1 pound boneless skinless chicken breasts, cut into 1-inch cubes
1/3 cup fat-free creamy Caesar salad dressing
1/4 cup crumbled feta cheese
1/4 cup pitted Greek olives, finely chopped
1/4 teaspoon garlic powder
8 pita pocket halves
8 lettuce leaves
1 medium tomato, sliced
1 small onion, sliced

Steps:

  • In a large nonstick skillet coated with cooking spray, cook and stir chicken over medium heat until no longer pink. Add the dressing, cheese, olives and garlic powder; heat through., Line pita halves with lettuce, tomato and onion; fill each with about 1/3 cup chicken mixture.

1 pound boneless skinless chicken breasts, cubed
1/4 teaspoon garlic powder
1 tablespoon olive oil
1/2 cup creamy Caesar salad dressing
1/2 cup crumbled feta cheese
1/4 cup sliced ripe olives
4 French or Italian sandwich rolls, split
4 lettuce leaves
4 tomato slices
8 red onion rings

Steps:

  • In a large skillet over medium heat, cook chicken and garlic powder in oil until chicken juices run clear; drain. , Stir in the salad dressing, cheese and olives. Cook and stir until heated through. Serve on rolls with lettuce, tomato and onion.

1/4 cup Yoplait® Original Fat Free plain yogurt
1/3 cup finely chopped seeded cucumber
1 medium green onion, sliced (1 tablespoon)
1 teaspoon grated lemon peel
Dash salt and pepper
2 teaspoons lemon juice
1 teaspoon olive or vegetable oil
1/4 teaspoon dried oregano leaves
Dash salt and pepper, if desired
2 boneless skinless chicken breasts (4 oz each)
1 pita (pocket) bread (6 inch), cut in half to form pockets
1 small tomato, sliced
2 thin slices red onion

Steps:

  • Heat gas or charcoal grill. In small bowl, mix sauce ingredients. Set aside. (Sauce may become watery if it stands longer than 30 minutes.)
  • In another small bowl, mix lemon juice, oil and oregano. Brush lemon mixture over chicken, coating all sides. Sprinkle with salt and pepper.
  • Place chicken on grill. Cover grill; cook cook over medium heat 15 to 20 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (170°F). Wrap pita halves in foil; place on grill 1 to 2 minutes or until warm.
  • Place chicken, tomato and onion inside pita pockets. Top with sauce.

3/4 cup mayonnaise
1/4 cup milk
2 garlic cloves, minced
1 teaspoon oregano
1/4 teaspoon pepper
3 pita bread, cut in half
3/4 lb thinly sliced beef or 3/4 lb chicken breast
1 cup lettuce, shredded
1 cup chopped tomato
1/2 cup thinly sliced red onion
1/4 cup olive

Steps:

  • Gyro sauce: Combine the first 5 ingredients in a medium bowl. Chill.
  • Fill pita pockets with cooked beef or cooked chicken( I often use marinated flank steak), lettuce, tomato. red onion and olives. Spoon Gyro sauce into each filled pita. Serve.
  • * I sometimes place all ingredients on the pita and roll up in foil. Keeps it nice and neat and much easier to eat.

1 can (12 oz) refrigerated Pillsbury™ Grands!™ Butter Flake Crescent Rolls (8 Count)
2 cups chopped cooked chicken
1/2 cup chopped apple (Pink Lady or Honeycrisp)
1 stalk celery, chopped (about 1/3 cup)
1/4 cup chopped red onion
1/3 cup sliced almonds
1/2 teaspoon chopped fresh thyme leaves
1 cup plain whole milk Greek yogurt (5% milkfat)
2 teaspoons honey

Steps:

  • Bake crescent rolls as directed on can. Transfer to cooling rack to cool completely, about 20 minutes.
  • Meanwhile, in medium bowl, mix chicken, apple, celery, onion, almonds and thyme; set aside.
  • In small bowl, mix yogurt, honey, 1/2 teaspoon salt and 1/4 teaspoon pepper. Stir yogurt mixture into chicken mixture; mix until well combined.
  • To serve, cut crescent rolls in half horizontally. Divide mixture evenly among bottom halves of cut rolls, replacing tops to make sandwiches.
