SPICY AVOCADO AND GRAPE TOMATO SALAD/SALSA

Spicy Avocado and Grape Tomato Salad/Salsa image

An addictive yet healthy dish great for BBQs and picnics. You can use it as a dip -- I can eat it with a spoon by itself. You can add a cup or two of frozen corn too if it's a large crowd (more volume without so many avocados) or if you want to tone down the spice.

Provided by londongavchick

Categories     Vegetable

Time 1h35m

Yield 8-10 serving(s)

Number Of Ingredients 15

2 avocados, cubed
2 pints grape tomatoes, halved
1 red bell pepper, chopped finely
1 chipotle chile in adobo
1/2 cup chopped cilantro
1/2 red onion, sliced thinly
2 garlic cloves
2 limes, juice of
1 teaspoon lime zest
1 tablespoon honey or 1 tablespoon agave nectar
1/2 teaspoon cumin
red wine vinegar, splash of (optional)
Worcestershire sauce, spash of (optional)
cayenne pepper (optional)
salt and pepper

Steps:

  • In a large mixing bowl, combine chopped tomatoes, bell pepper, onion, cilantro and lime zest.
  • In a blender or food processer, combine chipotle in adobo, garlic, juice of one lime, agave, cumin, vinegar, Worcestershire, cayenne and salt. Pour liquid over veggies and season with salt and pepper to taste. Cover and chill for an hour.
  • Dice avocados, toss with lime juice from second lime and gently stir into chilled mixture. Add additional cayenne for heat and salt and pepper to taste. Avocados brown a bit after a day but the flavors continue to develop the longer it marinates.

Grilled Tuna Steaks with Grape and Stuffed Olive Salsa image

The olives reflect nicely the saltiness of capers without being overpowering, while the celery added the freshness of parsley with a subtle crunch. The small onion and celery work because I use a slicer to make them paper-thin.

FRESH GRAPE SALSA

Fresh Grape Salsa image

This salsa is wonderful - sweet, sour, and a little spicy. We usually enjoy it with tortilla chips, but it can also be used as an accompaniment to fish or chicken dishes like other fruit-based salsas. It can be made with any color of seedless grapes, but red grapes are especially pretty with the green onions, chilies and cilantro.

HALIBUT WITH ROASTED GRAPE TOMATO SALSA

Halibut With Roasted Grape Tomato Salsa image

Being such a mild fish, halibut needs something to make it interesting! This recipe is much healthier than coating the fish with batter & deep frying. The juices are so good on a side of plain steamed rice. You can substitute with other types of fish or different kinds of tomatoes - just adjust the cooking times. If pearl onions aren't available, use a chopped red onion.
