Steps:
- Mix all ingredients together including the lamb chops.
- Cover and refrigerate for 4hours or overnight, turning occasionally.
- Arrange the chops on a rack in a pan, drizzle with any remaining marinade and grill/broil in oven for about 3 minutes each side at medium high heat for medium-rare, or until cooked to your liking.
- These can also be cooked on an outdoor grill/barbeque.

If you love lamb chops then you will love this recipe. Plan ahead the chops need to marinade for 24 hours, although I have only marinaded them for about 6 hours they were still delicious!

Steps:
- Mix/whisk the wine, oil, oregano, garlic, red wine vinegar, salt and cayenne or black pepper until well blended.
- Arrange the lamb chops in a single layer in a glass dish; turn to coat with the marinade.
- Cover and refrigerate for 24 hours, turning often.
- Prepare the grill to medium-high heat.
- Transfer the lamb to plates and season with salt and pepper (I use seasoning salt).
- Mix the honey into the marinade.
- Grill lamb to desired tenderness, turning and basting often with the marinade (for medium-rare grill about 10 minutes).

Steps:
- Sprinkle both sides of lamb with oregano, salt and pepper. Press garlic into lamb.
- In 12-inch skillet, heat oil over medium-high heat. Cook lamb in oil 4 to 6 minutes, turning once, until brown.
- Add broth to skillet; reduce heat to medium-low. Cover and cook 8 to 10 minutes, turning once, until lamb is tender. Remove lamb from skillet; keep warm.

Steps:
- bring a pot of salted water to a boil.
- add orzo, cook according to package directions, drain.
- transfer to a platter, toss in feta cheese, set aside.
- meanwhile, in a saute pan heat olive oil.
- season lamb chops w/salt and pepper, saute 5 minutes per side, remove and keep warm.
- add 1/2 c chicken broth to deglaze the pan, scraping up browned bits.
- add garlic, cook for a minute.
- add tomatoes, olives, remaining broth, cook for 2 minutes.
- add mint, oregano, lemon juice and zest, cook for 1 minute.
- season to taste with salt and pepper.

- Put the lamb cutlets in a bowl with the thyme, chilli flakes and oil. Toss together to coat, then leave to marinate in the fridge for 30 mins-1 hr.
- For the htipiti, cut the peppers into small pieces. Put in a bowl and add all the other ingredients. Leave for about 15 mins for the flavour to infuse.
- Heat a griddle pan or frying pan. When it's really hot, lift the chops out of the marinade. Cook them, a few at a time, for 3 mins either side, seasoning as you go. Serve the chops with the sauce, and some baby potatoes, if you like.
