Greek-style feta and olive spread served with hamburgers in pita bread! Use whatever kind of ground meat you like for the hamburgers (beef, lamb, turkey). We have made these with ground turkey with great results.

1 cup feta cheese, crumbled
1/4 cup olive, sliced (black or Kalamata)
1 tablespoon steak sauce
1 teaspoon lemon juice
2 tablespoons mayonnaise
6 hamburger patties
3 pita bread, cut in half
tomatoes, slices (optional)
shredded lettuce (optional)

Steps:

  • Preheat oven to 425°F.
  • Cook hamburgers until done.
  • Combine cheese, olives, steak sauce, lemon juice, and mayo.
  • Place hamburgers in pita bread and spoon topping over hamburgers.
  • Heat at 425F for 5 minutes.
  • Add tomato and lettuce (optional).

These Greek-style chicken burgers surprise with a feta cheese filling.

1 pound ground chicken
½ cup dry bread crumbs
1 egg
1 tablespoon lemon juice
2 tablespoons chopped sun-dried tomatoes
1 tablespoon chopped fresh basil
3 teaspoons chopped fresh oregano
salt and pepper to taste
2 ounces crumbled feta cheese

Steps:

  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Mix the chicken, bread crumbs, egg, lemon juice, sun-dried tomatoes, basil, oregano, salt, and pepper together in a bowl; form the mixture into 5 patties. Divide the feta cheese between the 5 patties; place a portion of the feta cheese atop each patty and fold the chicken mixture around the cheese so that the cheese is in the center.
  • Cook on the preheated grill until no longer pink on the inside and the juices run clear, 5 to 7 minutes per side. An instant-read thermometer inserted into the center should read 165 degrees F (75 degrees C).

1 ½ pounds ground beef
⅓ cup crumbled feta cheese
2 tablespoons minced onion
2 tablespoons minced red bell pepper
2 tablespoons chopped fresh mint
2 tablespoons minced fresh parsley
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon seasoned salt
½ teaspoon ground black pepper

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Mix ground beef, feta cheese, minced onion, red bell pepper, mint, parsley, garlic powder, onion powder, seasoned salt, and black pepper together in a large bowl until evenly mixed; shape into 6 patties.

2 tablespoons light mayonnaise
2 tablespoons plain fat-free yogurt
1/4 teaspoon coarsley ground black pepper
5 slices red onions, 1/2 inch thick
cooking spray
1 lb lean ground beef
3/4 cup fresh breadcrumb
1/3 cup chopped bottled roasted red pepper
1/4 cup chopped fresh parsley
1 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon coarsley ground black pepper
1 (10 ounce) package frozen spinach, thawed,drained,and squeezed dry
1 large egg, lightly beaten
2 cloves garlic, crushed
5 sourdough rolls (1 1/2 oz.)

  • to prepare aioli, combine first 5 ingredientsina food processor, pulse 1 minute or until smooth, cover and chill prepare grill or broiler to prepare the burgers, place onion slices on a grill rack or broiler pan coated with cooking spray and cook 2 minutes each side.

  • combine the beef and the next 9 ingredients (beef through crushed garlic) ina large bowl.

1 (15 ounce) can chickpeas, rinsed and drained
1 cup fresh parsley leaves
1/2 cup kalamata olive, pitted
2 large eggs
2 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon salt
1/2 teaspoon ground black pepper
1 cup plain breadcrumbs
3/4 cup grated carrot
1/2 teaspoon baking powder
2 cups plain low-fat yogurt
1 medium cucumber, peeled, seeded, shredded and drained
2 garlic cloves, minced

Steps:

  • For Burger:.
  • Cook lentils according to package directions. Drain.
  • Heat oil in skillet over medium heat, add onion and bell pepper and sauté for 7 minutes. Stir in garlic.
  • Blend chickpeas, parsley, olives, eggs,cumin, coriander, salt and pepper in food processor 2 minutes or until smooth.
  • Stir chickpea mixture, bread crumbs, onion and bell pepper, and carrots into lentils.
  • Shape into 8 patties. Wrap in plastic wrap and freeze.
  • Preheat grill to high. Brush frozen patties in oil. Cook 6 minutes on each side.
  • For Sauce:.
