaining 1 tablespoon olive oil.

Growing up, this was a staple in my home. This is a great recipe because the pork and rice cook in the same dish. The rice is flavorful and the pork chops come out nice and tender.

2 tablespoons butter
1 onion, diced
1 pinch seasoned salt, or to taste
6 thin bone-in pork chops
1 (14 ounce) can beef consomme
10 fluid ounces water
1 ½ cups white rice

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Melt butter in a large skillet over medium heat; cook and stir onion until golden brown, 15 to 20 minutes. Transfer onion to a plate.
  • Sprinkle seasoned salt over all sides of each pork chop. Place pork chops in the same large skillet and cook until browned, 1 to 2 minutes per side.
  • Mix beef consomme and water together in a 9x13-inch baking dish. Pour rice into the broth mixture; add caramelized onion. Gently arrange pork chops over rice in a single layer. Cover baking dish with aluminum foil.
  • Bake in the preheated oven until pork is cooked through, 45 to 60 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

4 teaspoons lemon juice
1 tablespoon Worcestershire sauce
2 teaspoons dried oregano
1 teaspoon salt

4 boneless pork loin chops (3/4 inch thick and 4 ounces each)

Steps:

  • In a large bowl, mix first 9 ingredients. Add pork chops and turn to coat. Cover; refrigerate 8 hours or overnight., Drain pork, discarding marinade. 4 bone-in fast-fry pork loin chops
1 tablespoon dried oregano
1 tablespoon paprika
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons olive oil
2 cups sodium-reduced chicken stock
1 tablespoon lemon juice
1 garlic clove, minced
2 cups Minute Rice, instant whole grain brown rice
1 teaspoon finely grated lemon rind
1/2 cup diced tomato
1/2 cup diced red onion
tzatziki, sauce (optional)

Steps:

  • In a zip-lock bag, toss the pork chops with the oregano, paprika, salt and pepper until coated. Heat the olive oil in a large nonstick skillet set over medium-high heat; cook the pork chops for 2-3 minutes per side or until browned; transfer to plate.
  • Add the stock, lemon juice garlic to the skillet; bring to a boil. Stir in the rice and lemon rind; return the mixture to a boil. Simmer for 5 minutes. Remove from the heat.
  • Nestle the pork chops into the rice; drizzle with any accumulated juices from plate. Cover and let stand for 10 minutes. Sprinkle with tomato and onion. Serve with tzatzki sauce (if using).

Plan ahead, the meat has to marinade for 4-24 hours, best when left 24 hours --- this is best made on the grill but can be broiled in the oven.

1/2 cup olive oil
1/2 cup fresh lemon juice
1/4 cup grape juice
1/4 cup red wine vinegar
6 minced garlic cloves
salt and pepper
2 lbs boneless pork loin
1 onion, sliced
2 teaspoons dried Italian seasoning
1/2 teaspoon dried basil
2 bay leaves, crumpled (optional but good to add)
2 tablespoons butter
1 1/2 cups rice
3 cups good quality chicken broth
1 lemon
salt and pepper

Steps:

  • Prepare the marinade by combining the olive oil, lemon juice, grape juice, vinegar, garlic, salt, pepper (to taste), Italian seasoning, basil and crumbled bay leaves.
  • Cut the pork into 1-inch cubes( or a little larger if desired).
  • Place the pork in a single layer in a glass 13x9-inch pan.
  • Slice the onion and seperate into rings.
  • Place onion over top of meat.
  • Pour the marinade over meat.
  • Cover, and refrigerate for 4-24 hours (the longer, the better!).
  • Drain marinade, or save to baste meat while cooking (see note below).
  • Thread meat on metal skewers; grill or broil in oven (4-5 inches) from heat until pork is cooked.
  • Note: if marinade is to be used to baste meat when cooking, heat the marinade to a boil for 3 minutes, and use to baste the meat frequently while cooking.
  • Serve hot on a bed of lemon rice (recipe below).
  • For lemon rice: grate at least 2 tablespoons lemon peel (or more for a stronger lemon taste); set aside.
  • Squeeze out juice from lemon, and combine with butter, rice and broth (salt and pepper to taste).
  • Bring to a boil, reduce heat and simmer, cover and simmer (without peeking!) for 20-30 minutes, or until the liquid is absorbed.
  • Remove from heat, and stir in lemon peel.
  • Serve hot with cooked meat.

4 (5 ounce) boneless, center-cut pork chops
1 tablespoon Greek seasoning
3 tablespoons olive oil, divided
1 pint cherry tomatoes, halved
½ teaspoon kosher salt
¼ teaspoon ground black pepper
¼ cup sliced Kalamata olives
1 medium lemon, juiced
¼ cup crumbled feta cheese
1 tablespoon chopped fresh flat-leaf parsley

Steps:

  • Place pork chops between sheets of plastic wrap or parchment paper and pound to flatten to 1/2-inch thickness. Season both sides of the chops evenly with Greek seasoning.
  • Heat a large nonstick skillet over medium-high heat. Add 1 tablespoon oil. Place 2 chops in the hot skillet and sear for 2 minutes. Flip and cook until chops are no longer pink in the center, or to desired degree of doneness, 2 to 4 more minutes. Set aside and keep warm.
