TOASTED OAT AND NUT GRANOLA

3 cups (12 ounces/345 grams) rolled oats
2 cups (10 ounces/280 grams) pecans, chopped
3/4 cup (2 ounces/60 grams) unsweetened shredded coconut
1/4 cup plus 2 tablespoons (2 ounces/60 grams) dark brown sugar
1/4 cup plus 2 tablespoons (2 ounces/60 grams) pure maple syrup
1/4 cup (1 1/2 ounces/46 grams) oil, such as coconut, canola, vegetable or sunflower
2 tablespoons warm water
3/4 teaspoon fine salt

Steps:

  • Preheat the oven to 325 degrees F (160 degrees C).
  • In a large bowl, combine the oats, nuts, coconut and brown sugar.
  • In a liquid measuring cup, combine the maple syrup, oil, water and salt; stir with a fork until incorporated. Pour into the oat mixture and stir until coated.
  • Divide the mixture among 2 rimmed baking sheets and bake until the granola is golden brown all over, 45 to 55 minutes, stirring every 20 minutes.
  • Remove from the oven and let cool completely on wire racks. Serve or store in an airtight container for up to 2 months.

Easy Fruit and Nut Granola image

12 ounces old-fashioned rolled oats
12 ounces raw nuts, such as blanched almonds and walnuts
1/2 to 1 cup sugar, depending on desired sweetness
1/2 cup vegetable oil
1 tablespoon vanilla extract
1 to 2 teaspoons table salt
1 cup dried fruit, such as golden raisins and cherries

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the oats and nuts in a large bowl. In a separate mixing bowl, combine the sugar, oil, vanilla, salt and 1/4 cup water. Pour the liquid mixture over the oat mixture and stir until combined. Pour onto two baking sheets and spread evenly. Bake until golden brown, 25 to 30 minutes, stirring halfway through.
  • Pour the cooked oat mixture into a bowl and stir in the raisins and cherries. Let cool. The granola will keep in an airtight container at room temperature in a cool, dry place for up to 3 weeks.

Very easy and yummy. Eat by the fistfuls or sprinkle on your cereal, yogurt or ice cream. Recipe can easily be doubled. Use any dried fruits or nuts that you like. UPDATE: 11/5/08 I added an extra 1 cup of oatmeal to the recipe to make the granola less sticky and easier to sprinkle on cereal. Either way you make it, you're in for a treat. YUM! **Please be careful with your baking time. It may take less than 20 minutes to toast. Watch carefully!

2 cups old fashioned oats, I use rolled oat, add 1C more for a less sticky granola
1/3 cup honey
2 tablespoons butter, melted
1/2 teaspoon vanilla
1/2 cup almonds, chopped
1/2 cup dried sweetened cranberries
1/2 cup dried apricot, chopped
salt, pinch

Steps:

  • Preheat oven to 350°.
  • Spray baking sheet with non-stick spray or use a silicon matt. The baking sheet must have sides or use a 9x12 pan.
  • Bake oats for 15 minutes. Remove from oven.
  • In a medium bowl, sprayed with nonstick cooking oil: combine Oats, nuts, fruits.
  • In glass measuring cup: combine honey, vanilla, butter and salt. Warm in microwave for 10 seconds. Stir.
  • Drizzle the honey mixture over the oat mixture, stirring constantly until well coated.
  • Return granola mixture to oven and bake an additional 20 minutes or until oats are lightly toasted & browned.
  • Cool granola completely. It will become crunchier as it cools.
  • Store in an airtight container for up to 2 weeks.
