This is the classic Long Island Iced Tea, containing just a hint of citrus. It is best made with top shelf liquors. Watch out, it is very strong, but tastes very good, so you may not realize all the alcohol you're consuming.

1 (1.5 fluid ounce) jigger vodka
1 (1.5 fluid ounce) jigger gin
1 (1.5 fluid ounce) jigger rum
1 (1.5 fluid ounce) jigger triple sec liqueur
1 teaspoon tequila
2 teaspoons orange juice
2 fluid ounces cola-flavored carbonated beverage
1 wedge lemon

Steps:

  • In a cocktail mixer full of ice, combine vodka, gin, rum, triple sec and tequila. Add orange juice and cola. Shake vigorously until frothy. Strain into a Collins glass filled with ice, and garnish with wedge of lemon.

½ fluid ounce vodka
½ fluid ounce rum
½ fluid ounce gin
½ fluid ounce tequila
½ fluid ounce triple sec (orange-flavored liqueur)
1 fluid ounce sweet and sour mix
1 fluid ounce cola, or to taste
1 lemon slice

Steps:

  • Fill a cocktail shaker with ice. Pour vodka, rum, gin, tequila, triple sec, and sour mix over ice; cover and shake. Pour cocktail into a Collins or hurricane glass; top with splash of cola for color. Garnish with a lemon slice.

As white light is the combination of all wavelengths of color visible to the human eye, so too is Long Island iced tea the rainbow of high-proof liquors mixed into a balanced cocktail. When done right, it's surprisingly bright and refreshing. A prism of vodka, gin, rum, tequila and triple sec, this batch variation - ideally served in a pitcher - is a cooling blitz of a drink, reminiscent of the best parts of a whiskey sour, or a hot summer's day. Fresh lemon and lime juice bring sourness and bitterness, and a splash of cola and a bit of maple syrup round things out.

2 cups ice cubes, plus more for serving
2 ounces vodka
2 ounces gin
2 ounces white rum
2 ounces blanco tequila
2 ounces triple sec
2 ounces maple syrup
2 ounces fresh lemon juice (from 1 large lemon)
1 1/2 ounces fresh lime juice (from 1 lime)
1/4 teaspoon kosher salt (Diamond Crystal), plus more to taste
8 ounces Coca-Cola
Lemon and lime slices, for garnish

Steps:

  • In a large pitcher, combine the ice, vodka, gin, rum, tequila, triple sec, maple syrup, lemon juice and lime juice. Add the salt, which accentuates all of the flavors. Stir with a wooden spoon until the pitcher feels cold to the touch and the ice has dissolved slightly, about 30 seconds. Top with the Coca-Cola.
  • To serve, pour the cocktail into individual glasses filled with fresh ice, and garnish with lemon and lime slices. Sprinkle with more salt, if you'd like.

2 cups ruby red grapefruit juice (squeezed from 2 grapefruits)
2 to 4 tablespoons honey
1 cinnamon stick
1/2 teaspoon whole allspice berries

Steps:

  • In a medium pot, combine juice, honey, cinnamon, allspice, and 1/2 cup water. Bring to a boil over high heat; strain and discard solids. Serve with a grapefruit segment or strip of zest.
