Number Of Ingredients 12

4 cups unsifted flour
2 cups quick or old fashioned oats, uncooked
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
1 1/2 cups margarine, softened
2 cups firmly packed brown sugar
1 cup sugar
1 egg
1 teaspoon vanilla
1 can (16-ounce) Libby's Solid Pack Pumpkin
1 (12-ounces) bag semi-sweet chocolate chips

Steps:

  • 1) Preheat oven to 350 degrees. Combine flour, oats, soda, cinnamon and salt; set aside. Cream margarine, gradually add sugars, beating until light and fluffy. Add egg and vanilla; mix well. Alternate additions of dry ingredients and pumpkin, mixing well after each addition. Stir in morsels. 2) Drop by teaspoon full on a lightly greased cookie sheet and bake for approximately 15 minutes, or until cookies are firm and lightly browned. Remove from pan and cool.

2 cups flour
1 cup quick-cooking oats
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup butter, softened
1 cup brown sugar
1 cup sugar
1 egg
1 teaspoon vanilla
1 cup pumpkin
1 cup chocolate chips, i use milk chocolate
1 cup cinnamon baking chips (optional)

Steps:

  • Cream butter with both sugars until light and fluffy.
  • Add in egg, pumpkin, and vanilla and mix.
  • Then add flour oats, baking soda, cinnamon, and salt and mix well.
  • Then stir in CHocolate chips and cinnamon chips.
  • Bake at 350 for 18-20 minutes or until firm and lightly brown.
  • (OPT) You can shape these into pumpkins before baking and when done and cooled decorate with frosting or peanut butter (I love them just plain).
  • I usually eat mine when they are totally cooled.

2 t. baking powder
2 t. cinnamon
1 t. allspice
2 t. nutmeg
1 t. salt
2 c. margarine
2 c. sugar
2 eggs, beaten
2 T. vanilla extract
15-oz. can pumpkin
2 c. semi-sweet chocolate chips

Steps:

  • In a bowl, combine flour, baking powder, spices and salt. In a large bowl, beat margarine and sugar until light and creamy. Beat in eggs, vanilla and pumpkin. Add flour mixture to margarine mixture; stir in chocolate chips. Drop by teaspoonfuls onto ungreased baking sheets. Bake at 350 degrees for 15 minutes. Cool and frost with Chocolate Cream Cheese Frosting. Makes 4 dozen. Chocolate Cream Cheese Frosting: 3 1-oz. sqs. semi-sweet baking chocolate 3-oz. pkg. cream cheese, softened 1/2 t. vanilla extract 1-1/4 c. powdered sugar Melt chocolate in a double boiler; let cool. Beat in cream cheese and vanilla. Beat in powdered sugar until smooth.

1 3/4 tsp. baking soda
2 tsp. ground cinnamon
1 1/2 tsp. salt
3 1/2 sticks butter, softened
1 3/4 cups sugar
1 3/4 cups packed packed brown sugar
1 can (15 oz.) Libby's 100% pure pumpkin
2 large eggs
1 3/4 tsp. vanilla extract
1 1/3 cups chopped walnuts
1 1/3 cups raisins
Decorator icings (optional)

Steps:

  • Mix flour, oats, baking soda, cinnamon and salt in medium bowl. Beat butter, sugar and brown sugar in large bowl until light and fluffy. Add pumpkin, eggs and extract: mix well. Gradually add flour mixture: mix well. Stir in nuts and raisins. Drop 1/4 cup dough onto greased baking sheet; spread into 3-inch circle. Repeat with remaining dough. Bake in preheated 350 degree oven for 14 to 16 minutes or until firm and lightly browned. Cool on baking sheets for 2 minutes: remove to wire racks to cool completely. Decorate with icing as desired. Makes 40 large cookies.
