PANNBIFF MED LOK - MEAT PATTIES WITH ONIONS



Pannbiff Med Lok - Meat Patties With Onions image

This is the Swedish version of hamburger steak with onions. Delicious as it is or you can add Swedish Cream Sauce (Graddsas) posted separately.

1 lb ground beef
4 tablespoons fresh breadcrumbs
1 egg
1/2 cup milk
1/2 teaspoon ground allspice
1 teaspoon ground ginger
2 tablespoons grated onions (or 1 tsp onion powder)
1/2 teaspoon salt
fresh ground pepper
4 onions, sliced
4 tablespoons butter, divided
1 teaspoon sugar
1 cup water

Steps:

  • Melt 2 tbsp butter in skillet over medium heat. Add sliced onions and saute until tender. Add sugar, and continue to saute until they are starting to carmelize (turn brown). Remove from pan and keep warm.
  • In the meantime, gently mix together the ground beef, breadcrumbs, egg, milk, allspice, ginger, grated onion, salt and pepper. Form into 4 patties.
  • Melt 2 tbsp butter in skillet over medium heat. Add patties and fry until brown. Flip the patties and brown the other side. Add the water, cover, and simmer for 15 - 20 minutes until cooked through.
  • Serve, topped with the onions and, if you like, the Swedish Cream Sauce, potatoes and pickles.

1.5 #'s of stew beef
2 carrots
1 onion
2-4 potatoes
water, flour, whole allspice, bay leaves and salt
You can substitute ground allspice for the whole berry
12 whole berries = about 1 t ground.

Steps:

  • Cut beef into stew size pieces. Chop onion and carrots. The carrots should be chopped pretty thick. Fry beef and onion in a pot with some butter/oil until beef has gotten lightly browned. Pour a thin layer of flour over the beef and onion, stir. Pour in water so that it just covers the beef . Season with about 1.5-2 teaspoons of salt, 10-15 whole allspice and 5-7 bay leaves then add the carrots. Let simmer under lid for at least 1,5 hours. I prefer to let it simmer about 2-3 hours. Taste stew a few times while it simmers to check if additional seasoning is needed, or extra water needs to be added. Peel and boil potatoes. Add boiled potatoes just before serving.

This is a swedish cream sauce to serve over meatballs for Swedish Meatballs or hamburger steaks with onions (Pannbiff Med Lok - patties with onions).

1 1/4 cups cream
1 shallot
1 carrot
3 teaspoons soy sauce
1 teaspoon beef bouillon (or 1 beef bouillon cube)
1 tablespoon butter
fresh ground pepper

Steps:

  • Peel and dice the shallot and carrot.
  • Melt butter in a sauce pan and saute the vegetables over medium heat until soft.
  • Add the cream, soy sauce, bouillon and pepper. Whisk until the cream sauce is thickened and remove from the heat.
  • Strain the sauce to remove the vegetable particles. Taste the sauce and adjust the seasoning.
  • Serve over meatballs or patties with onions and/or potatoes.

1 egg, beaten
1 cup sour cream
1 cup soft breadcrumbs
1/2 cup finely chopped onion
1/2 teaspoon dry mustard
1/2 teaspoon ground mace
1 teaspoon salt
1 lb ground beef
1/2 lb ground pork
8 kaiser rolls, split and toasted
lettuce leaf

Steps:

  • In a bowl combine egg and ½ cup sour cream.
  • Stir in bread crumbs, onion, mustard, mace and salt.
  • Add ground meats.
  • Gently mix well.
  • Shape into 8 patties each ½ inch thick.
  • In large skillet brown slowly on both sides.
  • Cover.
  • Continue cooking over low heat for 15 minutes.
  • To serve place patties on toasted rolls and spread with remaining sour cream,.
  • Top with lettuce and other half of roll.
