SLOW COOKER CHIPOTLE PORK

3 lbs pork shoulder or pork butt roast
2 cloves garlic, sliced thin
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon oregano
1 tablespoon ground cumin
2 teaspoons ground coriander
2 teaspoons chili powder
1/2 teaspoon black pepper
1/2 teaspoon onion powder
1 tablespoon of olive oil
2 tablespoons apple cider vinegar
1 cups peppers, sliced
1/2 cup onion, sliced
3 oz chipotle peppers in adobo sauce (half of 7oz can)
1 cup tomatoes, chopped
1-2 lime wedges

Steps:

  • Cut slits in the pork roasts and stuff the slices of garlic cloves in the holes. Do this with all the garlic slices all around the roast.
  • Mix all the dry spices (salt, pepper, onion powder, garlic powder, cumin, chili powder, oregano and ground coriander) and rub liberally into the pork roast.
  • Add the olive oil to a large pan and heat to medium high.
  • Brown the roast on all sides. About 2-3 minutes on each side. Then set aside.
  • To the slow cooker add your onion, bell peppers, chipotle peppers and apple cider vinegar and stir well.
  • Place the roast on top of the vegetables and cook for 6-8 hours until the meat can fall apart with a fork.
  • When down, shred the pork in the crock pot and mix well into the vegetables and sauce.
  • Serve with the limes so that everyone can sqeeze some lime juice over their dishes before eating.
  • Eat over rice or in tacos or burritos. Garnish with avocados, cilantro, sour cream, cheese or whatever you like.

The chipotle raspberry marinade is actually labeled in the grocery store as "Chipotle Raspberry Sauce" and is found in the marinade section! Recipezaar would not accept it listed in the ingredients unless listed as follows! I served with cornbread and homemade raspberry butter. Veggie on the side was steamed green beans. Hope you enjoy.

8 ounces dry onion soup mix
15 ounces raspberry chipotle sauce (either store bought or your own recipe)

Steps:

  • Place pork roast in crock pot.
  • Sprinkle roast with dry onion soup mix and pat soup mix into the pork roast.
  • Pour Chipotle Raspberry Sauce on top of roast.
  • Be sure to use the whole jar and coat the whole top and sides of roast.
  • I have a brand new fabulous crock pot so the timing may be different on yours: Set crock pot on low for 6-7 hours and on high for 3. I set mine the first time on high for 4 and was a little dry. I like my pork medium well though! So 3 hours on high worked for me.

2 onions, sliced
4 large garlic cloves, crushed
1 tablespoon vegetable oil
a 3 1/2- to 4-pound boneless pork loin, tied
1 tablespoon coriander seeds, crushed
3 grapefruit
4 1/2 tablespoons sugar
3/4 cup dry white wine
1 1/2 cups chicken broth
a beurre manié made by kneading together 3 tablespoons softened unsalted butter and 3 tablespoons all-purpose flour

Steps:

  • In a roasting pan toss the onions and the garlic with the oil, add the pork loin, and season it with salt and pepper. Rub the coriander seeds over the pork and roast the pork in the middle of a preheated 350°F. oven for 1 to 1 1/4 hours, or until a meat thermometer registers 155°F. to 160°F.
  • While the pork is roasting, remove 3 or 4 long strips of zest from 1 of the grapefruit with a vegetable peeler, scrape off as much of the white pith from the zest as possible, and cut enough of the zest into fine julienne strips to measure 1/4 cup. Cut away the zest, pith, and membranes from all 3 grapefruit with a serrated knife and, working over a bowl to catch the juice, cut the flesh into sections, reserving the juice. Transfer the sections to a sieve and let them drain.
  • In a small heavy saucepan combine 3 tablespoons of the sugar, the zest strips, and 1/2 cup of the reserved juice, reserving the remaining juice for another use. Bring the mixture to a boil, stirring until the sugar is dissolved, and boil it until it is thickened and turns a light caramel.
  • Transfer the pork to a cutting board and let it stand, covered loosely with foil, for 10 minutes. While the pork is standing, deglaze the roasting pan with the wine, boiling the mixture and scraping up the brown bits, until the wine is reduced almost completely and add the broth. Pour the deglazing mixture through a fine sieve into the pan containing zest mixture, pressing hard on the solids, and bring the gravy to a boil, stirring. Add the beurre manié, a little at a time, whisking until the gravy is smooth, simmer the gravy, whisking occasionally, for 2 minutes, and whisk in any juices that have accumulated on the cutting board. Season the gravy with salt and pepper and keep it warm.
  • Arrange the grapefruit sections in a shallow baking pan or gratin dish just large enough to hold them in one layer, sprinkle them with the remaining 1 1/2 tablespoons sugar, and broil them under a preheated broiler about 2 to 3 inches from the heat for 3 to 5 minutes, or until they are just golden. Discard the string from the pork, cut the pork into 1/2-inch-thick slices, and serve it with the gravy and the grapefruit sections.

5 -9 lbs boston butt (bone in)
1 cup favorite your favorite barbecue rub
1/2 cup kosher salt
1 (10 -12 ounce) bottle raspberry chipotle sauce or 1 (10 -12 ounce) bottle glaze

Steps:

  • THE NIGHT BEFORE -- OR A FEW DAYS AHEAD --
  • Mix kosher salt with dry rub (if your dry rub already has salt in it, omit this step).
  • Rub roast generously on all sides with rub mixture.
  • Tightly wrap seasoned roast in plastic wrap and refrigerate overnight or for 24-48 hours.
  • The morning that you plan to cook --
  • Let roast stand at room temperature for about 20 minutes.
  • COOKING THE ROAST.
  • Use apple wood chips or Adler wood chips that have been soaked in water for approx 20 minutes to provide a good smoke for the roast.
  • Smoke on indirect heat for approx one hour.
  • Remove roast from grill/smoker and wrap in double wrap in foil fat side up and place in dish or roasting pan at least 3 inches deep.
  • Continue cooking roast in a 225-240 degree oven for 7 to 9 hours or until bone pulls out with ease.
  • Open the foil and drain most but not all of the juice.
  • Remove the top layer of fat from the roast.
  • Using large forks, break the roast apart (similar to shredding).
  • Pour chipotle sauce over roast and work sauce into meat ( be sure to leave a nice layer of sauce on top).
  • Increase oven to 300 degrees.
  • Keeping foil rolled back, return glazed roast to oven and allow roast to caramelize -- 30-45 minutes.
  • Remove roast from oven and serve.

10 cloves garlic
2 scallions, sliced (white and green parts)
2 tablespoons coriander seeds
1 chipotle chile in adobo plus 2 tablespoons adobo sauce
2 teaspoons cumin seeds
Kosher salt and freshly ground pepper
1 (6 to 8-pound) Boston butt pork shoulder, bone-in
4 wide strips fresh lime zest
1 cup fresh lime juice
1 cup fresh orange juice
3/4 cup extra-virgin olive oil
2 cinnamon sticks, broken up

Steps:

  • 1. Pulse the garlic, scallions, coriander, chipotle chile, cumin, 2 tablespoons salt, and 1 teaspoon pepper in a food processor or mini-chopper to make a thick paste. If the butcher didn't trim the fat cap on the pork shoulder, trim off all but a thin layer of fat. Make deep incisions with a paring knife, at about 2-inch intervals, all over the meat. Rub the garlic and spice mixture into and all over the meat.
  • 2. Combine the lime zest and juice, orange juice, adobo sauce, olive oil, and cinnamon in a nonreactive stainless steel or glass bowl. Add the meat, cover tightly with plastic wrap, making sure the meat is submerged. Refrigerate for at least 8 hours or up 2 days. Bring to room temperature about 1 hour before roasting.
  • 3. Preheat the oven to 450 degrees F. Put the pork, fat-side up, in a large Dutch oven. Roast the meat, uncovered, for 30 minutes. Add the marinade to the pot and cover with the lid. Lower the temperature to 350 degrees F and roast for 2 hours more. Uncover and continue to cook, basting occasionally, until an instant read thermometer inserted into the meat registers 190 degrees F and the meat is a rich burnished brown, 1 1/2 to 2 hours more. Set aside on a cutting board to rest for 20 minutes before slicing.
  • 4. For the sauce: Strain the pan drippings through a fine mesh sieve into a gravy separator and discard all excess fat. In a small saucepan, mix the pan drippings with 1/2 cup water and bring to a vigorous boil. Slice the meat and serve with the pan drippings.

1 can (8 oz) tomato sauce
1 can (14.5 oz) diced tomatoes, undrained
1 canned chipotle chile in adobo sauce, finely chopped (about 1/2 tablespoon)
2 tablespoons water
2 tablespoons cornstarch

Steps:

  • Spray 5- to 6-quart slow cooker with cooking spray. In large bowl, mix chili powder, salt, garlic powder and cumin. Add potatoes, sweet potatoes and onion to bowl; stir to coat. Place vegetables in slow cooker.
  • Remove netting from pork. Rub oil over pork; roll in spices in bowl to cover. Place pork over vegetables. Pour tomato sauce, tomatoes and chopped chile over pork and vegetables.
  • Cover; cook on Low heat setting 6 to 8 hours.
  • Remove pork and vegetables from cooker; cover to keep warm. Pour sauce from cooker into 3-quart saucepan. In small bowl, mix water and cornstarch; stir into sauce. Cook over high heat 5 to 10 minutes, stirring frequently, until thickened. Serve sauce with pork and vegetables.

1 tablespoon(s) chopped chipolte pepper in adobo sauce, seeds removed

Steps:

  • Place roast in a large bowl. Mix remaining ingredients in small bowl and pour over roast. Marinate in fridge for 30 minutes. Turn over and marinate for additional 30 minutes.
  • Preheat oven to 350 and place roast in a roasting dish with a lid. Cover and bake for 2 hours. Reduce heat to 250, turn roast over, and continue cooking for 1 hour, covered.
  • Remove roast from oven and transfer to serving platter. Squeeze juice from 1 section of grapefruit over roast. Allow to settle for 10 minutes before cutting. Garnish with remaining sections of grapefruit.
