My grandma ran a country club and a restaurant in her day. She can make amazing food, but sometimes it's hard to get a recipe from her because she doesn't measure anything and makes everything from memory. While letting her talk it out, I was able to get this banana pudding and a few other recipes written down. Enjoy!

1 (12 ounce) package vanilla wafers, divided
1 cup white sugar
½ cup all-purpose flour
½ teaspoon salt
4 egg yolks
2 cups milk
1 teaspoon vanilla extract
1 tablespoon butter
4 bananas, sliced, or more to taste
4 egg whites
¼ teaspoon cream of tartar
5 tablespoons white sugar
½ teaspoon vanilla extract

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Line the bottom of a baking dish with some wafers. Combine sugar, flour, and salt in a bowl.
  • Beat yolks in a heavy saucepan over medium heat. Add flour mixture alternately with milk and vanilla extract, stirring constantly. Bring to a simmer and cook until slightly thickened, 8 to 10 minutes. Add butter; continue stirring until thickened to a pudding-like consistency, 5 to 7 minutes more.
  • Layer a portion of banana slices over the wafers and cover with pudding. Repeat layers with remaining bananas, wafers, and pudding.
  • Beat egg whites in a glass, metal, or ceramic bowl, gradually adding cream of tartar, until soft peaks form. Add sugar and continue beating on high speed until stiff peaks form. Fold in vanilla extract. Spoon meringue over the pudding.
  • Bake in the preheated oven until meringue browns, 15 to 20 minutes. Let cool before serving.

I remember Nanny making this fast and easy pudding for us just like it was yesterday. It's a Southern staple in a Texas household and a must for any type of family gathering in the South. This recipe is so simple and easy you can't go wrong! Nanny's Tip: Make it in a cast iron skillet!

2 c milk
1 1/3 c sugar
3 eggs, separated
1/2 tsp vanilla extract
4 Tbsp flour
2 or 3 bananas
1/2 box vanilla wafers cookies

Steps:

  • 1. Combine sugar & flour in skillet on medium high heat. Mix egg yolks and milk in bowl and beat well. Add egg mixture to the flour & sugar in pan and stir well constantly until mixture thickens and begins to boil.
  • 2. Remove pudding from the heat and add bananas. Mix together well. Line a glass dish large enough to hold the pudding mixture with 'Nilla wafers and pour pudding over the top of wafers (usually a 9 x 9 x 13" baking dish works well).
  • 3. Layer meringue topping over the pudding and smooth over the top of the pudding to each edge. My recipe for meringue topping is listed below.
  • 4. Place the dish under the oven broiler just until the meringue browns nicely.
  • 5. Chill in the refrigerator for about an hour before serving...if you have the patience!
  • 6. Meringue Topping: I use two large bowls for making my meringue, the bottom bowl I fill with about 3" of ice water, then I place the other bowl on top of the other to keep my egg whites chilled while I'm mixing them (metal or glass bowls work best for meringues). Place the egg whites in the bowl and mix on medium gradually adding up to 1 tbs of sugar (more or less according to your sweet tooth), until the eggs begin to form thick peaks. GRANDMA RENE'S OLD-FASHIONED BANANA PUDDING

This was the way my mom made banana pudding. You'll find no vanilla pudding mix in this! It's all homemade and with love. I used a saucepan on the stove to cook the custard, but you have to constantly stir it to keep it from scalding on the bottom because it needs to come to a boil (bubble) to thicken. If you're not comfortable doing that, try using a double-boiler. But it must bubble. For extra zip in the custard, add 1/4 tsp. of lemon oil or 1 tablespoon of lemon zest. The meringue is simple and delicious. If you want a mile-high meringue, use 6 eggs whites (any leftovers in the freezer? Take 'em out!) and 1/2 cup sugar with 1/2 teaspoon cream of tartar and a pinch of salt. Eggs are easier to separate when they're cold. So do so, and let them come to room temp before using. Bananas are best if they're ripe and sweet. Don't get any that are green. If yours are green, wait for them to ripen (putting them in a brown paper bag will speed the process). Don't worry about having too many bananas....it's great piled high with all the ingredients! Best served warm, but good either way. Zap in microwave if you have kept it in the refrigerator for hot banana pudding! This is one of my favorite comfort foods!

1/2 cup sugar
4 tablespoons flour
1 pinch salt
2 cups whole milk
3 large egg yolks (save the whites)
1 large whole egg
1 teaspoon lemon oil (optional)
1 tablespoon lemon zest (fresh- also optional)
6 -7 bananas (a bunch)
15 ounces vanilla wafers (1 box)
3 egg whites (room temperature)
1/4 teaspoon cream of tartar
1 pinch salt
1/4 cup granulated sugar
1 teaspoon pure vanilla extract

Steps:

  • In a saucepan or double-boiler, mix the sugar, flour, salt, milk, egg yolks and whole egg. Cook over moderate heat, stirring constantly to bring up to a good temperature. Slowly increase heat until mixture thickens and bubbles and becomes thick. It will coat the back of a wooden spoon and when you draw your finger down the middle of the back of the spoon, the separation remains.
  • Remove from heat and add vanilla and lemon oil or zest if using.
  • Slice bananas 1/4" to 1/2" thick, whatever your preference.
  • Use a 2 quart souffle dish or 10-inch pie plate. Layer vanilla wafers on bottom. Top with some bananas, followed by the custard. Repeat until all the custard is used. Finish with custard and wafers pressed down into it.
  • Preheat oven to 350.
  • MERINGUE:.
  • Take room temperature egg whites and add cream of tartar and pinch of salt. Beat til foamy. As volume increases, slowly add sugar. Whip til glossy but not dry. Stop mixer and add vanilla. Whip til incorporated and meringue stands in stiff peaks but it not dry. Meringue should still have a nice sheen to it.
  • Dump meringue on top of prepared banana pudding mixture and spread out to the edges and seal to the edge using a spatula. Sealing is important as the meringue will shrink from the edges if you don't.
  • Bake in a 350 oven for 8-10 minutes, til golden brown. If you've tall peaks, watch closely for browning of the tips. They can brown really fast.
  • Remove from oven and cool on countertop. Serve warm or put in refrigerator when completely cool to keep meringue from sweating.

1/2 c sugar
1/3 c all purpose flour
1 dash(es) salt
3 large egg yolks at room temperature (reserve whites)
2 c whole milk
1 tsp vanilla extract
2 Tbsp butter
1/2 box vanilla wafers
6 medium ripe bananas
MERINGUE:
3 large egg whites at room temperature
1/4 c sugar
1/4 tsp cream of tartar
1 tsp vanilla extract
SPECIAL NOTE: THIS RECIPE DOUBLES WELL TO ACCOMODATE A 9 X 13 CASSEROLE DISH.

Steps:

  • 1. In a heavy saucepan, combine sugar and flour and salt, mixing to remove any lumps in the flour. Add milk and cook over low to medium heat, stirring constantly until thickened.
  • 2. Remove from heat. Beat egg yolks with fork and temper by adding a spoonful of the hot milk mixture and stir immediately. Repeat with about three more spoonfuls. Slowly pour tempered egg yolks into hot milk mixture, stirring constantly. Cook over medium heat for two minutes. Remove from heat and stir in vanilla and butter, set aside.
  • 3. Beat egg whites until soft peaks form. Slowly add sugar while beating. Add cream of tartar and vanilla and continue beating just until vanilla is thoroughly mixed. Set aside.
  • 4. Assemble pudding by lining a casserole dish with a layer of vanilla wafers. Peel three of the bananas and slice over vanilla wafer layer. Pour 1/2 of the pudding over the bananas and smooth with spoon. Place a few vanilla wafers down the sides and on top of the pudding layer. Peel and slice the remaining bananas over pudding layer. Spoon the remainder of the pudding over bananas and smooth with spoon. Top with meringue and decorate by making small peaks with a spoon.
  • 5. Bake at 400 degrees for 10 minutes or until lightly browned. Let sit at room temperature about one hour or until pudding is set. Enjoy!

The best banana pudding you ever tasted. Made with Jell-O instant pudding so it's quick and easy. A great recipe that you family and guests are sure to love.

4 -5 bananas, sliced
Pepperidge Farm Chessmen Cookie (4-5 packages)
1 (5 ounce) box Jello Instant Vanilla Pudding Mix
1 (3 1/2 ounce) box jello French vanilla instant pudding
1 (3 1/2 ounce) box jello banana instant pudding
8 ounces cream cheese (room tempeture)
14 ounces eagle brand sweetened condensed milk
1 (16 ounce) container large Cool Whip
1 (12 ounce) can Cool Whip
lemon juice

Steps:

  • Prepare all 3 boxes of pudding mix in same bowl as instructed on the box.
  • Let pudding chill in the refrigerator for 15-20 minutes.
  • Mix tub of Cool Whip and cream cheese with an electric mixer. Mix until smooth and creamy.
  • Once pudding mix is set, add the pudding and condensed milk to the Cool Whip and cream cheese mixture. Mix all together with electric mixer.
  • Slice bananas into 1" slices. Squeeze a small amount of lemon juice on the slices to prevent browning.
  • Use a 13x9 pan.
  • Layer cookies, pudding mix, bad banana slices. Make 3 layers. End with pudding layer.
  • Top with extra cookies and design with Cool Whip can.
  • Refrigerate approximately 1.5 hours.
