1/2 pound seedless red or purple grapes
1 tablespoon minced shallot
1 tablespoon (or more) Sherry vinegar
1/4 teaspoon kosher salt plus more for seasoning
1/4 cup extra-virgin olive oil
1 tablespoon saba or aged balsamic vinegar plus more for drizzling
Freshly ground black pepper
1/2 pound arugula (about 8 cups)
1/4 pound Roncal, Manchego, or Pecorino cheese, shaved with a peeler
3/4 cup salted, roasted Marcona almonds, coarsely chopped

Steps:

  • Finely chop 7 grapes; transfer to a small bowl. Cut remaining grapes in half; transfer to another small bowl and set aside. Using a fork, mash chopped grapes in bowl into a purée. Stir in shallot, 1 tablespoon Sherry vinegar, and 1/4 teaspoon salt and let sit for 5 minutes. Whisk in oil and 1 tablespoon saba. Season vinaigrette to taste with salt, pepper, and more Sherry vinegar, if desired. DO AHEAD: Vinaigrette and halved grapes can be prepared 8 hours ahead. Cover and chill vinaigrette and grapes separately. Bring vinaigrette to room temperature and rewhisk before continuing.
  • Combine arugula and halved grapes in a large bowl; drizzle with vinaigrette and season with salt and pepper. Toss salad to coat. Arrange salad on chilled dinner plates, dividing evenly. Scatter cheese and almonds over. Drizzle salads with more saba.

1 medium shallot, finely chopped
2 tablespoons balsamic vinegar
2 teaspoons chopped fresh thyme
Kosher salt and freshly ground pepper
1/4 cup extra-virgin olive oil
4 5-ounce boneless pork chops
3/4 cup red seedless grapes, halved
4 heaping cups baby arugula
1/2 cup crumbled gorgonzola or other blue cheese

Steps:

  • Combine the shallot, vinegar, 1 teaspoon thyme, 1 teaspoon salt and 1/4 teaspoon pepper in a medium bowl. Gradually whisk in the oil, starting with a few drops and adding the rest in a steady stream.
  • Put the pork chops in a shallow dish and season all over with salt. Add the remaining 1 teaspoon thyme and 3 tablespoons of the dressing. Coat the pork and set aside to marinate for 5 minutes.
  • Heat a grill pan over medium-high heat. Grill the pork until cooked through but still moist, 4 to 5 minutes per side.
  • Add the grapes and arugula to the remaining dressing and toss to coat. Transfer the pork chops to a serving platter or individual plates; top with the salad and sprinkle with the gorgonzola.

4 cups red or black seedless California grapes, slice in half
1 quart + 2 cups baby arugula
Stilton Vinaigrette (recipe follows)
6 tablespoons pecans, toasted and coarsely chopped
6 tablespoons Stilton cheese crumble
2 tablespoons lemon juice
3/4 cup cider vinegar
1½ teaspoons kosher salt
1/2 teaspoon black pepper, freshly cracked
2 tablespoons Dijon Mustard
1/4 teaspoon cayenne pepper
1 tablespoon sugar
2 cups olive oil (do not use extra virgin)
1½ cups Stilton cheese, crumbled

Steps:

  • Toss together salad ingredients green apple, grapes, and arugula with Stilton Vinaigrette, adding dressing gradually to achieve desired degree of coating. Pile high on service plate or in large salad bowl. Garnish with chopped pecans and Stilton sprinkled across top of salad. For the Stilton Vinaigrette: In small bowl, whisk together lemon juice, vinegar, salt, pepper, Dijon mustard, cayenne, and sugar. Gradually whisk in oil. Mix in Stilton. Place in clean container, label, date and store refrigerated. Makes 3½ cups.

1 generous tablespoon Dijon mustard
1 tablespoon honey
1/2 cup extra-virgin olive oil
4 cups arugula
2 cups red grapes, halved if desired
1 red onion, shaved

1/4 teaspoon black pepper, ground
1 medium red onion, peeled, sliced into 1/2 moons
3 tablespoons balsamic vinegar
1/3 cup extra virgin olive oil
1/2 teaspoon salt
1 tablespoon extra-virgin olive oil
1 clove garlic, fresh minced
4 slices rustic bread
4 cups arugula, washed and dried
1 bulb fennel, cored and thinly sliced
1/2 cup roasted red bell pepper, 1/4 inch thick strips
1/4 cup pine nuts, toasted
1/4 cup parmesan cheese, shaved or grated
1 1/2 cups California green or red seedless grapes, picked from stem and rinsed

Steps:

  • In a small bowl whisk together dressing ingredients.
  • Place red onions in baking dish lined with foil. Drizzle with 2 Tbsp. of prepared dressing and toss well. Cover tightly with foil and bake at 350 degrees for 30 minutes. Remove from oven and let cool.
  • Mix 1 Tbsp. olive oil with crushed garlic. Brush onto bread slices. Broil or grill bread for 1-2 minutes on each side until toasted. Cut bread into strips about 1/2 inch wide. Place bread, roasted onions, arugula, fennel, bell pepper, pine nuts and grapes in large bowl and toss with remaining vinaigrette. Sprinkle with Parmesan and serve.

1.5 Lbs Chicken Breast
1 Tbs Olive Oil
1 1/2 Tbs Blackened Seasoning
6 Cups Arugula
2 Cups Red Grapes
1 Cup Persian Cucumbers (roughly 2 cucumbers)
3 Cups Cherry Tomatoes
1/2 Cup Balsamic Vinegar
1/4 Cup Olive Oil
2 Tsp Garlic Cloves, Minced
2 Tsp Honey
1/4 Tsp Red Pepper Flakes
Salt and Pepper to Taste
1/2 Tbs Paprika
1/2 Tbs Brown Sugar
1/2 Tsp Salt
1/2 Tsp Onion Powder
1/2 Tsp Garlic Powder
1/4 Tsp Cayenne
1/4 Tsp Dried Oregano
1/4 Tsp Cumin

Steps:

  • Combine all the spices into a bowl. Any leftovers will keep in a sealed container for 1 month
  • Preheat oven to 400 degrees
  • Prepare the chicken by drizzling over olive oil on both sides and coating it evenly with the blackened seasoning. Once the oven reaches 400 degrees, bake the chicken for 18 minutes, or until it reaches 165 degrees. Let the chicken rest for 5 minutes before cutting.
