1 tablespoon olive oil
1 large onion, chopped
5 cloves garlic, minced
2 carrots, chopped
1 stalk celery, chopped
4 cups vegetable broth
1 large potato, chopped
2 bay leaves
1 tablespoon dried basil
1 teaspoon sea salt
½ teaspoon ground black pepper
1 pinch ground thyme
2 (15 ounce) cans great Northern beans, rinsed and drained

Steps:

  • Heat olive oil in a stockpot over medium heat. Cook and stir onion and garlic in hot oil until the onion is tender, about 5 minutes.
  • Stir carrots and celery into the onion mixture. Pour vegetable broth into the stockpot; add potato, bay leaves, basil, sea salt, pepper, and thyme. Bring the mixture to a boil, reduce heat to medium-low, and cook at a simmer until the vegetables are beginning to soften, about 20 minutes.
  • Stir beans into the soup; continue simmering until the beans are hot and tender, about 20 minutes more.

1 (20 ounce) bag 15 bean soup mix
1 1/4 lbs sirloin
1 tablespoon Worcestershire sauce
6 cups water
1 (14 ounce) can beef broth, 99% fat free
3 beef bouillon cubes
1 cup onion, diced
1/2 cup celery, diced
1 bag frozen carrots, crinkle cut
1 (15 1/4 ounce) can green beans
1 (15 1/4 ounce) can whole kernel corn

Steps:

  • Soak beans for at least 6 hours or overnight.
  • Drain and rinse beans.
  • Place in large soup pot and cover with 6 cups water.
  • Add 3 beef boullion cubes, onion and celery.
  • Bring to a boil, then reduce heat to a rapid simmer.
  • Cover bean pot.
  • Meanwhile, Cube sirloin and lightly brown with Worchesire sauce.
  • Add to bean pot.
  • Simmer for 1 1/2 hours.
  • Add can of beef broth and bag of frozen carrots (I let them thaw on the counter to reduce cooking time) Simmer covered 1 addittional hour.
  • Add cans of green beans and corn.
  • Simmer 15 minutes.
  • *When I add carrots and beef broth I throw in some garlic powder and whatever seasonings I have in the cabinet.

10 cups water
1 lb dried great northern beans (about 2 cups)
2 bay leaves
1 large onion, roughly chopped
1/2 lb bacon, diced (or ham, etc.)
1 lb whole tiny potato, unpeeled
1 (15 ounce) can tomato sauce
3 tablespoons instant beef bouillon (I used Herb Ox)
1/2 teaspoon salt
1/2 teaspoon pepper
3 garlic cloves, mashed
4 carrots, cut into 1/2-inch pieces
4 stalks celery, cut into 1/2-inch pieces
3 tablespoons butter
1/2 cup milk

Steps:

  • Rinse and drain beans.
  • Heat water, beans, bay leaves, onion, bacon and potatoes to boiling in 8-qt. stock pot; boil 2 minutes. Turn off heat, cover, and let stand 1 hour.
  • Add tomato sauce, instant bouillon, salt, pepper, garlic and half of the carrots and celery to beans. Heat to boiling; reduce heat. Cover and simmer until beans are tender, about 2 hours (do not boil or beans will burst).
  • Stir remaining carrots and celery into soup. Heat to boiling; reduce heat. Cover and simmer until vegetables are tender, about 1 hour. Stir in additional 1 or 2 cups water for thinner consistency.
  • Using a slotted spoon and a wooden spoon, scoop potatoes against inside of pot and smash them, letting smashed potatoes drop back into the soup.
  • Stir in butter and milk and serve immediately.

This is a family favorite we have all the time. We eat it with crackers but you could also serve with cornbread. It's a wonderful dish on a cold day , but we like it anytime.

2 cups dried great northern beans
8 cups water
1 small onion, minced
1 garlic clove, minced
1 bay leaf
ham hock
salt, to taste
black pepper, to taste

Steps:

  • Look over the beans and remove any rocks or broken beans. Rinse the beans and put in a large pot. Add water, about 8 cups or enough to cover by at least an inch. Bring to a boil on stove. Add onions, garlic, bay leaf and ham hock. Return to a boil. Reduce heat, cover and simmer for 2 to 3 hours, stirring occasionally. Makw sure you don't run out of water and that the beans don't scorch. Add more water if necessary.
  • After beans have softened (about 2 hours), add salt and pepper to taste.
  • Continue cooking until beans are done. Make sure the soup is not too thick or too thin. (I usually get it too thick but you can always add water to thin it out.). Remove bay leaf and serve.

1 pound bulk pork sausage
1 cup chopped onion
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 can (28 ounces) diced tomatoes, undrained
2 cups chopped cabbage
1 cup sliced carrots
1 tablespoon white vinegar
1 tablespoon brown sugar
1/2 teaspoon salt
1/2 teaspoon dried thyme
1/2 teaspoon paprika
1/2 teaspoon pepper
1/4 teaspoon hot pepper sauce
2 tablespoons minced fresh parsley

Steps:

  • In a large saucepan, cook sausage and onion over medium heat until meat is no longer pink; drain. Add the next 11 ingredients. Bring to a boil. Reduce heat; cover and simmer for 50-60 minutes or until vegetables are tender. , Stir in parsley; cook 5 minutes longer. Freeze option: Freeze cooled stew in freezer containers. I usually cook these outdoors, suspending a cast iron pot over a campfire but honestly, they taste about the same on the stovetop. And the flavor is just great. If you've yet to adopt a cooked beans recipe, this might be the one you're looking for. It's right out of Appalachia.

16 ounces great northern beans
30 ounces chicken broth (canned)
15 ounces diced tomatoes with green chilies (ro-tel)
1 large white onion, chopped
1 tablespoon cooking oil
6 ounces smoked pork pork jowl, cut into chunks
3/4 teaspoon salt
1 teaspoon black pepper
48 ounces water

Steps:

  • Soak the beans in cold water overnight. Make sure that there is twice as much water as beans because they will swell up.
  • In a large cooking pot, pour in the cooking oil and toss in the smoked jowl pieces. Stir and allow them to sizzle over medium heat for 5 or 6 minutes. After they brown a bit, deglaze the pot with about 4 ounces of the chicken broth.
  • Add the onion and allow to simmer until the onion is tender, stirring often.
  • Rinse the beans in fresh water a final time and, after draining, add them, plus all the remaining ingredients into the pot. This should include the 48 ounces of water listed in the ingredients.
  • Boil, covered, over low heat until beans are tender, stirring occasionally (about 2-3 hours).
  • Serve with cornbread, fried potatoes, eggs and biscuits.
  • If you wish, you can use chunks of ham or bacon instead of pork jowl.
