Simple and delicious Greek pasta salad with homemade Greek salad dressing. The perfect dish to bring to a pot luck, picnic or when you don't want to spend all day cooking!

12 oz favorite pasta (elbows, penne, wagon wheels, bow-ties, etc.)
1 cucumber - peeled, quartered lengthwise, seeds removed and chopped
1 1/2 cup grape tomatoes, halved or quartered if extra large
1 1/2 cup olives, halved (Kalamata taste best, but black olives will work too)
8 oz feta cheese
1/3 cup and 1 Tbsp olive oil
1 tsp garlic powder
1 tsp dried oregano
1 tsp dried basil,
3/4 tsp black pepper
3/4 tsp salt
3/4 tsp onion powder
3/4 tsp spicy brown mustard
1/2 cup and 2 tsp red wine vinegar (you can substitute up to half white vinegar without altering the taste)

Steps:

  • Mix ingredients for dressing in a jar or bowl and set aside.
  • In a large pot of boiling water, cook pasta until al dente. Drain and set aside to cool slightly.
  • Combine chopped cucumber, tomato halves and olive halves in a large bowl with the prepared Greek Dressing. Add cooled pasta and stir to combine flavors well.
  • Add feta cheese when the pasta is completely cooled. Refrigerate until ready to serve.
  • This dish can be made up to 24 hours in advance and stored in the refrigerator covered. Add cheese prior to serving.

2 cups penne pasta
¼ cup red wine vinegar
1 tablespoon lemon juice
2 cloves garlic, crushed
2 teaspoons dried oregano
salt and pepper to taste
⅔ cup extra-virgin olive oil
10 cherry tomatoes, halved
1 small red onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
½ cucumber, sliced
½ cup sliced black olives
½ cup crumbled feta cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Rinse with cold water and drain well in a colander set in the sink.
  • Whisk together the vinegar, lemon juice, garlic, oregano, salt, pepper, and olive oil. Set aside. Combine pasta, tomatoes, onion, green and red peppers, cucumber, olives, and feta cheese in a large bowl. Pour vinaigrette over the pasta and mix together. Cover and chill for 3 hours before serving.

This is a wonderful mediterranian pasta salad. It is very tasty and also very healthy, too, cause it uses no cream or mayonnaise. You can make it even healthier by using whole wheat pasta instead of regular. This is great served with some oven-warm bread or just eaten plain.

80 g pasta (maccaroni or penne)
125 g frozen spinach
150 g kefir
2 garlic cloves, minced
1 red onion, diced finely
2 tomatoes, sliced
40 g green olives, halved (stones removed)
1/2 lemon, juice of
1/2 bunch dill, chopped finely
1 tablespoon walnut oil or 1 tablespoon other flavourful oil
salt and pepper

Steps:

  • Cook pasta according to package instructions until al dente (firm to the bite). In the last five minutes of cooking add spinach.
  • For the sauce combine kefir, oil, garlic, dill and lemon juice in a bowl. Season with salt and pepper to taste.
  • In a big bowl combine sauce, drained pasta and spinach, tomatoes, olives and onion.
  • Season again to taste.
  • Let cool and serve or eat warm. Enjoy!

2 cups cherry tomatoes, halved
2 cups garbanzo beans, canned, drained
1 cup Greek salad dressing (I use Kraft)
1/2 cup sliced ripe olives
8 ounces greens (spring mix greens)

Steps:

  • Cook pasta as directed on package; drain. Place in a large bowl.
  • Add remaining ingredients, mix lightly.

I found a greek dressing recipe that we liked from Zaar (I think it was one of Kittencal's) and went from there. My DH loves just about anything with Feta on it. I don't use fresh basil enough to keep it on hand so I use a jarred kind (Polaner Chopped ready to use). The salad is best if you let the dressing chill but I have made it at the last minute also, I just make the dressing first and chill while doing the rest.

3/4 cup olive oil
6 tablespoons red wine vinegar
1/2 teaspoon sugar
1/2-3/4 tablespoon oregano
3/4 tablespoon fresh basil
1/2 tablespoon salt
1/2 tablespoon onion powder
1 garlic clove, minced
3/4 tablespoon Dijon mustard
2 tablespoons parmesan cheese, grated
1 1/2 cups spiral shaped pasta
1 small red onion, chopped
2 small celery ribs, thinly sliced
1/4 cup sun-dried tomato, julienne-cut, cut in half (either cover with boiling water or place in bottom of strainer and drain the pasta over them)
1/4 cup kalamata olive, sliced

  • Combine the dressing ingredients and mix well, chill for at least 1 hour.
  • Cook the pasta according to package directions and drain, do not rinse.
  • Combine all ingredients, in a medium sized bowl with the pasta and tomatoes on top, pour a small amount of the dressing over the hot pasta and toss gently to coat. Add more dressing so that all ingredients are well coated.

8 ounces fresh mushrooms, sliced
4 shallots, chopped (about 1/2 cup)
6 tablespoons olive oil (divided)
2 tablespoons lemon juice
3 tablespoons mayonnaise
1 tablespoon all purpose Greek seasoning
8 ounces penne pasta, cooked
5 ounces black olives, sliced
4 ounces diced pimentos (drain can)

Steps:

  • Heat 2 tbsp olive oil over medium heat in large skillet. Add sliced mushrooms and shallots, and saute over medium high heat for 7 - 8 minutes, or until tender. Remove from heat.

300g fusilli pasta spirals - or you can use farfalle (butterflies) or penne (quill tubes)
225g bag prepared fresh baby spinach
250g punnet cherry tomatoes , halved
100g black olive (we bought kalamata from the deli counter)
200g feta cheese , broken into rough chunks
3 tbsp olive oil

Steps:

  • Tip the fusilli into a large pan of boiling salted water and boil for 10 minutes. Throw in the spinach, stir well and boil for another 2 minutes. Drain into a colander or sieve and leave to drip-dry.
  • Tip the tomatoes, olives and feta into a big bowl, grind lots of black pepper over and then drizzle with the olive oil.
  • Toss in the drained pasta and spinach, and let everyone help themselves.
