1 (2 1/2 lb) chicken, cut in 8 pieces
salt
pepper
3 tablespoons butter
2 medium red onions, peeled and sliced
1 cup chicken stock
1/2 teaspoon cinnamon (to taste) or 1 teaspoon ground cinnamon (to taste)
2 garlic cloves, peeled and mashed with salt
8 small tomatoes, skinned and seeded and cut in slices
2 cups dry white wine
1 tablespoon tomato paste
4 celery ribs, thinly sliced
2 tablespoons chopped parsley
1/2 lb broad egg noodle
1/2 lb fine noodles
2 tablespoons grated cheese (parmesan or any other cheese you may like)

Steps:

  • Season the chicken pieces with salt and pepper. Heat the butter in a large frying pan and brown the chicken on all sides. Add the onions and stock; simmer 45 minutes. Sprinkle with cinnamon.
  • Bring the garlic, wine, and tomatoes to a boil in a saucepan; stir in the tomato paste and celery. Season with salt and pepper and boil 15 minutes; Add the parsley.
  • Boil the noodles in salt water in another saucepan for 10 minutes OR until they are done, rinse with cold water, and drain.
  • To serve, mix the noodles with half of the cheese and place on a serving dish. Arrange the chicken on the bed of noodles. Pour the sauce on top of the chicken and sprinkle with the remaining cheese. 4 to 6 servings.

I was hesitant about trying this recipe since I'm not a fan of raisins or garbanzo beans. I'm glad I did because it is very tasty! From Sara's Secrets on the Food Network.

3 tablespoons extra virgin olive oil
1 large onion, chopped
1 large green bell pepper, chopped
1 tablespoon garlic, minced
4 teaspoons all purpose Greek seasoning, crumbled between the fingers
1 (28 ounce) can crushed tomatoes, in puree
1 (15 ounce) can garbanzo beans, rinsed and drained
1 cup chicken broth
2 bay leaves
1 teaspoon pepper
1 oven-roasted deli chicken, cut into serving pieces
1/2 cup kalamata olive, pitted and coarsely chopped
1 tablespoon lemon juice, freshly squeezed
2 cups chicken broth
1 tablespoon extra virgin olive oil
1/2 teaspoon salt
1 (10 ounce) box couscous, plain
1/4 cup raisins
1 teaspoon cinnamon
1 tablespoon orange juice

Steps:

  • To make the stew:.
  • Heat the oil in a large stockpot over medium-high heat. Add the onion and bell pepper and cook, stirring frequently, until they begin to soften, about 4 minutes.
  • Add the garlic and Greek seasoning and cook for 1 minute, stirring constantly.
  • Add the tomatoes, garbanzo beans, broth, bay leaves and pepper. Stir well. Bring to a boil and boil for 5 minutes, stirring frequently.
  • Add the chicken, lower the heat to medium, and simmer, uncovered, for 15 minutes. Stir frequently to prevent sticking. (The mixture will thicken.).
  • Remove the bay leaves and discard. Stir in the olives and lemon juice and serve immediately over the couscous.
  • To make the couscous:.
  • While the stew is simmering, bring the broth, olive oil and salt to a boil in a medium saucepan over medium-high heat. Stir in the couscous and raisins, cover, and remove the pan from heat.
  • When the moisture has been absorbed, about 5 minutes, sprinkle the cinnamon and orange juice over the couscous. Fluff with a fork to combine the flavors and loosen the couscous. Do not stir.

GREEK OREGANO AND CINNAMON ROAST CHICKEN

This is taken from Tonia Buxton, a Greek / English presenter who travelled around the Greek islands presenting "My Greek Kitchen". This is a recipe that she apparently got from Crete, its very easy and tasty and great served with her recipe for Cumin Potatoes (which I've also posted) and salad.

1 chicken, oven ready approx 3lb
1 large beef tomatoes, sliced into 8 pieces
1 large onion, sliced
2 tablespoons olive oil
1 1/2 teaspoons dried oregano, heaped
1 1/2 teaspoons cinnamon
salt & freshly ground black pepper

Steps:

  • Heat the oven to 180C.
  • Place chicken in a roasting dish and rub with 1 tbsp oil.
  • Place tomato slices on breast and legs.
  • Separate the onion slices and place around the chicken.
  • Season with the salt, pepper, oregano and cinnamon.
  • Drizzle remaining oil over the chicken and place in the oven for 11/2 hours or until the juices run clear.

1 chicken (2 1/2 to 3 pounds), cut into 8 pieces (legs, breast and thighs)
1 tsp. ground cinnamon
2 tsp. kosher salt
1 tsp. freshly ground black pepper
5 cloves garlic , peeled and minced
2 Tbsp. extra-virgin olive oil
1 large yellow onion , peeled and coarsely chopped
2 cups water
1 can (6 ounces) tomato paste
1 Tbsp. dried Italian herb seasoning
1 cup orzo , cooked according to package directions
1/2 cup grated Parmesan cheese

Steps:

  • Preboil water with sea salt. Pat the chicken dry with paper towels. A wet chicken will cause the oil to splatter while the chicken is sautéing. Mix the cinnamon, salt and pepper in a small bowl. Rub the chicken pieces on all sides with the seasoning. Heat the olive oil in a large, nonreactive, deep skillet over high heat. A 12-inch skillet with sides about 2 1/2 to 3 inches high will allow you to brown all the chicken at once. If you don't have a skillet large enough, brown them in two batches using 1/2 the oil for each batch. What's important is that the chicken isn't overcrowded, which would cause them to steam rather than brown. Add the chicken to the oil and brown for about 4 to 5 minutes on each side. Turn the pieces using a metal spatula, as they have a tendency to stick to the pan. Remove the pieces when they are well browned on all sides. Mince three of the garlic cloves. Lower the heat to medium-high, and add the onions and minced garlic. Cook for about 3 minutes, stirring constantly, until the onions have softened and are a rich golden brown. Add about 1/2 cup of the water and scrape the bottom of the pan with a spatula or spoon to deglaze the pan, loosening any particles stuck on the bottom. When the water has evaporated, add the remaining 1 1/2 cups of water, tomato paste, Italian seasoning and remaining 2 garlic cloves, minced. Return the chicken to the pan. The liquid should cover about 3/4 of the chicken pieces. Cover the pot and simmer over medium-high heat for about 30 to 40 minutes, or until the chicken is tender and thoroughly cooked. If the sauce becomes too thick, it can be thinned with a little more water. Season the finished sauce with kosher salt and pepper to taste. Serve over orzo, cooked according to package directions, and sprinkle Parmesan cheese on top.

0.5 cups dry white wine
1 cups water
1 cups chicken broth
6 ounces tomato paste
1 tablespoons oregano
0.25 cups kasseri cheese
0.25 cups parmesan cheese
1 servings orzo
1 leaves parsley leaves

Steps:

  • Pat the chicken dry with paper towels. A wet chicken will cause the oil to splatter while the chicken is sautéing. Mix the salt, pepper and cinnamon in a small bowl. Rub the chicken pieces on all sides with the seasoning.

Cook for about 3 minutes, stirring constantly, until the onions have softened and are a light golden brown. Add the wine, and scrape the bottom of the pan with a wooden spoon to deglaze the pan, loosening any particles stuck on the bottom.
  • When the wine has evaporated, add the water, chicken broth and tomato paste. Stir to dissolve the tomato paste. Return the chicken to the pan and add the oregano. The liquid should come about halfway up the chicken pieces.
  • Cover the pan and simmer over low heat for about 1 hour or until the chicken is tender and completely cooked. If the sauce becomes too thick, it can be thinned with a little more water. Season with salt and pepper to taste.
  • Serve the chicken over cooked orzo. Top with the red sauce and sprinkle with the cheese. Garnish with fresh parsley leaves.
