2 cups Cascadian Farm® organic cinnamon raisin granola
1 1/2 cups Gold Medal™ all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1/2 cup packed brown sugar
1 cup buttermilk
1/4 cup vegetable oil
1 teaspoon vanilla

Steps:

  • Heat oven to 350°F. Spray 18 regular-size muffin cups with cooking spray.
  • In large bowl, mix 1 1/2 cups of the granola, the flour, baking powder, baking soda and salt. In medium bowl, beat eggs, brown sugar, buttermilk, oil and vanilla with whisk until combined. Add egg mixture to dry ingredients; stir just until combined.
  • Divide batter evenly among muffin cups, filling about two-thirds full. Sprinkle evenly with remaining 1/2 cup granola.
  • Bake 13 to 15 minutes or until toothpick inserted in center comes out clean. Remove from pans to cooling racks. Serve warm.

GRANOLA OR MUESLI MUFFINS

Another from Nigella Lawson's Feast cookbook. You can use granola or muesli interchangeably here. There was more batter than I usually get for a 12 muffin recipe so I kept filling up the cups more and filled them nearly to the top with some batter still left over but not much. The muffins did not rise much so I guess this was the right thing to do. These are tasty little treats that are also good for you. Enjoy!

  • Preheat the oven to 400 degrees. Line a 12 muffin tins with paper linings.
  • Combine the flour, baking soda, and salt in a large bowl.

  • Fold in granola and then divide among the 12 paper lined tins.

Great muffin to make for breakfast or anytime. SUPER easy and the kids love it!! I tweaked another recipe that I found posted here...omitting some fat and adding a few other ingredients. They freeze well, too. I used Quaker Natural Granola with Oats, Honey & Raisins because that is what I had on hand. The slivered almonds are really yummy in the muffins. And, I also 'made' my own buttermilk by adding 3 tablespoons of lemon juice to regular skim milk before combining the wet ingredients.

2 1/4 cups whole wheat flour
3 teaspoons baking soda
3/4 teaspoon salt

1/2 cup low-fat mayonnaise
6 cups granola cereal (with oats, honey & raisins)
1/2 cup dried cranberries (optional)

Steps:

  • Preheat oven to 375 degrees. Line 36 muffin tins with paper liners or spray with non-stick spray.
  • Combine the flour, baking soda, salt and cinnamon in a large bowl.
  • In another bowl, whisk together the buttermilk, eggs, sugar, oil and mayonnaise. Pour this into the dry ingredients and and mix lightly to combine.
  • Fold in granola and cranberries (or 1/2 cup more raisins) until evenly distributed in batter.
  • Divide batter among the 36 muffin cups, filling almost to the top.

These muffins are ludicrously easy to make. It's just a matter of mixing flour, baking soda and a pinch of salt in one bowl; stirring together buttermilk, an egg, vegetable oil and sugar in another; then combining the two. At the end, fold in some granola, though if you wanted to cut out one step, you could add the granola along with the flour in the bowl of dry ingredients. Bake and eat 20 minutes or so after you've taken them out of the oven. You can even measure out all the ingredients the night before, so all you need to do upon waking is stumble into the kitchen, switch on the oven and stir everything together.

3 cups all-purpose flour (sometimes we use 1/2 whole wheat)
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 cups sugar (we use brown sugar)
1 cup vegetable oil (we usually use extra virgin olive oil)
3 large eggs
1 tablespoon vanilla extract
4 bananas (ripe to over-ripe is better for mashing)
granola cereal

Steps:

  • Preheat oven to 325 degrees F.
  • Mix first 7 ingredients in a bowl.
  • In another large bowl, mix the rest of the ingredients, besides the bananas.
  • Mash the bananas (its sometimes easier to mash them in their skins a bit first) then add them to the bowl with the wet ingredients and mix them together.
  • Add the dry ingredients to the wet ingredients in 3 installments, make sure not to over-mix.
  • Either grease muffin tin with a paper towel dipped in olive oil or line the muffin tin with paper liners.
  • Fill the muffin cups about 3/4 the way up.
  • Crumble granola and add to the top of each muffin, adding as much or as little as you want.
  • Bake for about 20-25 minutes or untill a toothpick comes out clean.

2 navel oranges, zest of
2 navel oranges, juice of
1/2 cup dried cranberries
1/4 cup flour
1 1/2 tablespoons margarine
1 1/2 tablespoons sugar
1/4 teaspoon cinnamon
1 cup cranberry granola (I used Zoe's Cranberry and Currant Granola, or a flaked cranberry cereal)
1/2 cup unsweetened applesauce
1/4 cup oil
1/2 teaspoon vanilla
3/4 cup whole wheat pastry flour
3/4 cup unbleached all-purpose flour
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 tablespoons soymilk, to taste

Steps:

  • Soak the cranberries in the juice overnight, I added the zest to the jar also.
  • (one jar with a lid, I save a PB jar for this use) The next day-- preheat oven to 400 degrees F.
  • Spray either 6 large muffin baking cup pan or 12 small muffin cups with cooking spray.
  • Make the topping, combine flour, cinnamon and sugar, cutting in margarine until mixture resembles coarse crumbs and set aside.
  • In a large bowl, mix together the granola, soaked canberries and juice and applesauce.
  • Set aside for 5 minutes, or until cereal is softened.
  • Once cereal is soft, add the oil and the vanilla, place the oil in the jar to remove all flavor if desired.
  • Stir together flours, sugar, baking powder, baking soda, salt and cinnamon in a medium bowl and set aside.
  • Add the flour mixture to the cranberry mixture, stirring until combined, you will need to add the soy milk to make it not such a stiff dough, you may need up to 1/4 cup or more.
  • Divide the mixture to muffin cups evenly.
  • Sprinkle the muffins evenly with the topping.
  • Bake for about 20 minutes, until golden and a toothpick inserted into the center of a muffin comes out clean.
  • Place on cooling rack, cover with a tea towel for 5 minutes.
  • After the five minutes, run a butter knife around the muffins, then remove very carefully, they are very soft and delicate.
  • Cool completely, place in tupperware lined with a paper towel.
  • Freeze after 1-2 days, wrapped in plastic wrap.
  • Tip: If you have no fresh oranges, cranberry orange juice (Minute Maid, I think) is a wonderful substitute or even OJ prepared from concentrate, but I prefer fresh as I like the zest added to these.

  • Preheat the oven to 375ºF with a rack in the middle. Oil 12 muffin cups. Combine the granola and milk in a bowl and let sit for 30 minutes. Meanwhile, cover the raisins with hot water and soak for 15 minutes. Drain and dry on paper towels.
  • Sift together whole wheat flour, baking powder, baking soda, and salt.
  • In medium bowl, beat together the eggs, honey, buttermilk or yogurt, canola oil and vanilla. Quickly whisk in the flour, then fold in the granola and raisins. Combine well

OMG! i went to my grandma's yesterday (shes a WONDERFUL cook and baker) and she dug out this oooooooold recipe for these muffins... we went to the store to pick the ingredients up and then we stirred up a batch and baked a dozen of them, THEY ARE HEAVENLY! this makes a large batch but the awesome thing is that the batter can be kept in the refrigerator for up to 6 wks! so you can have fresh baked muffins whenever you feel like it, with hardly any fuss at all!!! YAY!!!!!

2 cups Original Bisquick™ mix
1 cup granola
1/3 cup raisins
2/3 cup milk
2 tablespoons honey
Additional honey, if desired

Steps:

  • Heat oven to 400°F. Grease bottoms only of 12 regular-size muffin cups, or place paper baking cup in each muffin cup.
  • Beat egg slightly in medium bowl. Stir in Bisquick, granola, raisins, milk and 2 tablespoons honey just until moistened. Divide batter evenly among muffin cups.
  • Bake about 15 minutes or until golden brown. Immediately remove from pan. Serve warm with additional honey.

1 1/2 cups granola
1 cup all purpose unbleached flour
2/3 cup whole wheat flour
2 tablespoons golden flax seed (ground if desired)
2 teaspoons non-aluminum baking powder
1 teaspoon baking soda
1 1/2 cups unsweetened applesauce
1/2 cup milk or non-dairy milk substitute
1/4 cup brown sugar
5 tablespoons canola or other vegetable oil
2 eggs
Granola or rolled oats for topping

Steps:

  • Preheat oven to 400°F. Oil a standard 12-cup muffing tin or line it with paper muffin cups. Combine granola, flour, whole wheat flour, flax seed, baking powder and baking soda in a large bowl. In another bowl, whisk together applesauce, milk, sugar, oil and eggs. Add applesauce mixture to dry ingredients and mix just until combined. Pour batter into muffin tins and fill them 3/4 full. Sprinkle extra granola or rolled oats on top and bake 18 to 20 minutes or until a toothpick inserted in the center of a muffin comes out clean. Let cool slightly in pan before removing muffins to a cooling rack.

2 large or extra large eggs
1/4 cup mild honey, such as clover
1/2 cup buttermilk or plain low-fat yogurt
1/4 cup canola oil
1 teaspoon vanilla extract

Steps:

  • 1. Preheat the oven to 375ºF with a rack in the middle. Oil 12 muffin cups. Combine the granola and milk in a bowl and let sit for 30 minutes. Meanwhile, cover the raisins with hot water and soak for 15 minutes. Drain and dry on paper towels. 2. Sift together whole wheat flour, baking powder, baking soda, and salt. 3. In medium bowl, beat together the eggs, honey, buttermilk or yogurt, canola oil and vanilla. Quickly whisk in the flour, then fold in the granola and raisins. Combine well 4. Spoon into muffin cups, filling each about 3/4 full. Bake 20 to 25 minutes, until lightly browned. Cool in the tins for 10 minutes, then unmold and cool on a rack.
