PUMPKIN GRANOLA AND ORANGE-CRANBERRY JAM WITH MAPLE YOGURT PARFAITS



Pumpkin Granola and Orange-Cranberry Jam with Maple Yogurt Parfaits image

2 1/2 cups rolled oats
1/3 cup pumpkin seeds
1/3 cup chopped pecans, almonds or walnuts
1/3 cup pumpkin puree
1/3 cup light brown muscovado sugar
1/4 cup maple syrup
1 tablespoon canola oil
2 teaspoons pumpkin pie spice
1/2 teaspoon vanilla extract
1/2 cup dried cranberries, optional
Zest of 1 orange, grated
1 cup orange juice
1 cup sugar
One 12-ounce bag fresh cranberries
2 1/4 cups Greek yogurt
1/4 cup grade B pure maple syrup
1/4 cup Pumpkin Spice Syrup, recipe follows, optional
1/3 cup pumpkin puree
1 tablespoon pumpkin pie spice
1 cup granulated sugar
1/2 cup light brown sugar
1 teaspoon vanilla extract

Steps:

  • Special equipment: 4 parfait glasses
  • For the pumpkin granola: Preheat the oven to 325 degrees F. Line a half sheet pan with parchment paper and lightly spray with nonstick spray; set aside.
  • Put the oats, seeds and nuts in a large bowl. Combine the pumpkin puree, sugar, maple syrup, oil and pumpkin pie spice in a medium saucepan and bring to a boil over medium heat and let it cook for 1 minute longer, whisking occasionally. Remove from the heat and stir in the vanilla extract.
  • Pour the wet ingredients over the oat mixture and stir until the oats are fully coated. The mixture will be pretty wet. Evenly spread the mixture, in a single layer, onto the prepared baking sheet. Bake for 20 minutes, then stir and bake for an additional 15-20 minutes or until the granola is golden brown and crisp. Cool on a baking rack. Transfer to a bowl and stir in the cranberries, if using. Store leftovers in an airtight container in a cool, dark, place, for up to 1 week.
  • For the orange cranberry jam: Combine the orange juice and zest, and the sugar in a medium saucepan and bring to a boil over high heat. Cook until the sugar has melted. Add the cranberries, reduce the heat so the mixture simmers, and cook until the cranberries pop and the mixture thickens slightly (it will thicken much more as it cools), about 10 minutes. Transfer to a bowl and let cool. Makes about 2 cups; store leftovers in the refrigerator, covered, for 2 weeks.
  • For the maple yogurt: Whisk together the yogurt and 2 tablespoons maple syrup until smooth; taste, and add more maple syrup if you'd like it sweeter. Chill.
  • To assemble the parfaits: Dollop 1/4 cup maple yogurt in the bottoms of 4 parfait glasses. Follow that with about 1/4 cup of pumpkin granola, another 1/4 cup of yogurt, about 2 tablespoons of orange cranberry jam, then a little more yogurt and a few more tablespoons of granola. Drizzle over some Pumpkin Spice Syrup, if using. Serve.
  • Combine the pumpkin puree and pumpkin pie spice in a small saucepan over medium heat and cook until the mixture thickens slightly and the spices become fragrant, about 3 minutes.
  • Combine 2 cups cold water and the granulated and brown sugars in a medium saucepan, bring to a boil over high heat and cook, whisking occasionally, until the mixture thickens and reduces slightly, about 5 minutes.
  • Reduce the heat to low, whisk in the spiced pumpkin puree and cook, stirring occasionally for 10 minutes. Do not allow the mixture to boil after you add the pumpkin or the syrup will become cloudy (even after straining.) Remove from the heat and let the mixture cool for 10 minutes.
  • Place a mesh strainer over a medium bowl and line the strainer with several layers of cheesecloth. Pour the mixture through the strainer and let it strain slowly into the bowl. Add the vanilla extract to the syrup and transfer to a container with a tight fitting lid. The syrup will last 1 month stored in the refrigerator. Makes about 1 1/2 cups; leftovers can be refrigerated for 1 week.

1/2 cup pomegranate juice
1 tablespoon sugar
3/4 teaspoon lemon juice
1/4 cup butter, cubed
1/4 cup packed brown sugar
1/2 teaspoon salt
1/2 teaspoon each ground cardamom, cinnamon and allspice
1/2 teaspoon vanilla extract
2 cups old-fashioned oats
1 cup sweetened shredded coconut
1/2 cup coarsely chopped cashews
1/4 cup dried cranberries
1/4 cup dark chocolate chips
PARFAITS:
4 cups fat-free plain Greek yogurt
6 tablespoons honey, divided
1 tablespoon grated lime zest
2 tablespoons lime juice
3 cups chopped Honeycrisp apples (about 2 large)
1 cup pomegranate seeds

Steps:

  • Preheat oven to 325°. In a small saucepan, combine pomegranate juice, sugar and lemon juice. Bring to a boil; cook until liquid is reduced by half. Stir in butter and brown sugar until sugar is dissolved. Remove from heat; stir in salt, spices and vanilla., In a large bowl, combine oats, coconut and cashews. Drizzle with pomegranate juice mixture; toss to combine. Transfer to a greased 15x10x1-in. baking pan, spreading evenly., Bake 20-25 minutes or until lightly browned, stirring halfway. Cool on a wire rack. When completely cooled, stir in cranberries and chocolate chips., For parfaits, in a bowl, mix yogurt, 4 tablespoons honey, lime zest and lime juice until blended. To serve, layer 1/4 cup yogurt mixture, 2 tablespoons granola, 3 tablespoons chopped apple and 1 tablespoon pomegranate seeds in each of eight parfait glass. Repeat layers. (Save remaining granola for another use; store in an airtight container.), Drizzle parfaits with remaining honey. Serve immediately.

2 cups old-fashioned oats
1 cup Wheaties
1 cup whole almonds
1 cup pecan halves
1 cup sweetened shredded coconut
4-1/2 teaspoons toasted wheat germ
1 tablespoon sesame seeds, toasted
1 teaspoon ground cinnamon
1/4 cup butter, melted
2 tablespoons maple syrup
2 tablespoons honey
1 can (20 ounces) pineapple tidbits, drained
1 can (15 ounces) mandarin oranges, drained
1 cup halved green grapes
2 to 3 medium firm bananas, sliced
1 cup sliced fresh strawberries
4 cups vanilla yogurt

Steps:

  • In a large bowl, combine the first 8 ingredients. Combine the butter, syrup and honey; drizzle over oat mixture and stir until well coated. Pour into a greased 13x9-in. baking pan. Bake, uncovered, at 350° for 30 minutes, stirring every 10 minutes. Cool on a wire rack; crumble granola into pieces., Combine the fruits in a large bowl. For each parfait, layer 2 tablespoons yogurt, 2 tablespoons granola and 3 rounded tablespoons fruit in a parfait glass or dessert bowl. Repeat layers. Sprinkle with remaining granola. Serve immediately.

1/4 cup almonds, coarsely chopped
1/4 cup plus 3 tablespoons pure maple syrup
1 1/2 teaspoons unsalted butter
1/3 cup raisins
3 cups sliced hulled strawberries (about 1 1/2 one-pint baskets)
3 cups thinly sliced pitted peeled peaches (about 6 medium)
Nonfat vanilla frozen yogurt (optional)

Steps:

  • Preheat oven to 350°F. Mix oats and almonds in 13x9x2-inch baking pan. Combine 1/4 cup maple syrup and butter in heavy small saucepan. Bring to boil. Pour maple syrup mixture over oat mixture; stir to blend well. Bake 10 minutes, stirring occasionally. Add raisins to oat mixture; stir to blend. Bake until mixture is golden and crisp, stirring occasionally, about 8 minutes longer. Cool granola completely in pan. (Can be prepared 1 week ahead. Store in airtight container at room temperature.)
  • Gently toss strawberries, peaches and remaining 3 tablespoons maple syrup in large bowl to blend. Divide fruit mixture among 6 parfait glasses. Sprinkle each parfait with granola, dividing equally. Top each with scoop of frozen yogurt, if desired, and serve.

2 1/4 cups old-fashioned rolled oats (not quick-cooking)
1 cup sweetened shredded coconut
3/4 cup slivered almonds
1/4 cup vegetable oil
1/4 cup honey, plus more for drizzling
3/4 cup dried cranberries
3/4 cup golden raisins
1/3 cup shelled and salted sunflower seeds
2 cups low-fat plain Greek yogurt
Fresh berries (optional)

Steps:

  • Preheat the oven to 350 degrees F. Toss together the oats, coconut and almonds in a large bowl. Whisk together the vegetable oil and honey in a small bowl, then stir into the oats mixture. Spread the mixture in an even layer on a rimmed baking sheet. Bake until golden brown, 17 to 20 minutes, stirring occasionally. Remove from the oven and allow to cool completely, about 20 minutes. Transfer the mixture to a large bowl and add the dried cranberries, raisins and sunflower seeds.

3 tablespoons honey

Steps:

  • Line a strainer with four layers of cheesecloth or one coffee filter and place over a large bowl. Place yogurt in prepared strainer; cover yogurt with edges of cheesecloth. Refrigerate for 8 hours or overnight. , Remove yogurt from cheesecloth and discard liquid from bowl. In another bowl, combine the yogurt, orange juice, honey, vanilla and orange zest. Cover and refrigerate until serving., For granola, in a large bowl, combine oats and walnuts. Combine the brown sugar, honey, oil, vanilla and salt; pour over oat mixture and toss to coat. 2 cups old-fashioned rolled oats
1 1/2 cups whole almonds
3/4 cup shredded coconut
1/4 cup vegetable oil
1/2 cup honey
Salt
1/2 cup dried cherries
1/2 cup dried cranberries
1/2 cup dried pineapple chunks
1/2 cup maple syrup
4 cups plain yogurt
4 cups mixed berries (raspberries, blueberries and strawberries), quartered

Steps:

  • For the granola: Preheat the oven to 350 degrees F.
  • Toss the oats, almonds and coconut together on a baking sheet lined with a silicone baking mat.
  • Whisk together the vegetable oil and honey in a liquid measuring cup, then pour over the oat mixture. Stir until all the oats and nuts are coated. Season with salt to taste.
  • Bake until golden brown, 40 to 45 minutes.
  • Remove the granola from the oven and allow it to cool. Add the cherries, cranberries, and pineapple chunks. Drizzle with some of the maple syrup and toss together.
  • To build the parfaits: Line up eight parfait glasses. Start with a large spoonful of the granola, followed by a layer of yogurt, then a layer of berries and a drizzle of maple syrup. Repeat the layers one more time, finishing with berries, drizzled with maple syrup.
