PECAN COOKIES

Steps:
- Preheat the oven to 350°F and line a baking sheet with parchment paper. Set aside.
- In the bowl of a stand mixer fitted with a paddle attachment or a large mixing bowl with an electric hand mixer, cream together the butter and brown sugar.
- Combine with the vanilla, egg and salt, blending until fully incorporated.
- Slowly add the flour until just mixed, then add pecans, folding by hand. The mixture will be a little crumbly.
- Roll dough into 24 golf-ball-sized balls.
- Place balls onto the cookie sheet and dip the bottom of a pint glass into flour, tapped off excess, flatten each cookie, re-flouring when needed.
- Gently press a whole pecan into the top of each cookie.
- Bake for 14-15 minutes or until the bottom edges are just lightly browned.
- Remove and allow to cool in the baking sheet for 5 minutes and then move to a wire cooling rack to cool fully.

Oatmeal cookies were always my son's favorite when he was small. I wanted to send him some recently, but I couldn't find the recipe. So, I got out the ingredients and made my own. - In a large bowl, cream butter and sugars. Beat in the eggs, milk and vanilla. Combine the flour, cinnamon, baking soda, salt and pie spice; add to creamed mixture and mix well. Stir in the oats, raisins and nuts; mix well. , Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 10-12 minutes or until light golden brown. - Preheat oven to 375 degrees F.
- In a medium bowl, combine flour, baking soda, baking powder, and salt. In a mixer bowl, cream butter or margarine, peanut butter, brown sugar, and 1 cup granulated sugar until light and fluffy. Beat in the eggs and vanilla.
- Gradually beat in your choice of mix-in's until just combined. If you want just peanut butter cookies, just skip this step.
- Drop heaping tablespoons of dough into remaining 1/3 cup granulated sugar. Shape into balls. Place about 3 inches apart onto ungreased cookie sheets. Flatten slightly with a fork dipped in the sugar.
- Bake for 10 minutes or until the cookies are just set and are slightly firm to the touch. Do not over-bake. They will crisp up when cooled.
- Cool for one minute on cookie sheets. Transfer to wire racks to cool completely.
