4 pink grapefruit
½ cup white sugar
1 tablespoon cornstarch
¾ cup grapefruit juice
1 (3 ounce) package strawberry flavored Jell-O®

Steps:

  • Peel grapefruit, removing all pith. Cut up into bite-size pieces. Drain in a strainer for 4 or more hours, collecting the juice. (This can be done the day before.)
  • Combine the sugar, cornstarch, and 3/4 cup juice in a small saucepan; if the collected juice does not measure 3/4 cup, top it off with water. Bring to a boil. Stir in strawberry gelatin. Cool slightly.
  • Spread grapefruit in the bottom of the baked shell, and pour gelatin over the fruit. Chill several hours or overnight.

Pastry for single-crust pie (9 inches)
1-1/3 cups sugar
1/3 cup cornstarch
2 cups pink grapefruit juice
3/4 cup water
3 large egg yolks, lightly beaten
2 tablespoons butter
1/2 teaspoon lemon extract
MERINGUE:
3 large egg whites, room temperature
1/4 teaspoon cream of tartar
6 tablespoons sugar

Steps:

  • On a floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°., Line pie crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edges are golden brown, 20-25 minutes. Remove foil and weights; bake until bottom is golden brown, about 4 minutes. Cool on a wire rack., Meanwhile, in a large saucepan, combine the sugar and cornstarch. Stir in grapefruit juice and water until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. Stir 1/2 cup of hot filling into egg yolks; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. Gently stir in butter and extract. Pour hot filling into crust. , In a large bowl, beat egg whites and cream of tartar on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved. Spread evenly over hot filling, sealing edges to crust. , Bake at 350° until the meringue is golden brown, 12-15 minutes. Cool on a wire rack for 1 hour. Refrigerate for at least 3 hours before serving. Store leftovers in the refrigerator.

1/2 cup grapefruit juice, divided
3 large red grapefruit
1 cup heavy whipping cream, whipped
1 pastry shell (9 inches), baked

  • In a heavy saucepan, combine the marshmallows and 1/4 cup grapefruit juice. Cook and stir over low heat until marshmallows are melted. Cool to room temperature., Peel the grapefruit and cut into sections (about 2-1/2 cups). Stir the grapefruit, whipped cream and remaining grapefruit juice into marshmallow mixture. Pour into crust. A Bonnie Beck and I were talking about how we love "Pucker Power" recipes and I was hunting for my key lime recipe when I ran across my ruby red recipe so I figured I would might as well add this too...I hope everyone enjoy this recipe...anyone out there that loves grapefruit as much as my family does will absolutely love...

4 large grapefruit, sectioned ruby red peeled
1 c cane sugar
2 Tbsp cornstarch
1 3/4 c grapefruit juice ruby red
1/8 tsp sea salt
1 pkg gelatin, raspberry (3-oz)
1 pie shell, baked (9-inch)
RECIPE FOR PIE SHELL ( THIS MAKE 2 CUT IN 1/2 AND FREEZE 1/2)
3 c all purpose flour
1 tsp sea salt
1 1/2 c butter, cracked
1 large egg, beaten
5+ Tbsp cold water (add more as needed)
1 Tbsp vinegar white distilled

Steps:

  • 1. Make Crust 2 hours ahead.......or night before I prefer night before....Combine flour and salt in large bowl, add cracked butter cut in with pastry cutter or knives, gradually working butter in till mixture resembles pebbles. This should take about 6 minutes.
  • 2. Lightly beat egg with fork, then add it to mixture next, add water in a Tbsp at a time working it in with your hands or a wooden spoon all the while, add in the vinegar and work in with spoon or hands..
  • 3. Work till just combined if dough is tacky add a little flour to it and work it through. Then remove half the dough from the bowl place in a large plastic freezer bag (do not seal) flatten it out slightly with your rolling pin. After you have flattened out where you want it you can put it in the freezer for later use. (this is a great recipe for these ready to go pie shells)
  • 4. Repeat the steps for the second one and put it in the frig over night or for 1-2 hour before you roll it out and bake in a Preheated oven of 400* 10-12 minutes. Set a side to cool
  • 5. The best part (what goes inside) Peel and section the ruby reds set a side. Combine sugar, cornstarch, juice, salt in a saucepan. Bring to a boil on medium heat cook till clear and thickened, stirring often. Remove from heat. Stir in the Gelatin. Cool until thickened. Spoon a small amount of the mixture into the pie shell. Top with ruby red. Cover with the remaining gelatin mixture. Any remaining ruby red use to decorate the top with if you like you can also decorate with a sprig of sweet mint. Let chill 4 hours or til set.

4 large egg whites at room temperature
1/4 teaspoon salt
1/4 teaspoon cream of tartar
1 cup sugar
1 cup sweetened flake coconut
For the filling
1 envelope (about 1 tablespoon) unflavored gelatin
3/4 cup strained fresh grapefruit juice
4 large egg yolks
1/2 cup sugar
8 ounces cream cheese, softened
1 cup well-chilled heavy cream
2 cups fresh grapefruit sections (cut from about 3 large grapefruit), cut into 1/2-inch pieces and drained well
fresh grapefruit sections for garnish if desired

Steps:

  • Make the shell:
  • In a bowl with an electric mixer beat the egg whites with the salt until they are foamy, beat in the cream of tartar, and beat the whites until they hold soft peaks. Beat in the sugar, a little at a time, beat the meringue for 5 to 7 minutes, or until it is stiff and glossy and the sugar is dissolved, and fold in the coconut. Drop heaping tablespoons of the meringue evenly around the edge of a well-butter 9-inch (1-quart) pie plate, spreading the meringue with the back of the spoon to form the side of the shell, and spread the remaining meringue evenly over the bottom of the pie plate. Bake the shell in the middle of a preheated 250°F. oven for 1 1/4 to 1 1/3 hours, or until it if firm and very pale golden, turn off the oven, and let the shell cool completely in the oven with the door ajar. (Once the shell is cooled completely, it may be left overnight in the oven with the door closed.)
  • Make the filling:
  • In a small bowl sprinkle the gelatin over 1/4 cup of the grapefruit juice and let it soften for 1 minute. In a small saucepan whisk together the egg yolks and the sugar, add the remaining 1/2 cup grapefruit juice, the gelatin mixture, and a pinch of salt, and cook the mixture over moderate heat, whisking, until it registers 160°F. on a candy thermometer. Transfer the yolk mixture to a metal bowl set in a larger bowl of ice and cold water and whisk it constantly until it is thickened to the consistency of raw egg white but is not set. Remove the smaller bowl from the bowl of ice and cold water and reserve the bowl of ice and cold water for later use. In another metal bowl with an electric mixer beat the cream cheese until it is light, fluffy, and smooth, scraping down the side, add the yolk mixture, a little at a time, beating, and beat the mixture until it is smooth and combined well. Set the bowl containing the cream cheese mixture in the reserved bowl of ice and cold water and whisk the cream cheese mixture until is thickened and forms a ribbon when the whisk is lifted. In a bowl beat the heavy cream until it holds stiff peaks and whisk about one fourth of it into the cream cheese mixture. Fold in the remaining whipped cream gently but thoroughly and fold in the grapefruit pieces gently.
  • Pour the filling into the shell, smoothing the top, and chill the pie, uncovered, for 4 hours, or until the filling is set completely. (If the pie is to be chilled for more than 4 hours, cover it with plastic wrap or wax paper.) Just before serving garnish the pie with the grapefruit sections.

  • Preheat oven to 450 degrees F (230 degrees C).
  • With a very sharp knife, cut a slice from the bottom and top of a grapefruit, cutting into the fruit. Stand the grapefruit up on a work surface, and slice off the peel and white pith in vertical slices, exposing the fruit segments (cut slightly into the fruit part). Use your knife to gently slice between the exposed white membranes, and loosen the grapefruit segments into a bowl. Pick out any seeds. Repeat with remaining grapefruit. 1 tablespoon butter
1/2 cup grapefruit juice

1 grapefruit, segments of
6 tablespoons sugar

Steps:

  • Preheat oven to 350°F.
  • In the top of a double boiler, mix together the cornstarch, sugar and salt; add 1¾ cup boiling water, stirring to blend.
  • Cook 15 minutes over simmering water, stirring until thick and smooth.
  • Beat yolks slightly; pour the cornstarch/sugar mixture into the yolks slowly, stirring constantly.
  • Return double boiler to the stove and cook 2 minutes longer.
  • Remove from stove and add butter, juice and peel, stirring until well blended; let cool, then pour into pie shell.
  • Arrange grapefruit segments, thick side out, around the edge of the pie on top of the filling.
  • To make the meringue, whip the egg whites until stiff peaks form, adding 6 Tbs of sugar gradually as you beat.
  • Pile the meringue on top of the filling, inside the circle of grapefruit segments.
  • Place in the oven 7-8 minutes until the meringue turns golden-brown.

1 pie shell, baked (i use a deep dish)
3 or 4 large ruby red grapefruit, peeled and sectioned
1 - 3 oz. pkg strawberry jello
1 1/3 c water
1 c sugar
2 tsp corn starch

Steps:

  • 1. Peel and section grapefruit. Be sure to remove all the white pith because it will make the pie bitter. I remove all the membrane from each section. Cut each section in half. Place sections in a colander over a bowl and let juice drain, but do NOT squeeze or mash.
  • 2. Heat water to boiling. Combine Jello, sugar and corn starch in small bowl. Pour boiling water in and mix until Jello and sugar is dissolved. Let cool to room temperature.
  • 3. Gently stir grapefruit sections into Jello mixture, being careful not to mash sections too much. You want them to stay plump and juicy! Place in refrigerator and chill until set.
  • 4. Serve plain or with whipped cream or ice cream.
  • 5. I have also made this pie using sugar-free Jello and Splenda. No one I served it to could tell the difference!

3 tablespoons sugar
1/8 teaspoon kosher salt
1 stick (8 tablespoons) unsalted butter, melted
1/4 cup water
1 packet unflavored gelatin
4 eggs, separated
1 cup sugar
1/2 cup fresh ruby grapefruit juice
2 teaspoons grapefruit zest
1/2 teaspoon kosher salt
1 grapefruit, zested in strips with a citrus zester
2 tablespoons sugar

Steps:

  • For the crust: Preheat the oven to 325 degrees F. Pulse the graham crackers in the work bowl of a food processor until finely ground, about 30 seconds; you should have about 1 1/2 cups of crumbs. Add the sugar and salt and pulse to combine. Add the melted butter and pulse until the mixture resembles wet sand.
  • Press the crumbs evenly into the bottom and up the sides of an 8-inch pie plate. Bake until the crust is lightly browned, 15 to 18 minutes. Allow to cool completely.
  • For the filling: Pour the water into a small bowl. Sprinkle the gelatin into the water. Let stand until the gelatin softens, about 15 minutes.
  • Set a small pot of water to boil. In a medium heatproof bowl, whisk together the egg yolks and 1/2 cup of the sugar. Add the grapefruit juice, grapefruit zest and salt. Place the bowl on the pot of boiling water to create a double boiler. Cook over medium heat, whisking constantly, until the mixture thickens slightly and registers 170 degrees F on an instant-read thermometer, about 5 minutes. Remove from the heat and add the gelatin mixture, whisking until the gelatin dissolves and the mixture is smooth, about 1 minute. Strain through a fine-mesh strainer into a large bowl; discard the solids remaining in the strainer. Set aside to cool, 30 to 40 minutes.
  • Once the filling has cooled, beat the egg whites with an electric mixer on medium-low speed until frothy, 2 to 3 minutes. Add 1/2 cup of the sugar, increase the speed to medium-high, and beat the egg whites until glossy and stiff peaks form, about 8 minutes.
  • Using a rubber spatula, gently fold the egg whites into the cooled egg yolk mixture in batches until fully blended and no streaks remain.
  • Pour the filling into the cooled crust, allowing the chiffon to mound slightly in the center. Refrigerate for at least 4 hours and up to 2 days before serving. Let stand at room temperature 20 minutes before serving.
  • Before serving, toss the strips of grapefruit zest in the sugar and arrange in the center of the pie.

  • Make crust:

  • In food processor, grind graham crackers into crumbs, about 1 minute. Add sugar, butter, and salt and pulse motor until mixture becomes fine crumbs, about 2 to 3 minutes. My mother-in-law gave me this recipe a while back. I don't know where she got it from, but it is a delicious and very sweet dessert. It is one of our favorites in our home around the Thanksgiving and Christmas holidays. We have some very good friends that have several acres of grapefruit, and they are always giving us grapefruits. We always share our pies with them. Keep in mind that the preparation and cooking time will vary.

1 cup sugar or 1 cup Splenda sugar substitute
1 3/4 cups water
1 pinch salt
2 tablespoons cornstarch
1 (3 ounce) package strawberry Jell-O gelatin dessert or 1 (3 ounce) package fat free sugar-free strawberry gelatin
3 -4 grapefruits (sectioned and drained)
1 (9 inch) pie crusts (need to bake)

Steps:

  • Mix first four ingredients in a saucepan.
  • Cook and stir until mixture is clear.
  • Add 1 package of Strawberry Jello and stir until thickened.
  • Remove from heat and allow mixture to cool for about 20 minutes.
  • Add grapefruit sections to mixture and stir.
  • Pour onto 9" baked pie shell.
  • Put in refrigerator until jello is set.
  • Serve with a dollop of cool whip.

January is the height of harvest for this wonderful citrus beauty. It's sweet, tart and has a rich coral color-hence the name. Barbara's family grew grapefruit in the valley of Texas for more than 40 years and she has served this pie to many important people.

4 - medium to large rio star grapefruit (or red grapefruit)
1 cup(s) sugar
1 3/4 cup(s) strained grapefruit juice (2-3 grapefruit)
2 tablespoon(s) cornstarch
1/8 teaspoon(s) salt
1 - (3-oz.) package wild strawberry gelatin
1 - 9-inch pie crust, baked & cooled
1 cup(s) whipping cream, whipped

Steps:

  • Peel and section grapefruit and place sections in a strainer over a bowl. Leave overnight in the refrigerator to drain well.
  • Cook sugar and next three ingredients over medium-high heat until it forms a thick, clear syrup, then add the gelatin and stir until it is dissolved.
  • Spoon a small amount of the gelatin mixture to cover the bottom of the baked pie crust (about 1/4-inch thick). Reserve the rest of the mixture.
  • Chill the pie for about an hour until the gelatin congeals.
  • When the gelatin congeals, place the drained grapefruit sections in the pie shell.
  • Pour the reserved gelatin mixture over the grapefruit sections.
  • Chill the pie again until the gelatin sets.
  • When ready top with whipped cream and Enjoy.
