BLUE-RIBBON COFFEE CAKE FARMHOUSE STYLE IN THE MIDWEST!
Lots of streusel filling makes cutting a bit messy, but that will be of little consequence once you've had your first bite! This tastes great upon first baking and even BETTER the next day, plan ahead, then. Use a buttered rubber spatula for spreading the batter, as it is quite sticky (get your fingers into the action, too!). Clipped this one from Midwest Living's August '09 issue--I think that means it's been properly aged, and now ready for filing here on Zaar!

Steps:
- Preheat oven to 325. Spray (or grease & flour) a 10-inch fluted (Bundt) pan; set aside.
- In a small bowl, mix Streusel Ingredients; set aside.
- In medium bowl, mix Dry Cake Ingredients; set aside.
- In large bowl, stir together Wet Cake Ingredients EXCEPT sour cream; add dry ingredients, stir just until moistened, then add sour cream and stir until smooth.
- Spoon ONE THIRD of batter into prepped pan, spread evenly. Sprinkle ONE THIRD of streusel over this. Repeat with remaining batter and streusel; use a buttered spatula to assist with the spreading.
- Bake for 45-50 minutes (wooden pick comes out clean).
- Cool in pan for 10 minutes; invert onto serving plate.
- Serve warm . . . . but leave some for the next day (it improves with aging at room temp (covered).
CINNAMON STREUSEL COFFEE CAKE
Steps:
- 1. CREAM TOGETHER--margerine, eggs and sugar..Stir in milk
- 2. ADD DRY INGREDIENTS-flour, baking powder, and salt into the cream mixture
- 3. PREPARE Streusel TOPPING-brown sugar, cinnamon, flour and melted butter or margerine (you can make extra if needed)
- 4. Pour only half of the batter into a greased and floured (9 by 13 oblong pan). Sprinkle half the streusel on top of the batter---pour the rest of the batter in pan and top with remaining streusel topping--Bake at 375 for 35 to 40 Mins. ENJOY
STRUESEL COFFEE CAKE
My sister use to make this when we were kids. She got the recipe from a microwave oven cookbook. Everything needed is usually in the cupboard. It is super yummy and brings back childhood memories for me when I eat it. I add extra cinnamon to my version as I love the cinnamon flavor. Also I have given the oven version as my microwave does not have the settings that our old microwave. I hope you enjoy it as much as I do. You can also put this in muffin tins if you need to make them individual.

Steps:
- Blend sugar and butter in mixing bowl. Add eggs and extract. Stir in flour, baking powder, salt and milk. Pour in greased 9x9 baking pan.
- In second bowl mix streusel topping ingredients. Pour over top of coffee cake. Bake on 350° for 45 minutes or until toothpick comes out clean. Allow to cool on wire rack 5 minutes.

GERMAN STREUSEL COFFEE CAKE 1953
Not overly sweet, just sweet enough, this is the perfect coffee cake! It's a simple, old-fashioned recipe. What makes this so special is the mixture of spices. The cinnamon is the most noticeable, but there's a perfect balance of spices in the cake. Serve with a cup of coffee or tea, and you have one great treat.

- 1. Rub together with a wooden spoon the flour, sugar, butter, and salt.
- 2. Then remove 3/4 cup to separate bowl to be used for the crumb topping. Add 1/2 tsp cinnamon to the crumb topping.
- 3. To the rest of the original mixture add the spices, baking powder and soda.
- 4. Beat two eggs well and mix with the buttermilk. Add the milk and eggs to the dry ingredients and mix well.
- 5. Pour into the cake pan.
- 6. Then sprinkle the streusel mixture evenly on the top of the cake
- 7. Bake for a total of 20 minutes in the following manner: 400 degrees for 5 minutes 350 degrees for 15 minutes
- 8. I remember baking this when I was young but I loved the streusel more than the cake so I would double the amount of streusel on the cake.
OLD FASHIONED COFFEE CAKE WITH CINNAMON-STREUSEL TOPPING

- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish; set aside.
- Prepare cinnamon layer by stirring brown sugar, flour, and cinnamon together in a small bowl until well combined; set aside.
- Prepare streusel topping by combining brown sugar, flour, cinnamon, and salt in a small bowl. Add butter and stir with a fork until mixture is crumbly; set aside.
- Prepare cake by whisking together flour, baking powder, and salt in a medium bowl.
- Beat sugar and butter in a stand mixer fitted with the paddle attachment on medium speed until fluffy, about 3 minutes. Scrape the sides of the bowl, then turn the mixer on low speed and beat in eggs until well blended. Gradually mix in flour mixture and milk. Add sour cream and vanilla and beat for 30 seconds.
- Pour 1/2 of the batter into the prepared baking dish. Sprinkle the cinnamon layer over the batter, then pour the remaining batter over top. Spread streusel topping evenly over the cake, pressing very lightly so it adheres to the batter.

BLUEBERRY GRANOLA COFFEE CAKE
This is a great goodie to make for company or just to bless the ones you love. The yogurt, blueberries and whole wheat flour make it a little more healthy than the usual coffeecake. You can make it lower in fat by substituting 1/2 cup applesauce for half the butter. Freezes well.

- Preheat oven to 350 degrees F.
- Spray 10 cup bundt pan with baking spray. Place on baking sheet.
- Stir together the granola and 1/2 teaspoons cinnamon in a small bowl, set aside.
- In a large bowl, whisk together the flours, baking powder, baking soda, 1/2 teaspoons cinnamon, and salt.
- In a mixing bowl, cream the butter and sugars until light and fluffy.
- Beat in eggs, one at a time.
- Beat in the vanilla.
- Beat in the flour mixture alternately with the yogurt, ending with the flour, just until blended.
- Sprinkle half the granola mixture and 1/4 cup blueberries into the bottom of the bundt pan.
- Spread half the batter over the granola.
- Sprinkle remaining granola over the batter in bundt pan.
- Mix the remaining 1 cup blueberries into the remaining batter.
- Top the granola layer with the blueberry/batter mixture.
- Bake at 350 degrees for 45 minutes, then cover top loosely with foil to prevent overbrowning. Continue to bake another 15 minutes, or until toothpick inserted in center comes out clean.
- Cool in pan 5 minutes before turning out onto a rack to cool completely.
