1/2 cup balsamic vinaigrette
1 pound boneless skinless chicken breast halves
CUCUMBER SAUCE:
1 cup plain Greek yogurt
1/2 cup finely chopped cucumber
1/4 cup finely chopped red onion
1 tablespoon minced fresh parsley
1 tablespoon lime juice
1 garlic clove, minced
1/4 teaspoon salt
1/8 teaspoon pepper
PITAS:
8 pita pocket halves
1/2 cup sliced cucumber
1/2 cup grape tomatoes, chopped
1/2 cup sliced red onion
1/2 cup crumbled feta cheese

Steps:

  • Marinate chicken in vinaigrette, covered, in refrigerator for at least 4 hours or overnight. In a small bowl, combine the sauce ingredients; chill until serving., Drain and discard marinade. If grilling the chicken, lightly oil the grill rack. Grill chicken, covered, over medium heat or broil 4 in. from the heat until a thermometer reads 170°, 4-7 minutes on each side., Cut chicken into strips. Fill each pita half with chicken, cucumber, tomatoes, onion and cheese; drizzle with sauce.

1 medium onion, diced
3 cloves garlic, minced
1 pound skinless, boneless chicken breast halves - cut into strips
1 teaspoon lemon pepper
½ teaspoon dried oregano
¼ teaspoon allspice
¼ cup plain yogurt
¼ cup sour cream
½ cup cucumber, peeled and diced
4 pita bread rounds, cut in half

Steps:

  • Place onion and garlic in a slow cooker. Season chicken with lemon pepper, oregano, and allspice; place on top of onions.
  • Cover, and cook on High for 6 hours.
  • In a small bowl, stir together yogurt, sour cream, and cucumber. Refrigerate until chicken is done cooking.
  • When chicken is done, fill pita halves with chicken, and top with the yogurt sauce.

2 garlic cloves, minced
½ teaspoon dried oregano
1 pound

Crispy Chicken Strips
1 cup low-fat plain yogurt
1 tablespoon fresh lemon juice
4 mini cucumbers, cut into ½-inch half-moons
Kosher salt and freshly ground black pepper
1 pint grape tomatoes, cut in halves
½ cup pitted Kalamata olives, cut in halves
1 green bell pepper, stemmed, seeded, and thinly sliced
4 pita pockets, cut in half

Steps:

  • Mix together the garlic and oregano. Place chicken on a baking sheet and sprinkle with half of garlic mixture. Prepare Crispy Chicken Strips according to package directions. Meanwhile, in a medium bowl, mix the yogurt, lemon juice, cucumbers, and remaining garlic mixture. Season to taste with salt and pepper. Divide the chicken, yogurt sauce, tomatoes, olives, and pepper among the pita pockets.

1 tablespoon fresh lemon juice

1/4 teaspoon ground cumin
1/4 teaspoon table salt

4 whole wheat pita pocket bread
2 medium plum tomatoes, chopped (es)
1 small cucumber, chopped

Steps:

  • In a medium glass bowl, combine yogurt, garlic and lemon juice; add chicken and stir to coat. Cover and refrigerate for 2 to 3 hours.
  • Preheat oven to 400ºF. Coat a non-stick baking sheet with cooking spray. Remove chicken from refrigerator; scrape off excess yogurt and place chicken on prepared baking sheet. Bake until cooked through, flipping once, about 20 minutes.

MARINADE
1/2 c balsamic vinaigrette
1 lb skinless chicken breasts
CUCUMBER SAUCE
1 c plain greek yogurt
1/2 c finely chopped cucumber

1 Tbsp fresh mint or fresh parsley
1 Tbsp lime juice
2 clove garlic, minced
1/4 tsp salt
1 pinch black pepper
PITA POCKETS
8 pita pocket halves
1/2 c chopped cucumber
1/2 c kalamata olives, quartered
1/2 c grape tomatoes, chopped
1/2 c chopped red onion
1/2 c crumbled feta cheese

Steps:

  • 1. Pour vinaigrette into a large re-sealable plastic bag. Add the chicken; seal bag and turn to coat. Refrigerate for at least 4 hours or overnight.
  • 2. In a small bowl, combine the sauce ingredients; chill until ready to serve.
  • 3. Preheat grill or oven broiler.
  • 4. Drain and discard marinade. Grill or broil chicken breasts until done, turning halfway through cooking to ensure even cooking on both sides, about 5 to 8 minutes each side or until a thermometer reads 170°. Cut chicken into thin strips.

1 1/3-1 1/2 pounds chicken breast tenders (the average weight of two packages)
Salt and pepper
1 package pita bread (8 count)
1 ripe lemon, zested and juiced
3 tablespoon red wine vinegar (eyeball it)
1/2 cup extra virgin olive oil (EVOO)
2 tablespoons fresh oregano (4 stems), stripped of leaves and chopped
3 cloves garlic, chopped
2 hearts of romaine lettuce, chopped
1/2 cup pitted kalamata olives, coarsely chopped
8 ounces feta cheese, crumbled
2 vine-ripe tomatoes, seeded and diced
1/3 English (seedless) cucumber, diced
1/2 red onion, chopped
1/2 cup flat leaf parsley leaves (a couple of handfuls), chopped

Steps:

  • Pre-heat grill pan over high heat. Place chicken in shallow dish and season with salt and pepper. Pre-heat oven to 275°F. Wrap pita bread in foil. Place in warm oven and heat until dinner is served. Combine lemon zest, juice and vinegar in a bowl and whisk in EVOO. Add oregano and garlic and whisk again to combine into dressing. Pour half the dressing over chicken tenders. Turn tenders in dressing to coat. Combine remaining salad ingredients in a bowl. Pour remaining dressing over salad and toss well. The salad should be very lightly dressed. Season salad with salt and pepper and transfer to a large serving platter. Grill tenders 4-5 minutes on each side. Transfer hot tenders to the salad-lined serving platter. Remove pitas from oven and unwrap. Cut pitas in half and arrange around the edge of platter. To serve, each person can pile grilled chicken and veggies into pita halves, wrap up on either side and enjoy!

Chicken Pita Ingredients:
3 tablespoons olive oil
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon dried parsley
1/4 teaspoon paprika
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
3 tablespoons butter
2 pounds chicken breast sliced into 1-inch pieces
Tzatziki Sauce (recipe below)
6 Pita breads
Toppings:
Chopped romaine lettuce (about 3 cups)
1 tomato, chopped
1 medium onion, thinly sliced
Tzatziki Sauce:
If you have a food processor, put garlic, cucumber, dill and mint in the processor. Pulse to chop fine and then put in medium size bowl. Add sour cream, lemon, salt and pepper. Be sure to taste to see if it needs more salt and pepper. Refrigerate until ready to use. This can be made hours or even the day before.
Chicken:
In a large bowl, whisk together the first 11 ingredients for the marinade,
Add the chicken and toss to coat. Cover and let marinate for at least 30 minutes or up to overnight in the refrigerator. If you let it marinade over night leave out the lemon. You can add it right before you cook it the next day.
Heat a large skillet over high heat, add butter. Remove the chicken from the marinade and add to the hot pan. Stir fry the chicken until it is browned and cooked through, about 6-8 minutes.
Grilled Pita Bread:
Spray frying pan with Pam over medium heat and add pita breads, one at a time and brown each side.

Steps:

  • Notes for the Cook: Make ahead. You can make the Tzatziki Sauce and the chicken the day before if you like. I usually put it all together in the morning or the night before and then just cook up the chicken when I am ready to serve it. It's also great for a reheat so you can make the chicken ahead of time and reheat it to serve. If you have a big crowd just double or triple the recipe and warm the pitas on a cookie sheet in the oven. It is also great served with a Greek salad. You can even put the chicken on skewers and grill it and serve it over a creek salad with the sauce and pitas on the side.

8 boneless skinless chicken thighs
2 lemons
1 cup Greek salad dressing
1 tablespoon Greek seasoning
1 tablespoon white wine vineger
1 cucumber seeded, peeled and diced
2 diced Roma tomatoes
1 cup shredded lettuce
1 diced sweet red pepper
1/2 cup finely diced red onion
4 oz feta cheese
12 pitted chopped greek olives (optional)
8 whole wheat pitas with pockets (ok to use white or other flavored pitas)

Steps:

  • To make the marinade simply mix greek dressing, greek seasoning, white wine vineger and the zest and juice of one lemon then whisk together and pour over chicken in gallon size ziploc and put in the fridge for 1 to 2 hours. When your ready to grill the chicken (grill pan will work too) preheat oven to 250 degrees and put in the pitas wrapped in aluminum foil. In a serving bowl mix together the cucumber, lettuce, red pepper, red onion, olives and the zest of the other lemon. When the chicken is ready to take off the grill, place on serving platter, and cover with the juice of 1 lemon. Place aluminum foil over it and let it rest for 10 minutes. Right before serving simply slice the chicken on cutting board and return it to the platter.
