1 cup unsalted butter (softened)
2/3 cup brown sugar (packed)
2 teaspoon vanilla extract
1 egg
1/4 teaspoon fine sea salt
2 cups all-purpose flour
1 cup chopped pecans
24 whole pecans

Steps:

  • Preheat the oven to 350°F and line a baking sheet with parchment paper. Set aside.
  • In the bowl of a stand mixer fitted with a paddle attachment or a large mixing bowl with an electric hand mixer, cream together the butter and brown sugar.
  • Combine with the vanilla, egg and salt, blending until fully incorporated.
  • Slowly add the flour until just mixed, then add pecans, folding by hand. The mixture will be a little crumbly.
  • Roll dough into 24 golf-ball-sized balls.
  • Place balls onto the cookie sheet and dip the bottom of a pint glass into flour, tapped off excess, flatten each cookie, re-flouring when needed.
  • Gently press a whole pecan into the top of each cookie.
  • Bake for 14-15 minutes or until the bottom edges are just lightly browned.
  • Remove and allow to cool in the baking sheet for 5 minutes and then move to a wire cooling rack to cool fully.

1 1/3 cups light brown sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups self rising flour
1 cup corn flakes, crushed
1 1/2 cups pecans, chopped

Steps:

  • Cream together shortening, sugar, eggs and vanilla.
  • Add dry ingredients and mix well. Roll into 2 inch balls.
  • Bake at 350 degrees F for 9-11 minutes. Cool on wire rack.

Oatmeal cookies were always my son's favorite when he was small. I wanted to send him some recently, but I couldn't find the recipe. So, I got out the ingredients and made my own. 1 cup butter, softened
1 cup sugar
3/4 cup packed brown sugar
3 eggs
1/4 cup milk
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour
1 tablespoon ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon pumpkin pie or apple pie spice
2 cups quick-cooking oats
2 cups raisins
1-1/2 cups chopped pecans

Steps:

  • In a large bowl, cream butter and sugars. Beat in the eggs, milk and vanilla. Combine the flour, cinnamon, baking soda, salt and pie spice; add to creamed mixture and mix well. Stir in the oats, raisins and nuts; mix well. , Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 10-12 minutes or until light golden brown. Remove to wire racks to cool.

2 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 cup butter
1 cup creamy peanut butter
1 cup firmly packed brown sugar
1 1/3 cups sugar, divided
2 eggs
1 teaspoon vanilla extract
2 cups m&m's milk chocolate candies
2 butterfinger candy bars, coarsely chopped
0.5 (8 ounce) package toffee pieces

Steps:

  • Preheat oven to 375 degrees F.
  • In a medium bowl, combine flour, baking soda, baking powder, and salt. In a mixer bowl, cream butter or margarine, peanut butter, brown sugar, and 1 cup granulated sugar until light and fluffy. Beat in the eggs and vanilla.
  • Gradually beat in your choice of mix-in's until just combined. If you want just peanut butter cookies, just skip this step.
  • Drop heaping tablespoons of dough into remaining 1/3 cup granulated sugar. Shape into balls. Place about 3 inches apart onto ungreased cookie sheets. Flatten slightly with a fork dipped in the sugar.
  • Bake for 10 minutes or until the cookies are just set and are slightly firm to the touch. Do not over-bake. They will crisp up when cooled.
  • Cool for one minute on cookie sheets. Transfer to wire racks to cool completely.
