GRANDMA'S SWEET POTATO PIE

Delicious, spicy, and sweet. This is Grandma's famous Southern sweet potato pie recipe that has always kept our family going down South for each and every holiday! Enjoy with ice cream of whipped topping.

3 large sweet potatoes, peeled and diced
½ orange, peel cut into thin strips
1 pastry for a 9-inch pie crust
2 eggs
1 tablespoon pineapple juice
1 tablespoon salted butter, melted
1 teaspoon vanilla extract
1 tablespoon all-purpose flour
1 ½ teaspoons ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground ginger
1 pinch ground cloves
1 pinch salt
1 cup white sugar
1 cup heavy whipping cream

Steps:

  • Place sweet potatoes and orange peel into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until soft, about 10 minutes. Drain well and let cool. Discard orange peel.
  • Preheat oven to 400 degrees F (200 degrees C). Line a 9-inch pie plate with pie crust.
  • Mash cooled sweet potatoes with a potato masher or fork. Mix in eggs until well blended. Add pineapple juice, butter, and vanilla extract; mix until combined. Mix in flour, cinnamon, nutmeg, ginger, cloves, and salt. Mix in sugar until dissolved. Blend in heavy cream using a whisk.
  • Pour sweet potato mixture into the pie crust.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 40 to 50 minutes. Place on a cloth on a table or window sill to cool down.

¼ cup unsalted butter, melted
2 teaspoons vanilla extract
¼ teaspoon salt
1 cup brown sugar
1 cup white sugar
4 pounds sweet potatoes, peeled and sliced
2 tablespoons cornstarch

Steps:

  • Combine butter, vanilla extract, and salt in a bowl. Mix brown sugar and white sugar together in another bowl.
  • Layer potatoes and sugar mixture in the bottom of a slow cooker. Pour the butter mixture over the top.
  • Cover and cook on Low until tender, about 6 hours.
  • Remove 1/3 of the cooking liquid from the slow cooker and pour into a saucepan; whisk in cornstarch. Bring to a boil and cook until thick, about 5 minutes. Pour over potatoes and serve.

3 cups cooked, mashed sweet potatoes
1 cup white sugar
½ cup milk
⅓ stick unsalted butter, cut into pieces and softened
2 large eggs, slightly beaten
1 teaspoon vanilla extract
½ teaspoon salt
1 cup brown sugar
⅓ cup all-purpose flour
1 cup chopped pecans
1 cup shredded coconut

4 c mashed hot sweet potatoes ( i actually just use 3 or 4 large potatoes)
2 stick real butter
1 can(s) coconut ( i use flake and just throw in a handful)
1 tsp vanilla extract
1 c brown sugar packed
1/2 c white sugar
3 eggs beaten
1 c crushed corn flakes
1 c chopped pecans

Steps:

  • 1. Boil sweet potatoes until they are soft. Peel and mash while they are still hot. In a large bowl, Mix potatoes, 1 stick of butter (cut it into cubes and it will melt nicely), coconut, beaten eggs, vanilla, 1/2 cup of the brown sugar and the white sugar.
  • 2. In a separate bowl, melt the other stick of butter and add the remaining brown sugar, the chopped pecans, and the corn flakes. Mix well. Note: I double this step because I really like the crunchy stuff.
  • 3. Grease a 9x13 baking dish with butter or spray or whatever you like to use. I use a casserole dish and butter. Put in potatoes. Layer crunchy topping on top of the potatoes and bake at 325 until bubbly and golden brown. Usually about 30 minutes.
