This surprising dish is a fantastic accompaniment for ham. Pineapple chunks can be used instead of tidbits for a chunkier effect. (1 sleeve of Ritz is 35-40 crackers)

2 (20 ounce) cans pineapple tidbits, drained
6 tablespoons flour
2/3 cup sugar
2 cups sharp cheddar cheese, grated
1 sleeve Ritz cracker, crushed
1/2 cup butter, melted

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Combine the first four ingredients in a 9x9 dish.
  • Combine the melted butter and the crushed crackers.
  • Spread cracker mixture evenly over the top.
  • Bake for 25 minutes.

2 cups self-rising flour
2 cups sugar
3 (20 ounce) cans unsweetened pineapple chunks
1 cup shredded cheddar cheese
1/2 cup butter or 1/2 cup margarine, melted
70 butter flavored crackers, crushed

Steps:

  • In a bowl, combine flour and sugar.
  • Drain the pineapple, reserving 1 1/2 cups of juice.
  • Add juice to flour mixture; mix well.
  • Stir in the pineapple and cheese.
  • Pour into a greased 13x9 inch baking pan.
  • Cover and bake at 350 degrees for 30 minutes.
  • Uncover and stir; bake 10 minutes longer.
  • Combine melted butter and cracker crumbs; sprinkle over the pineapple mixture.
  • Return to the oven for 10-15 minutes or until tests clean.

This recipe originally came from my mom's baby sister, Aunt Clara. They both would be so proud that I have shared it with you. In my opinion, this dish compliments either ham or a pork roast very well. But it's good with any meal to me. LOL

6 Tbsp self-rising flour
3/4 c granulated sugar
16 oz can crushed pineapple, drained*
16 oz can pineapple chunks, drained*
1 sleeve ritz crackers, crumbled
1 stick butter or margarine, melted
2 c grated or shredded cheddar cheese
6-8 Tbsp pineapple juice*

Steps:

  • 1. *Drain pinapple but BE SURE TO SAVE 6 to 8 TBSP OF PINEAPPLE JUICE.
  • 2. Preheat oven to 350. Spray casserole or baking dish with Pam and set aside.
  • 3. In a bowl combine flour and sugar. Fold in pineapple, cheese and juice. Pour into prepared dish and sprinkle with crumbled ritz crackers. Pour melted butter somewhat evenly on top and bake at 350 for approximately 30 minutes.
  • 4. *You can use either 2 cans of crushed pineapple or 2 cans of pineapple chunks. I normally use 1 can of each.

1 large ripe golden pineapple, peeled, cored and cut into 8 to 10 wedges
Good olive oil
1/4 cup honey

Steps:

  • Prepare a charcoal grill with a single layer of hot coals.
  • When the grill is ready, brush the pineapple wedges lightly with the oil and place them on the grill. Cook for 6 to 8 minutes per side until nicely charred and lightly colored. Remove to a serving plate and drizzle with honey.

1/2 cup shredded sweetened coconut
1/2 cup crushed gingersnap cookies
1/2 cup chopped macadamia nuts
1/2 cup sweetened condensed milk
2 tablespoons dark rum
1 large ripe pineapple, leaves intact, quartered lengthwise

Steps:

  • Preheat oven to 350 degrees. Stir together coconut, cookie crumbs, and nuts; set aside. Whisk together sweetened condensed milk and rum; set aside.
  • Cut core from each pineapple quarter; discard. Cut between skin and flesh of each quarter to separate. Arrange, skin sides down, on a rimmed baking sheet. Drizzle with half of the sweetened-condensed-milk mixture. Sprinkle with coconut mixture; drizzle with the remaining sweetened-condensed-milk mixture. Bake until heated through and golden brown, 10 to 12 minutes. Serve warm.
