1 cup sour cream
1/3 cup sugar
2 teaspoons vanilla extract
2 pounds seedless red grapes

Steps:

  • In a large bowl, beat the cream cheese, sour cream, sugar and vanilla until blended. Add grapes and toss to coat. , Transfer to a serving bowl. Cover and refrigerate until serving. Sprinkle with brown sugar and pecans just before serving.

2 pounds seedless green grapes
2 pounds seedless purple grapes
One 8-ounce package cream cheese, room temperature
One 8-ounce container sour cream
1/2 cup granulated sugar
1 teaspoon vanilla extract
1/2 cup brown sugar, firmly packed
1/2 cup pecans, finely chopped

Steps:

  • Wash the grapes and dry thoroughly with paper towels. Put the dry grapes in a 9-by-13-inch baking dish. In a bowl, combine the cream cheese, sour cream, granulated sugar and vanilla. Mix well using an electric mixer. Pour this mixture over the grapes and toss together until all the grapes are coated. Chill in the refrigerator.
  • Just before serving, sprinkle with the brown sugar and pecans.

4 slices bacon, coarsely chopped
1 tablespoon melted butter

Steps:

  • In a large, dry skillet over medium-high heat, toast cashews until golden brown, about 5 minutes. Remove cashews to a dish to cool slightly.
  • Return skillet to medium-high heat, cook bacon strips until crisp on both sides, about 7 minutes. Remove bacon with a slotted spoon, and soak up grease with a paper towel. Coarsely chop bacon, and set aside.

1 (7 ounce) jar marshmallow creme
1 (6 ounce) package slivered almonds

  • Wash grapes in a colander under running water, and remove all stems. Place in a large bowl.
  • In a separate bowl, stir together the cream cheese and marshmallow creme until smooth and creamy. Pour the mixture over the grapes. Using a rubber spatula or large serving spoon, fold the mixture into the grapes until well coated. Fold in the almonds.

1 tablespoon whole grain mustard

3 Fresno chiles
Canola oil
Salt and freshly ground black pepper
2 cups green seedless grapes, roughly chopped
2 cups red seedless grapes, roughly chopped
2 to 3 tablespoons chardonnay vinegar
2 to 3 tablespoons extra-virgin olive oil
3/4 cup apricot jam
3 tablespoons chardonnay vinegar
4 (6-ounce) boneless, skinless chicken breasts, pounded thin
Canola oil
Salt and freshly ground black pepper
1/4 cup roughly chopped fresh thyme
1 bunch watercress, for serving
1/2 cup sliced skin-on almonds, lightly toasted, for serving

Steps:

  • For the vinaigrette: Whisk the vinegar, the mustards and salt and pepper, to taste, in a bowl. Slowly whisk in about the olive oil and until emulsified. Taste; whisk in a few more tablespoons olive oil, if desired.
  • For the grape salad: Prepare the grill for direct grilling.
  • Brush the chiles with oil and season with salt and pepper. Grill until charred on all sides. Remove to a bowl, cover and let steam for 15 minutes. Remove the skins and coarsely chop. Transfer to a bowl and add the grapes, chardonnay vinegar and olive oil. Season with salt and pepper.
  • For the chicken: Whisk together the apricot jam and vinegar. Season with salt and 1/4 teaspoon black pepper.
  • Brush the chicken on both sides with oil and sprinkle with salt and pepper. Grill until the first side is golden brown, about 2 1/2 minutes. Turn, brush with the glaze and sprinkle on the thyme. Cook until just cooked through, another 2 to 3 minutes. Remove to a serving platter.
  • To serve, top with the grape salad, then the watercress and finally the almonds. Drizzle with the vinaigrette.

2 heads broccoli, chopped into florets
1/2 red onion, sliced thick (1/4-inch-ish)
2 tablespoons olive oil
Kosher salt
3/4 cup golden raisins
6 tablespoons sherry vinegar
2 cups red seedless grapes, quartered
1 cup chopped celery
1 cup sliced almonds, toasted
1/2 cup mayonnaise
2 tablespoons whole milk
1 tablespoon sugar
1 tablespoon white wine vinegar
Kosher salt and freshly ground black pepper

Steps:

  • For the salad: Preheat the oven to 425 degrees F.
  • Toss the broccoli florets and red onion with the olive oil and a couple pinches of salt and spread out on a sheet pan. Roast until browned and crisp, 18 to 22 minutes.
  • Meanwhile, combine the raisins and sherry vinegar in a small saucepan and bring to a simmer. Remove from the heat and allow the raisins to plump for 10 to 15 minutes.
  • For the dressing: Combine the mayo, milk, sugar, vinegar, a pinch of salt and a bunch of black pepper in a large bowl.
  • For the salad: Add the broccoli mixture to the dressing along with the grapes and celery. Drain the raisins, then add those. Fold everything together until combined, then taste and adjust seasoning. If not serving right away, cover and refrigerate. Top with the almonds right before serving.

SUMMER CASHEW CHICKEN GRAPE PASTA SALAD

On many hot summer days, I can't face eating a hot meal. This salad makes a very satisfying meal without overheating the house or me! If I can't stomach the thought of cooking chicken myself for fear of heating up the house on a hot summer day, I just pick up a rotisserie chicken from my local grocer or I pick up grilled cooked chicken from Costco. With pre-cooked chicken, this recipe couldn't be easier to prepare! I've served this many times to rave reviews. I got this recipe from my mother-in-law. It's a dish she picks up from her local deli on a regular basis. If you make it at home, it's much cheaper than the deli!

1 lb cooked chicken (poached, grilled, rotisserie, doesn't matter, just cooked)
1 lb pasta (macaroni, rigatoni, use your favorite, just not spaghett)
1/2 lb green seedless grape, washed and cut in half
1/2 lb red seedless grapes, washed and cut in half
1/2 teaspoon Lawry's Seasoned Salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
2 cups mayonnaise (I use Hellman's Light Mayonnaise)
1 (9 1/4 ounce) can cashew halves, and pieces (I buy Planter's salted)
2 tablespoons milk (optional, also may want to add more depending on how long the salad has been in the refrigerator)

Steps:

  • Boil 1 lb. of pasta - al dente - according to package directions (I use rigatoni). Drain after cooking and let cool.
  • While the pasta is boiling, wash and halve the grapes.
  • Dice the cooked chicken into bite sized pieces.
  • In a large bowl or serving platter, combine the cooled, drained pasta with the grapes and diced chicken. Stir in the mayonnaise. I start with one cup of mayo and add more as needed. Really, just add as much as you personally like - it may be more or less than 2 cups.
  • Stir in the Lawry's seasoning salt, onion powder and garlic powder. Again, add to your liking. You may want more or less than 1/2 teaspoon of any of these - - it's your choice, go with what you like. Frequent sampling at this point will help you decide what your preference will be so grab a fork and start sampling!
  • If the salad is too thick and rich for your liking, stir in a couple tablespoons milk to thin it out. This part is optional.
  • This salad is always much better the next day after the flavors have had a chance to meld. This is when I usually add milk to loosen it up a bit.
  • Before serving, plate or dish up the salad and sprinkle cashew pieces on top of individual servings. DO NOT put the cashew pieces on the entire salad and refrigerate - - this will cause the cashew pieces to become soft and rubbery and nobody wants that! I just set the can of cashews on the table and let guests help themselves.
  • Sit back and enjoy your sweat free cold summer salad!

1 medium red apple, chopped
1 medium green apple, chopped

POPPY SEED DRESSING:
1 cup vegetable oil
3/4 cup sugar
1/3 cup cider vinegar
2 tablespoons poppy seeds
1-1/2 tablespoons lemon juice

Steps:

  • In a large bowl, combine the broccoli, apples, grapes, raisins, pecans and onion. In a jar with a tight-fitting lid, combine the dressing ingredients; shake until sugar is dissolved. Pour over salad and toss to coat. Cover and refrigerate for at least 1 hour before serving.

I got this recipe from one of my close friends. She made this for one of our cookouts at Mineral Lake and everyone just fell in love with it. We all had to have the recipe and so I wanted to share it with everyone too. Noone would think that grapes would go with broccoli but it sure does. The dressing really sets off the salad. Hope you enjoy it as much as we do.

3 lbs fresh broccoli
1 red onion, chopped
1 lb bacon, cooked and chopped
1/4 cup sunflower seeds
1/2 cup raisins
1/2 lb green grape, sliced in half
1/2 lb red grapes, sliced in half
1 cup mayonnaise
1/2 cup sugar
2 tablespoons apple cider vinegar

Steps:

  • Mix together broccoli,red onion,green and red grapes and rasins and set aside.
  • Mix together in a separate bowl mayonnaise,sugar and apple cider vinegar.
  • Add bacon and sunflower seeds just before serving.
  • Than add the dressing mix and stir to coat salad well.
  • NOTE: You may want to make two batches of the salad dressing depending on how much you like over your salads.
  • Chill the lefted overs if you have any lefted.

1/2 pound seedless red or purple grapes
1 tablespoon minced shallot
1 tablespoon (or more) Sherry vinegar
1/4 teaspoon kosher salt plus more for seasoning
1/4 cup extra-virgin olive oil
1 tablespoon saba or aged balsamic vinegar plus more for drizzling
Freshly ground black pepper
1/2 pound arugula (about 8 cups)
1/4 pound Roncal, Manchego, or Pecorino cheese, shaved with a peeler
3/4 cup salted, roasted Marcona almonds, coarsely chopped
Ingredient info: Saba is available at specialty foods stores and ilmercatoitaliano.net. Marcona almonds can be found at natural and specialty foods stores and latienda.com.

Steps:

  • Finely chop 7 grapes; transfer to a small bowl. Cut remaining grapes in half; transfer to another small bowl and set aside. Using a fork, mash chopped grapes in bowl into a purée. Stir in shallot, 1 tablespoon Sherry vinegar, and 1/4 teaspoon salt and let sit for 5 minutes. Whisk in oil and 1 tablespoon saba. Season vinaigrette to taste with salt, pepper, and more Sherry vinegar, if desired. DO AHEAD: Vinaigrette and halved grapes can be prepared 8 hours ahead. Cover and chill vinaigrette and grapes separately. Bring vinaigrette to room temperature and rewhisk before continuing.
  • Combine arugula and halved grapes in a large bowl; drizzle with vinaigrette and season with salt and pepper. Toss salad to coat. Arrange salad on chilled dinner plates, dividing evenly. Scatter cheese and almonds over. Drizzle salads with more saba.
