3 ½ cups chicken broth
2 cups quinoa
1 cup halved grape tomatoes
¾ cup chopped fresh parsley
½ cup sliced pitted kalamata olives
½ cup minced red onion
4 ounces chopped feta cheese, or more to taste
3 tablespoons olive oil
3 tablespoons red wine vinegar
2 cloves garlic, minced
1 lemon, halved
salt and ground black pepper to taste

Steps:

  • Bring broth and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, 15 to 20 minutes. Transfer quinoa to a large bowl and set aside to cool, about 10 minutes.
  • Mix tomatoes, parsley, kalamata olives, onion, feta cheese, olive oil, vinegar, and garlic into quinoa. Squeeze lemon juice over quinoa salad, season with salt and pepper, and toss to coat. Chill in refrigerator, 1 to 4 hours.

3 tablespoons freshly squeezed lemon juice
1 tablespoon red wine vinegar
1/4 teaspoon dried oregano
1 clove garlic, smashed and finely chopped to a paste

1/4 cup extra-virgin olive oil
1 cup quinoa

2 cups red and yellow grape tomatoes, halved
1 cup pitted kalamata olives
2 green onions (green and pale green part), thinly sliced
2 pickled cherry peppers, diced
1 small red onion, halved and thinly sliced
1/2 English cucumber, cut into small dice
Feta, for sprinkling

Steps:

  • Whisk together the lemon juice, vinegar, oregano, garlic and some salt and pepper in a small bowl. Slowly whisk in the oil until emulsified. Let sit at room temperature while you prepare the salad to allow the flavors to meld.
  • Rinse the quinoa in a strainer until the water runs clear. Combine the quinoa, 2 cups water, 1 teaspoon salt and 1/4 teaspoon pepper in a small saucepan, bring to a boil and cook until the water is absorbed and the quinoa is tender, about 15 minutes.
  • Transfer to a bowl, fluff with a fork and let sit for 5 minutes to cool slightly. Add the tomatoes, olives, green onions, cherry peppers, red onions, cucumbers and dressing and toss to coat. Cover and refrigerate for at least 1 hour and up to 8 hours before serving. The longer it sits the better the flavor.
  • Just before serving, transfer to a platter and sprinkle feta on top.

25g butter
1 red chilli, deseeded and finely chopped
1 garlic clove, crushed
400g chicken mini fillets
1½ tbsp extra-virgin olive oil
300g vine tomato, roughly chopped
handful pitted black Kalamata olive
1 red onion, finely sliced
100g feta cheese, crumbled
small bunch mint leaves, chopped
juice and zest ½ lemon

Steps:

  • Cook the quinoa following the pack instructions, then rinse in cold water and drain thoroughly.
  • Meanwhile, mix the butter, chilli and garlic into a paste. Toss the chicken fillets in 2 tsp of the olive oil with some seasoning. Lay in a hot griddle pan and cook for 3-4 mins each side or until cooked through. Transfer to a plate, dot with the spicy butter and set aside to melt.
  • Next, tip the tomatoes, olives, onion, feta and mint into a bowl. Toss in the cooked quinoa. Stir through the remaining olive oil, lemon juice and zest, and season well. Serve with the chicken fillets on top, drizzled with any buttery chicken juices.

1 red onion, diced

Balsamic Vinaigrette:
2 tablespoons balsamic vinegar
1 tablespoon fresh squeezed lemon juice
1 tablespoon dijon mustard
1 clove of garlic, minced
1/3 cup olive oil
salt and freshly ground pepper to taste

Steps:

  • Saute the red pepper and onion in olive oil until soft. Put in large bowl. Saute the shrimp in the same pan (if raw, until cooked or if already cooked, just a few minutes for flavor). Add the shrimp to the bowl with the red pepper and onion. Let cool slightly. Add the remaining ingredients for the salad. To make the vinaigrette, either blend all ingredients in a blender to emulsify, or just add to a glass jar and shake until well incorporated. Add the vinaigrette to the salad and then put in the fridge for at least 20 minutes so that it can chill and the flavors can marinate. Enjoy!

  • Broil one of the baking sheets of lettuce until it begins to char, 1 to 3 minutes. Remove it from the oven, turn the lettuce halves cut side up, and broil until charred, 1 to 3 minutes longer. Set the baking sheet on a cooling rack and repeat with the second tray.
  • Divide the lettuce among 8 plates. Top each lettuce half with a 1/4 cup of quinoa, roasted tomatoes, and cucumber slices. Stir the vinaigrette to recombine it and spoon some over each salad. Top with the feta and serve with pepperoncini and lemon wedges.

1 1/2 cups quinoa
3 cups water
1/2 cup kalamata olive
1/3 cup pine nuts
1/2 cup fresh basil
1 cup fresh spinach
1/2 cup fresh parsley
1/2 cup fresh cilantro
1/3 cup scallion
2/3 cup red onion
1 cup tofu
2/3 cup white distilled vinegar
1 lemon, juice and zest of
3 garlic cloves, grated
1 tablespoon tahini

Steps:

  • Bring 3 cups water to a boil and add quinoa. Cover and reduce heat to medium/high. Let simmer about 20 minutes or until all water is absorbed. Once quinoa is done, put in a bowl and refrigerate until completely cool.
  • While quinoa is cooking, prepare fresh ingredients. Chop tofu into ½ inch cubes, and then gently crumble slightly into bowl. To tofu add 1/3 cup vinegar, half to juiced lemon, half of lemon zest, and 1 clove of grated garlic. Let marinate
  • Chop basil, parsley, cilantro, scallions and red onion. Coarsely chop spinach and add veggies into large bowl.
  • Cut Kalamata olives into quarter rings, add to bowl.
  • In a bowl, whisk together reserved vinegar, lemon juice, lemon zest, grated garlic, and tahini, set aside.
  • Add marinated tofu with marinade into bowl with veggies.
  • When quinoa is cooled, add to veggie mixture, pour in dressing, and mix thoroughly.
  • Mix in pine nuts.
  • Eat immediately or refrigerate a few hours for best results.

1 cup quinoa
1 cup cherry tomatoes, sliced
1/2 orange bell pepper, diced
1/2 cucumber, diced
1/2 cup feta cheese crumbles
3 tablespoons chives, chopped
3 tablespoons parsley, chopped
For the Lemon Vinaigrette:
1/4 cup extra virgin olive oil
2 tablespoons freshly squeezed lemon juice
2 tablespoons water
2 teaspoons honey
2 teaspoons dried oregano
Salt and freshly ground black pepper

Steps:

  • Bring two cups of water to a boil in a saucepan, and season with salt. Add the quinoa and reduce to a simmer. Cover and cook until the water is absorbed, about 10-12 minutes. The quinoa is cooked when the spiral germ becomes visible around the grains. Meanwhile, prepare the lemon vinaigrette. In a bowl, whisk extra virgin olive oil, lemon juice, water, honey, and dried oregano until thoroughly combined. Season with salt and pepper and whisk again. In a large container, add the cooked quinoa, diced pepper, diced cucumber, feta, chopped chives, chopped parsley, and the lemon vinaigrette. Stir until well combined. Carefully fold in tomatoes. Serve at room temperature or store in an airtight container in the fridge and serve chilled.

3 tablespoons fresh lemon juice
1 tablespoon red wine vinegar
1/4 teaspoon dried oregano
1 garlic clove, smashed and finely chopped into a paste

fresh ground black pepper
1/4 cup extra-virgin olive oil
1 cup quinoa
kosher salt
fresh ground black pepper
2 cups grape tomatoes, halved (red and yellow)
1 cup kalamata olive, pitted
2 green onions, thinly sliced (green and pale green parts)
2 pickled cherry peppers, diced
1 small red onion, halved and thinly sliced
1/2 English cucumber, cut into small dice
feta cheese, for sprinkling

Steps:

  • Whisk together the lemon juice, vinegar, oregano, garlic and some salt and pepper in a small bowl. Slowly whisk in the oil just until emulsified. Let sit at room temperature while you prepare the salad to allow the flavors to meld.
  • Rinse the quinoa in a strainer until the water runs clear. Combine the quinoa with salted water and cook about 15 minutes; drain any remaining water that has not been absorbed.
  • Transfer quinoa to a bowl, fluff with a fork and let it sit for 5 minutes to cool slightly. Add the tomatoes, olives, green onions, cherry peppers, onions, cucumbers and dressing and toss to coat. Cover and refrigerate for at least 1 hour and up to 8 hours before serving. The longer it sits the better the flavor.
  • Just before serving, transfer to a platter and sprinkle feta cheese on top.
