I love hummus and this recipe lets me enjoy it more often without the higher calorie count of some recipes. Serve with warm pita bread and sliced veggies for a nutritious snack.

1 (15 ounce) can chickpeas (save liquid) or 1 (15 ounce) can garbanzo beans, drained (save liquid)
1 -2 garlic clove, crushed
1 tablespoon lemon juice
1 tablespoon tahini (optional, but if you do not use, increase yogurt by 1 TBLS) or 1 tablespoon low-fat peanut butter, if you prefer (optional, but if you do not use, increase yogurt by 1 TBLS)
1/2 cup plain yogurt
3/4 teaspoon salt
1/2 teaspoon cumin
1 pinch cayenne

Steps:

  • In a food processor combine beans, tahini (if desired), yogurt, garlic, and lemon juice. Blend well. Add salt, cumin and cayenne and blend to a smooth and creamy dip.
  • If you hummus is too thick, add a little bit of the liquid from the chickpeas - about a teaspoon at time. Other ways to thin out hummus is by using warm water or olive oil also.

  • Combine chickpeas, feta cheese, tahini, parsley, lemon juice, garlic, and cinnamon in a food processor or blender. Puree until smooth.

Very light and yet filling at the same time. I just put these together the other day, so all of the ingredient amounts are approximate. You could add any number of things to the salad that you like (bell peppers, red onion, etc.). Also, my pitas were thin and large. If you use thicker and/or smaller pitas, obviously you won't fit as much in each portion. The hummus really adds character to these sandwiches (and also a little protein). Enjoy!

2 cups mixed salad greens
2 medium tomatoes, diced
1/2 cucumber, peeled and thinly sliced
12 kalamata olives, pitted and sliced in half
2 ounces feta cheese
1 tablespoon vinaigrette dressing (of your choice)
3 tablespoons hummus
1 whole wheat pita bread (large size, or use 2 small size)

Steps:

  • Toss together first six ingredients in a medium bowl.
  • Cut the pita in half. Open each half gently with a knife and toast them slightly (you want it to be a little firm but not crispy). Spread each pita half with 1.5 tablespoons of hummus. Then stuff each pita half with as much of the salad as you can fit. Enjoy!
  • Eat any leftover salad. :-).

One 15-ounce can chick peas, drained
1 lemon
1 sprig fresh oregano, leaves chopped
A handful fresh flat-leaf parsley
1 clove garlic, finely chopped
Salt
2 rounded tablespoons tahini paste
Drizzle extra-virgin olive oil
1/4 cup kalamata olives, well drained, coarsely chopped
1 sack pita chips, sea salt variety (recommended: Stacy's)
1/2 seedless cucumber, cut into sticks for dipping
A medium red pepper, seeded and cut into strips for dipping

Steps:

  • Combine chick peas, juice of 1 lemon, oregano and parsley in food processor. Mash garlic into paste with some salt pressing under the flat part of your knife then add garlic to processor along with tahini paste. Process hummus, drizzling in olive oil, until smooth then transfer to a bowl and stir in olives, reserving a few for garnish. Serve dip with pita crisps and vegetable sticks.

1/2 cup chopped cucumber
1 plum (Roma) tomato, seeded, chopped

1 tablespoon chopped fresh oregano leaves
1 teaspoon finely shredded lemon peel, if desired

Steps:

  • Heat oven to 400°F. Arrange pita chips on heatproof serving platter. Dollop hummus over chips. Top with cucumber, tomato, olives and cheese. Bake about 4 minutes or until hummus is warm.
  • Sprinkle oregano and lemon peel over hot nachos. Serve immediately.

2 -3 tablespoons lemon juice

Steps:

  • Add all ingredients together in food processor.

1 tablespoon dried mint
feta cheese
1 can chickpeas, drained (use 3 Tablespoons juice)
2 tablespoons lemon juice
2 cloves garlic
1/8-1/4 teaspoon salt
2 tablespoons tahini

Steps:

  • For the dressing: Mix all ingredients together and chill.
  • Pour over a salad of iceberg lettuce, tomato, cucumbers and red onion.
  • Sprinkle 1 teaspoon of black pepper over salad before adding dressing.
  • Toss to mix well.
