GRANOLA APPLESAUCE MUFFINS

1 1/2 cups granola (I used Kind granola Healthy Grains Vanilla Blueberry Clusters)
1 cup all purpose flour
2/3 cup whole wheat flour
2 tablespoons golden flax seed
2 teaspoons baking powder
1 teaspoon baking soda
1 1/2 cup unsweetened applesauce
1/2 cup milk or non-dairy substitute
1/4 cup brown sugar
2 eggs
rolled oats for topping

Steps:

  • Preheat oven to 400 degrees F. Prepare muffin tins with paper muffin cups (makes about 18 muffins)
  • Pour granola into a large mixing bowl. Break up any large pieces of granola-- I like to firmly pat on the granola with the bottom of a metal measuring cup. Add the all purpose flour, whole wheat flour, flax seed, baking powder and baking soda.
  • In a separate smaller bowl mix the applesauce, milk, sugar, and eggs (please note original Whole Foods recipe calls for oil but it is omitted in this recipe)
  • Add the wet ingredients to the dry and stir until just combined. Fill muffin tins 2/3 full. I use a 1/4 cup measuring cup to fill each muffin cup evenly. Sprinkle oats on top.
  • Bake for 20 -22 minutes.
  • Cool on a wire rack before serving.

2 1/4 cups all-purpose flour
1 1/4 cups sugar
3 teaspoons ground cinnamon
2 teaspoons baking soda
1/2 teaspoon salt
3 eggs
3/4 cup applesauce
1/2 cup vegetable oil
1 teaspoon vanilla extract
2 cups grated carrots
1 medium tart apple, peeled and grated
1 (8 ounce) can crushed pineapple, drained
1/2 cup flaked coconut
1/2 cup raisins
1/2 cup chopped walnuts

Steps:

  • In a large bowl, combine the first five ingredients.
  • In another bowl, combine the eggs, applesauce, oil and vanilla.
  • Stir into dry ingredients just until moistened (batter will be thick).
  • Stir in carrots, apple, pineapple, coconut, raisins and nuts.
  • Fill greased or paper-lined muffin cups two-thirds full.
  • Bake at 350 degrees for 20-24 minutes or until a toothpick comes out clean.
  • Cool for 5 minutes before removing from pans to wire racks.

I found this recipe on a box of Kelloggs low fat granola with raisins cereal. It's my family's favorite store bought granola so I think they'll love these muffins too.

1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
2 teaspoons pumpkin pie spice
1 1/2 cups low-fat granola cereal, such as Kelloggs
1/4 cup packed brown sugar (I prefer to use 1/2 cup brown sugar. Only using 1/4 cup gives a much less sweet muffin.)
1/3 cup nonfat milk
3/4 cup unsweetened applesauce
2 egg whites
3 tablespoons vegetable oil
1 teaspoon vanilla
1/4 teaspoon cinnamon
2 tablespoons sugar

Steps:

  • Preheat oven to 400°F.
  • In a small bowl, combine 1/4 teaspoon cinnamon and 2 tablespoons sugar. Set aside.
  • Coat 12-2 1/2 inch muffin papers, placed in muffin tins, with cooking spray.
  • In a mixing bowl, combine flour, baking powder, salt and spice. Set aside.
  • In a large mixing bowl, combine low fat granola cereal, brown sugar, milk and applesauce.
  • Add egg whites, oil and vanilla to cereal mixture. Mix well.
  • Stir in flour mixture only until combined.
  • Spoon batter evenly into prepared muffin tins.
  • Sprinkle with cinnamon sugar mixture.
  • Bake for 20 minutes or until lightly browned.
  • Serve warm.

  • Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups, or line with paper muffin liners.
  • In a large bowl, mix together flour, sugar, baking soda, cinnamon, and salt. Stir in the carrot, raisins, nuts, coconut, and apple.
  • In a separate bowl, beat together eggs, oil, and vanilla. Stir egg mixture into the carrot/flour mixture, just until moistened. Scoop batter into prepared muffin cups.
