GRAPEFRUIT SIMPLE SYRUP RECIPE

Steps:
- Juice 4-5 grapefruits. Each grapefruit will yield approximately ½ a cup of grapefruit juice.
- Sometimes grapefruits will have tiny seeds. That said, use a fine mesh strainer to filter the seeds. If you prefer, you can also remove the pulp. Personally, I like the pulp in this simple syrup recipe.
- Measure two cups of grapefruit juice and add it to a one-quart sauce pan. Add two cups of sugar to the juice and cook on medium-high heat for 15 minutes or until the sugar has full dissolved.
- Once the sugar has fully dissolved, remove from the heat source. Cool the simple syrup and store in a Mason Jar. Once cooled, you are ready to use the syrup in cocktails, spritzers and more!
GRAPEFRUIT WITH GOLDEN RAISIN RUM SYRUP

Steps:
- Bring sugar and water to a boil in a very small saucepan, stirring until sugar is dissolved, then boil 1 minute. Stir together raisins, rum, and sugar syrup in a small bowl and let raisins plump, covered, at room temperature overnight.
- Cut peel from grapefruit, including all white pith, with a sharp knife and cut sections free from membranes. Put sections in a serving bowl and pour rum-raisin syrup over them.
- Serve sprinkled with almonds.

- In a small bowl combine raisins with rum and let stand 15 minutes. In a small heavy saucepan combine maple syrup, sugar, water, spices, and a pinch of salt and simmer, covered, and stirring occasionally, 10 minutes. Add raisin mixture and simmer, covered, 2 minutes. Discard cinnamon stick and cloves.
- Serve syrup warm. The syrup keeps, covered and chilled, 1 week.
