FRESH BERRY TERRINE



Fresh Berry Terrine image

This fresh berry terrine with mixed berries suspended in white grape jell-o is the perfect light summer dessert.

Number Of Ingredients 4

1¼ pound mixed berries, such as blueberries, raspberries, blackberries and strawberries (cut the strawberries in half)
2 cups white grape juice, best quality
2 (¼-oz) packets unflavored gelatin
3 tablespoons sugar

Steps:

  • Place the berries in an 8x4-inch loaf pan. Distribute them around evenly.
  • Pour ½ cup of the grape juice in a large bowl. Sprinkle the gelatin in a thin, even layer over top (no need to stir) and let sit for 5 minutes. The powder will absorb into the juice and become very thick.
  • Meanwhile, bring the remaining 1½ cups juice and the sugar to a boil in a small saucepan; whisk until the sugar is dissolved. Pour the mixture over the thickened gelatin and whisk to combine.
  • Carefully pour the warm gelatin mixture over the berries. Chill in the refrigerator for 4 to 5 hours, or until very firm.
  • To unmold, quickly run hot water over the sides of the pan (tilting it so that the inside of the pan doesn't get wet). Invert an oblong platter over the pan and flip over. The terrine should slide right out; if it doesn't, try running a blunt knife along the edges of the pan to loosen, or run the pan under hot water briefly again. Blot any excess liquid on the platter with a paper towel. Refrigerate the terrine until ready to serve. Cut into 1-inch slices with a sharp knife.
  • Make Ahead: The terrine can be made up to three days ahead of time. Once set, cover the loaf pan with plastic wrap and store in the refrigerator. Unmold before serving.

This is a recipe I discovered about 25 years ago when grape gelatin was hard to find! It's a terrific side dish or a delicious dessert. It's very rich in flavor and can be made ahead of time. Also good with cherry gelatin and cherry pie filling.

2 (3 ounce) packages grape flavored Jell-O® mix
2 cups boiling water
1 (8 ounce) can crushed pineapple, undrained
1 (21 ounce) can blueberry pie filling
1 (8 ounce) package cream cheese, softened
1 cup sour cream
½ cup white sugar
1 teaspoon vanilla extract

Steps:

  • In a large bowl, mix together gelatin powder, boiling water, pineapple and pie filling. Pour into a mold, or glass baking dish, and refrigerate until set, at least 2 hours.
  • In a medium bowl, mix together the cream cheese, sour cream, sugar and vanilla until smooth. Spread over the top of the gelatin. If using a mold, unmold the gelatin before applying topping.

1 envelope (1/4 ounce) unflavored gelatin
1/4 cup cold water
1 cup white grape juice
2 cups fresh blueberries, picked over and rinsed

Steps:

  • In a large bowl, sprinkle 1 envelope unflavored gelatin over cold water; let stand until softened, about 5 minutes.
  • In a small saucepan, bring 1/4 cup water to a boil over medium-high. Pour over gelatin mixture; stir in grap juice.
  • Divide blueberries evenly among four 6-ounce serving glasses; pour in gelatin mixture, pressing blueberries to submerge them completely.
  • Refrigerate until set, at least 1 hour (and up to 5 days, covered).

2 packages (1/4 ounce each) unflavored gelatin
2 pounds red seedless grapes (about 5 1/2 cups), plus more, halved, for garnish
1/2 cup sugar
2/3 cup sour cream
2 tablespoons honey

Steps:

  • In a small bowl, sprinkle gelatin over 1/2 cup cold water; let soften.
  • Meanwhile, place grapes, sugar, and 1 cup water in a medium saucepan. Bring to a boil; reduce heat, and simmer, mashing occasionally with a spoon or potato masher, until grape skins are loosened, 10 to 15 minutes. Stir in softened gelatin until dissolved.
  • Strain mixture through a fine-mesh sieve, pressing to extract as much liquid as possible (add water if necessary to yield 3 cups); discard solids. Divide mixture evenly among four serving glasses; refrigerate until set, at least 2 hours.
  • In a small bowl, stir together sour cream and honey; spoon over gelatins, dividing evenly, and spread gently to edges. Serve immediately or chill up to 2 days. Just before serving, garnish with halved grapes.

GRAPE JUICE GELATIN

1/2 cup Concord grape juice, such as Welch's
3 1/2 cups white grape juice
2 packets powdered unflavored gelatin
1/4 cup sugar

Steps:

  • Combine grape juices. Pour 1 cup combined juice into another bowl; sprinkle gelatin over. Let stand to soften, 5 minutes.
  • Bring sugar and 1 cup juice to a boil over medium-high heat, stirring to dissolve. Add to gelatin mixture; whisk to dissolve gelatin.
  • Stir remaining 2 cups juice into gelatin mixture. Pour into a 9-by-13-inch Pyrex pan, cover, and refrigerate to set, 2 hours.
  • When ready to serve, cut gelatin into 1-inch cubes, and serve in tall glasses.
