I had grapefruits handy, so I used the zest and juice for this lovely quick bread. It's got a nice little tang and a tender crumb. -Lisa Moriarty, Wilton, New Hampshire

Number Of Ingredients 14

1 cup butter, softened
1-2/3 cups sugar, divided
3 large eggs, room temperature
3/4 cup vanilla yogurt
3 tablespoons poppy seeds
2 tablespoons grated grapefruit zest
1-1/2 teaspoons vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup grapefruit juice
GLAZE:
1 cup confectioners' sugar
2 tablespoons grapefruit juice

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and 1-1/3 cups sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in yogurt, poppy seeds, grapefruit zest and vanilla. In another bowl, whisk flour, baking soda and salt; gradually beat into creamed mixture., Transfer to a greased 9x5-in. loaf pan. Bake until a toothpick inserted in center comes out clean, 55-65 minutes. Meanwhile, in a small bowl, mix grapefruit juice and remaining sugar., Remove bread from oven. Immediately poke holes in bread with a fork; slowly pour juice mixture over bread. Cool in pan 10 minutes before removing to a wire rack to cool completely., In a small bowl, mix glaze ingredients; drizzle over bread.

3 cups all-purpose flour
½ teaspoon salt
4 teaspoons baking powder
¾ teaspoon baking soda
⅔ cup honey
¼ cup margarine, softened
1 ⅔ cups rolled oats
1 egg
1 ¼ cups grapefruit juice
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Sift together flour, salt, baking powder and soda into a large mixing bowl.
  • In a medium bowl, mix honey together with butter or margarine until creamy. Add to flour mixture along with the oats, egg, grapefruit juice and walnuts. Stir together until smooth and pour into a lightly greased 9x5 inch loaf pan.
  • Bake at 350 degrees F (175 degrees C) for 1 hour or until a toothpick inserted into the center comes out clean.

1/2 cup butter or 1/2 cup margarine
3/4 cup sugar
2 eggs
1 3/4 cups flour
1/4 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 tablespoon grapefruit, rind of, grated
1/2 cup milk
6 tablespoons fresh grapefruit juice
1/2 cup confectioners' sugar

Steps:

  • Beat butter and sugar until fluffy. beat in eggs.
  • Sift flour with salt, soda and baking powder. Add the batter alternately with milk. Add the grated rind and 4 tablespoons of the juice.
  • Pour into a greased loaf pan and bake for 45 minutes or until loaf tests clean.
  • For the glaze, combine the remaining 2 tablespoons grapefruit juice with powdered sugar. Remove bread from pan and poke holes in it. Pour the glaze over it. Let set, then wrap in foil or plastic wrap and let stand for a day for flavors to mellow.

3/4 cup pecans (3 oz)
2 cups whole wheat flour
3/4 cup sugar
2 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon baking soda
2 large eggs
6 ounces nonfat vanilla yogurt
1/4 cup milk
3 tablespoons canola oil
2 grapefruits, supremed and chopped with juices reserved
1 tablespoon grapefruit juice
1 tablespoon grapefruit zest
1/2 cup chopped crystallized ginger
2/3 cup confectioners' sugar

Steps:

  • Preheat oven to 350. Coat a 9x5" loaf pan with cooking spray. Spread pecans on baking sheet and toast 6-7 minutes. Cool slightly and chop.
  • Whisk together flour, sugar, baking powder, salt, and baking soda in large bowl, set aside.
  • Beat eggs in a separate bowl. Whisk yogurt, milk and canola oil into eggs. Stir in grapefruit pieces and zest.
  • Fold egg mixture into flour mixture until just moistened and no lumps remain. Fold in crystallized ginger and chopped pecans. Transfer to prepared loaf pan and bake 55-60 minutes, or until deep brown around edges and toothpick inserted in center comes out clean. Cool 1 hour on wire rack. Remove from pan and cool completely.
  • To make glaze: whisk together confectioner's sugar and 1 T grapefruit juice in a small bowl. Stir in additional 1/2 t juice to achieve thick, but pourable consistency. Add another 1/2 t juice drop by drop, if necessary.
  • Place foil beneath wire rack to catch drips. Turn loaf upside down so that flat side is up. Drizzle glaze over loaf. Allow glaze to set before slicing.

1 cup butter-flavored shortening
2 cups sugar
4 large eggs, room temperature
3 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
1 cup 2% milk
1 cup finely chopped walnuts
2 tablespoons grated grapefruit zest
1/2 cup sugar
1/2 cup grapefruit juice

Steps:

  • Preheat oven to 350°. Grease and flour two 9x5-in. loaf pans., In a large bowl, beat shortening and sugar until crumbly. Add eggs, 1 at a time, beating well after each addition. In another bowl, whisk flour, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition. Fold in walnuts and zest., Transfer to prepared pans. Bake until a toothpick inserted in center comes out clean, 60-65 minutes. Meanwhile, whisk glaze ingredients. Remove pans from oven; immediately brush with glaze. Cool in pan 10 minutes before removing to a wire rack to cool completely. Freeze option: Securely wrap cooled loaves in foil, then freeze. To use, thaw at room temperature.
