Bite-size pinwheels are bursting with Mediterranean flavor. Making them in advance reduces last-minute prep.

1 container (8 oz) garlic-and-herb whipped cream cheese
1 container (4 oz) crumbled feta cheese
1/3 cup finely chopped cucumber
6 Old El Paso™ flour tortillas for burritos, 8 inch (from 11.5-oz package)
1/3 cup pitted kalamata olives, coarsely chopped
3 small plum (Roma) tomatoes, chopped (about 1 1/2 cups)
3 cups fresh baby spinach leaves

Steps:

  • In small bowl, beat cream cheese and feta cheese with electric mixer on medium speed until smooth. Stir in cucumber.
  • Place tortillas on microwavable plate or microwavable paper towel; microwave uncovered on High 10 to 15 seconds to soften. Spread about 1/4 cup cheese mixture over each tortilla. Top evenly with olives and tomatoes. Arrange 1/2 cup spinach on each tortilla to within 1/2 inch of edge. Roll up tightly; wrap in plastic wrap. Refrigerate 2 to 3 hours to blend flavors.
  • Trim ends of rolled tortillas if desired. Cut each roll into eight 1-inch slices. Arrange with cut sides down on serving dish.

It is a really yummy appetizer that is addictive and makes a super presentation with the dark colored olives and colorful red tomatoes. The spinach gives it great crunch. terribly addictive party food but it's reasonably healthy so that's ok. cooking time is chill time. edited due to reviews: they can get a bit overly wet, try making the salad a few hours to a day beforehand and then scooping out with a slotted spoon to leave the liquid behind. this also infuses the veggies like a marinade. they wont be terrible colourful unless you use a light-coloured vinegar and mix the dressing in right before serving. i like balsamic but i generally choose taste over appearances if i have to choose.

4 flour tortillas (or whole wheat, or corn, or flavored)
2 tablespoons light cream cheese or 2 tablespoons light mayonnaise
3 tablespoons balsamic vinegar
2 tablespoons olive oil
1 tablespoon italian seasoning (or mix oregano, dill, garlic powder, and basil)
1/2 cup kalamata olive (pitted and minced)
3/4 cup feta cheese (finely crumbled)
1 large yellow bell pepper (finely chopped)
2 roma tomatoes (finely chopped)
1/3 cup minced red onion
1 cucumber (finely chopped)

Steps:

  • whisk dressing together, mix veggies in a large bowl and toss with dressing. you can cheat and chop the veggies in a food processor since they should be finely chopped anyways.
  • spread filling on tortillas, leave a 3/4 inch border. roll up tightly.
  • chill for at least an hour to let everything set.
  • slice into 1/2-1 inch disks, if falling apart you can hold them together with toothpicks. arrange nicely on a platter.

1 tablespoon grated onion
1 teaspoon horseradish
1 dash Worcestershire sauce
thinly sliced ham or beef

Steps:

  • Blend cream cheese, onion, horseradish, and Worcestershire sauce until of spreading consistency.
  • Separate the meat slices. Overlap the pieces slightly. Lay out three rows of meat in such a way that a rectangle is formed.
  • Spread the cheese mixture over the meat and roll up jelly roll fashion.
  • Chill thoroughly. Just before serving, slice into 1-inch slices.
