GRANOLA PEANUT BUTTER BALLS
I have a chef friend, Nancy Russman in Louisville Kentucky, who spends a lot of her time teaching kids to cook and eat healthier snacks. When she first met me and my son there at a Julia Child birthday party I was cooking for, she made a big impression on him, much bigger than Julia! Probably because she's very short, and closer to his size than Julia. She taught him the cheer of "Go Cats!" in support of the Louisville Wildcats. We also had a nice tour of the Louisville Slugger Baseball Bat Factory, a visit to a bourbon distillery for another Julia party and a visit to my favorite goat cheese maker, Judy Schad, in nearby Greenville Indiana. This is one of Nancy's kid-friendly recipes that the kids can help make.

NO BAKE GRANOLA BALLS
Healthy snacks that kids (and grown ups) will love! I originally got the recipe from Whole Foods, then changed it up a bit. This is dairy-free and vegetarian. NOTE: I have many a time made these without toasting the oats and coconut and it works out just fine that way as well :)

- Preheat the oven to 350 degrees. Spread oats and coconut on a cookie sheet. Place in the oven and toast for about 12 minutes, stirring twice, until lightly browned.
- Meanwhile, combine the peanut butter, honey and brown sugar in a saucepan over medium heat, stirring continuously, until ingredients are thoroughly blended and sugar has completely melted (about 2 minutes).
- Add the toasted oats and coconut to the peanut butter mixture, followed by the nuts, raisins and cranberries. Stir to combine. Set aside to cool for about 10 minutes.
- Working with dampened hands, shape into bite sized balls and refrigerate for an hour. I usually let mine sit out for about 15 minutes prior to serving.

MAPLE PEANUT BUTTER GRANOLA BALLS

- Using whisk, blend PB, syrup and vanilla until smooth. Using wooden spoon add dry ingredients until blended. Roll firmly between palms into 1.5 inch balls then flatten gently with palm onto a cookie sheet. Optional- melt choc in meas cup in microwave, top each flattened ball with chocolate Store in bag or air tight container in fridge for 2 weeks or freezer for 3 months.
OATMEAL GRANOLA COOKIE BALLS
The title is the best way to describe these healthy treats. It is technically a cookie, but does not bake like one. They taste like a nutrition bar, but in a ball form. They're packed with healthy fats and grains and are perfect little snacks for adults and kids. My daughter favors these cookies over regular ones.

VITAMIX GRANOLA CHEESE BALLS
Steps:
- 1. Place granola into the Vitamix container and secure lid.
- 2. Select Variable 1.
- 3. Turn machine on and slowly increase speed to Variable 3.
- 4. Blend for 15 seconds. Set aside.
- 5. Place rest of ingredients into the Vitamix container in the order listed and secure lid.
- 6. Select Variable 1.
- 7. Turn machine on and slowly increase speed to Variable 10, then to High.
- 8. Blend for 15-30 seconds, using the tamper to press the ingredients into the blades. Mixture should be chunky.
- 9. Take cream cheese mixture and form 12 1-inch balls. Roll in the chopped granola.
GRANOLA BALLS
My family loves granola bars. I found that making them myself is more cost effecting and tastes way better! It's such a hit that my kids ask for it over any other cookie. Hope you enjoy them!

- In a large pot, on a low flame, melt the butter/margarine and marshmallows, mixing often.
- Add in the brown sugar, corn syrup/honey and vanilla. Mix to combine.
- add in the oats and mix. Add in peanut butter and mix.
- Shut heat off and mix in puffed rice cereal.
- Mix in all your other optional ingredients you want. I do a medley of protein granola, chocolate chips, white chocolate chips, butterscotch chips, caramel bits, toffee bits, variety of nuts and dried fruits. *** note*** You can alter this to go any direction you like. For instance, omit the peanut butter, add in a teaspoonful of cinnamon and some raisins and you have a oatmeal raisin balls. Be creative!
- Once you are all mixed up, pour it on a sheet pan. It should be warm and you are able to form golf ball size Granola balls or press flat to cut into bars later. Don't worry it won't stick to your hands. But if you want you can use a rolling pin to flatten it out further. You should end up with a average of 40 granola balls. If you don't continuously sample when making them.
