BAKED COD WITH GREEK POTATOES

This may seema plain way to serve cod, but the best, most translucent fresh and flaky fillet only needs these Greek potatoes to accompany it.

2 lbs potatoes, cut into roast potato size chunks
1 large onion, peeled and finely chopped
6 cloves garlic, peeled
1/4 cup fresh oregano, chopped
3 1/2 ounces olive oil
2 lemons, juice of
butter, for greasing
2 1/4 lbs thick cod fish fillets
olive oil

Steps:

  • Preheatoven to 375*F.
  • Put the potatoes into a roasting pan or gratin dish, then throw in the onion and garlic and scatter over the herbs.
  • Season and pour over the olive oil.
  • Spoon over the lemon juice and then add enough water to barely cover the potatoes.
  • Cook the potatoes,uncovered, for 45 minutes then turn them over and bake a further 25 minutes.
  • Towards the end of this time, lay your slice of cod, skin side down, in a thickly buttered gratin dish.
  • Dribble with a thin layer of best olive oil.
  • Season well.
  • Bake the fish and potatoes together for 15 minutes longer, til the fish is cooked.
  • (test with a knife point or skewer, if it goes right through with no resistance, it is done) Slice the fish and serve with the gore=geously golden potatoes, together with plenty of lemony juices.

Greek Cod Fish Cakes with Beer image

Delicious, golden and crispy fish cakes made from rich salt cod fillets.Enjoy it with garlic sauce which is a classic combination.

500 g salt cod
2 medium red onions, grated
4-5 spring onions, finely chopped
1/2 bunch of dill, finely chopped
1/2 bunch of parsley, finely chopped
1 can(s) beer
250 g self-rising flour
lots of freshly ground pepper
1 egg

Steps:

  • 1. Prepare the cod, in order to soak the salt out. Place it in a bowl filled with water and leave for 48h. Remember to change the water frequently.
  • 2. Then flake the cod, removing the skin, and place it in a large bowl. Add the rest of the ingredients leaving the flour for last. (In case you're in a hurry or just don't want to add the egg, you can omit it). Mix well, cover and leave the mixture to rest and the different flavours to mingle for 20 minutes.
  • 3. Wet a spoon in water, take a spoonful of the mix and carefully place in frying oil. Saute'/ fry for a couple of minutes until golden and crispy. Remove and place on kitchen paper to soak up any excess oil. Serve with garlic sauce.

4-6 cod fillets
1 can tomato sauce
Greek seasonings
1 jar roasted red peppers
1 can sliced black olives
1 package ATHENOS Feta Cheese Tomato & Basil

Steps:

  • 1. Spray a medium baking dish with oil. Wash & pat dry the cod fillets. Spread fillets in dish.
  • 2. Cover each fillet with tomato sauce. Lightly season fillets with Greek spices. Top fillets with peppers. Spread olives over fish.
  • 3. Bake at 350°F for 15-20 minutes or until fish flakes with a fork. Remove from oven and top with ATHENOS Feta Cheese.

4 cups milk
2 lbs cod fillets, cut into 2" pieces
1 cup panko (Japaneese bread crumbs), divided
1/4 Cup minced fresh parsley
2 T grated onion
2 1/2 t grated lemon rind
1 1/2 t salt
1 t fresh ground black pepper
3 Large Eggs, lightly beaten
2 garlic cloves, minced
1/4 Cup fresh lemon juice, divided
1/4 Olive Oil, divided
Sauce:
1/2 cup Mayonnaise
2 t chopped fresh dill
2 T chopped fresh parsley
2 t Dijon mustard
2 t fresh lemon juice
1 t minced fresh garlic
1/2 t fresh ground black pepper

Steps:

  • 1) Bring Milk to simmer over med heat in large, heavy saucepan. Add fish; cover and simmer 5 minutes, or until fish flakes easily w/ fork. Drain well. combine fish, 1/2 C Panko and next 7 ingredients (through 2 garlic cloves); stir in 2 T juice. Divide fish mixture into 16 portions, shaping each into 1/2 inch patty. Dredge patties in remaining 1/2 Cup Panko, pressing to coat. 2)Heat 1 T Olive Oil in nonstick skillet over med/high heat. Add 4 patties, cook 4 minutes per side or until golden. Remove & drain on paper towels. Repeat 3x's. Drizzle cakes w/ remaining Lemon juice. 3) Sauce: combine all ingredientes and let sit, 30 minutes before serving.

1 small onion, finely chopped (1/4 cup)
1 clove garlic, finely chopped
1 teaspoon grated lemon peel

1 can (14.5 oz) diced tomatoes, undrained
3/4 lb cod or other mild flavor, medium-firm fish fillets, cut into 2 serving pieces
2 tablespoons chopped ripe olives
2 tablespoons crumbled reduced-fat feta cheese
2 tablespoons plain croutons

Steps:

  • Heat oven to 400°F. In 10-inch skillet, heat oil over medium-high heat. Cook onion and garlic in oil 2 to 3 minutes, stirring frequently, until onion is soft.
  • Stir in lemon peel, basil, thyme and tomatoes. Cook over medium-high heat about 6 minutes, stirring occasionally, until mixture is slightly thickened.
  • Spoon half of tomato mixture into 8-inch square (2-quart) glass baking dish. Top with fish. Spoon remaining tomato mixture over fish. Sprinkle with olives, cheese and croutons.
  • Bake uncovered 15 to 20 minutes or until fish flakes easily with fork.
