2 teaspoons curry powder (preferably Madras-style)
1/4 cup light mayonnaise
1/4 cup plain nonfat yogurt
2 teaspoons mango chutney
1 teaspoon minced peeled fresh ginger
1/2 teaspoon grated orange peel
3 cups 1/2-inch pieces cooked skinless boneless chicken breast
1 cup halved seedless red grapes
1/2 cup thinly sliced green onions
1/3 cup walnuts, toasted, coarsely chopped
4 large curly lettuce leaves
4 small clusters seedless red grapes

Steps:

  • Stir curry powder in small skillet over medium heat until fragrant, about 30 seconds. Transfer to medium bowl. Add light mayonnaise, yogurt, mango chutney, minced ginger, and grated orange peel. Whisk to blend. Stir in chicken, grapes, green onions, and chopped walnuts. Season salad to taste with salt and pepper. (Can be made 6 hours ahead. Cover and refrigerate.)
  • Place lettuce leaf on each of 4 plates. Divide salad among leaves. Garnish each plate with grape cluster.

5 cups baby romaine leaves or 5 cups mesclun
1/2 cup red seedless grapes, halved
3 1/2 ounces quality gorgonzola, crumbled
1/2 cup candied walnuts or 1/2 cup candied pecans, halves (may purchase or make Candied Walnuts)
1/3 cup fresh orange juice
2 tablespoons lemon juice
2 tablespoons extra virgin olive oil
1 tablespoon aged balsamic vinegar
1 tablespoon fresh basil, minced
1 tablespoon brown sugar
1 clove garlic, minced
1 teaspoon Dijon mustard
1/4 teaspoon kosher salt
1/8 teaspoon fresh ground black pepper

Steps:

  • Place baby romaine leaves in a salad bowl and top with sliced grapes, candied nuts and crumbled gorgonzola (if making your own candied nuts do this step first so they have a moment to cool).

2 1/2 c grilled chicken breasts, cut into bite sized chunks
1/3-1/2 c mayonnaise
1/4 c dijon mustard
1 1/2 ribs of heart of celery stalk, diced
1 c seedless red grapes, halved
1/2 c walnut halves, rough chopped
2 1/2 tsp dried thyme
salt and pepper to taste
6-8 lettuce leaves
3-4 slices of avocado per sandwich

Steps:

  • 1. Once the chicken has been grilled and chopped. In a medium mixing bowl, add all ingredients and mix well, making sure that all the chicken is coated. Let set in refrigerator until well chilled. Serve on croissant with lettuce and avocado.

30 purple seedless grapes (give or take)
1/2 purple onion

Steps:

  • Boil chicken unitl done.
  • While Chicken is cooking: Mince Purple Onion. Cube Apples. Cut the grapes in half.
  • Once the Chicken is done, chop into cubes.
  • Pour ALL ingredients into a large bowl, including the bag of Nuts & Dressing.
  • Mix well until all is coated.
  • Chill before serving.

1 teaspoon vanilla extract
1/2 cup sugar
4 lbs red grapes (washed and picked off stem)
1 tablespoon butter (for topping)
1 cup walnuts (for topping)
1/2 cup brown sugar (for topping)

Steps:

  • For best results, use a mixer to mix cream cheese, sour cream, vanilla extract, and sugar. You can mix by hand, too, but it won't be as smooth.
  • Fold grapes into creamy mixture.
  • In medium saucepan, melt butter. Add walnuts to lightly brown to taste.

This is my version of a waldorf salad. No limit to the fruit combinations here. My favorite add in's are the red and black seedless grapes and the fresh whole walnuts. Enjoy!

6 red & delicious apples, chopped & cored (leave peels on)
1 tsp lemon juice
2 c walnuts whole, more if desired (can cut up if desired)
1 c raisins
3 stalk(s) celery
1 c red seedless grapes, halved
1 c black seedless grapes, halved
DRESSING
2 c real mayonnaise
1 Tbsp pineapple juice
1 Tbsp orange juice
1 Tbsp white sugar
1 tsp cinnamon, ground
1/2 lemon (add to bowl of apples to keep them from browning)
1 c cool whip

Steps:

  • 1. Core and chop the apples into large bite size pieces. The red peels make such a pretty salad. As you cut up the apples place them in a large bowl of cold water with half a lemon to keep them from browning.
  • 2. Chop up your celery and halve your red and black grapes set aside. Dressing-In a medium bowl combine mayonnaise, pineapple juice, orange juice, sugar and cinnamon and cool whip.
  • 3. Drain apples, Add your walnuts, raisins, celery, and red & black grapes. Pour dressing and blend thoroughly. Sample testing is a must! 8)
