GRANDMA'S DATE FILLED COOKIES

These cookies have two layers of delicious and light sugar cookies sandwiched with date filling. I even loved these as a kid, when dates weren't COOL!

Number Of Ingredients 13

1 1/2 cups dates, cut up fine (You may use a combination of figs, raisins and dates -l/2 cup each- if you prefer)
1/2 cup sugar
1 tablespoon flour
1/2 cup water
2 teaspoons lemon juice
1/2 cup shortening
1 cup sugar
2 eggs
2 tablespoons heavy cream or 2 tablespoons canned milk
1 teaspoon vanilla
2 1/2 cups flour
1/4 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Mix in a sauce pan the dates, sugar and TBSP of flour, water, and lemon juice. Cook this for about 5 minutes on a medium heat, until all are blended well.
  • Mix together the shortening, sugar, and eggs.
  • Stir in the 2 Tbsps. thick cream and l teaspoons vanilla.
  • Sift together the 2 1/2 cups of flour, baking soda and salt. Add to shortening mix to form dough.
  • Chill dough for at least 1 to 2 hours.
  • Roll out dough in thin layers in small batches and cut with round cookie cutter.
  • Put mixture (about a tbsp.) in the center between 2 thin cookies pressed together.
  • Bake at 350 degrees on lightly greased sheet pan for 8-10 minutes or until bottoms are lightly browned.

1/3 cup butter, softened
2/3 cup packed brown sugar
1 large egg
3/4 cup all-purpose flour
2/3 cup whole wheat flour
2 teaspoons grated lemon zest
1-1/2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1/4 cup fat-free milk
1 cup chopped dates

Steps:

  • In a bowl, cream butter and brown sugar. Add egg; mix well. Combine the flours, lemon zest, baking powder, cinnamon, nutmeg and salt; add to creamed mixture alternately with milk, beating well after each addition. Stir in dates., Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 325° for 13-15 minutes or until golden brown. Remove to wire racks to cool. Store in an airtight container.

These are old fashioned cookies that have been in my family for many years. I have not tried them myself, but am submitting them in response to a request. I got the recipe from my great aunt, who says it's from her mother. She says they always used to call these "Grandma Cookies". I'm fairly sure you could use either softened butter or oil in place of the "fat"! Sorry I have no clue about how many cookies this makes or exactly how hot the oven should be!

Number Of Ingredients 13

1 cup fat
2 cups sugar
3 eggs
1 tablespoon cream
2 teaspoons cinnamon
1 teaspoon clove
1 teaspoon nutmeg
1 cup ground dates
1 teaspoon vanilla
4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
walnuts or pecans (for topping)

Steps:

  • Cream fat and sugar.
  • Add the rest of the ingredients and mix.
  • Chill for 2 hours or longer.
  • Break bits of dough and flatten down with glass, 3 inches apart on greased baking sheet.
  • Flatten with knife which has been dipped in cold water.
  • Put 1/2 walnut or pecan on top.
  • Bake for 10 minutes in moderate oven.

Family Christmas tradition. Is it candy or a cookie? Grandma Ziegler says it's a cookie that tastes better than candy. Enjoy with a cup of coffee. They are yummy. Store in an airtight container; do not store in the refrigerator.

1 cup shredded coconut, or as needed
1 cup white sugar
½ cup margarine, softened
2 eggs, beaten
½ cup chopped pecans
½ pound chopped dates
2 ½ cups crispy rice cereal (such as Rice Krispies®)
1 teaspoon vanilla extract

Steps:

  • Place coconut in a shallow bowl.
  • Stir sugar, margarine, and eggs together in a heavy skillet on the stove, with the burner off. Add pecans and dates. Cook over medium heat, stirring continuously, until thickened, about 10 minutes.
  • Stir in rice cereal and vanilla extract. Remove from the heat and quickly roll mixture into 1-inch balls. Roll balls in coconut to coat and place on waxed paper to cool.

1 cup butter, softened
2 cups packed brown sugar
2 large eggs
1/4 cup water
1/2 teaspoon vanilla extract
3-1/2 cups all-purpose flour
1-1/2 teaspoons cream of tartar
1-1/2 teaspoons baking soda

Steps:

  • Cream butter and brown sugar until light and fluffy. Beat in eggs, water and vanilla. In a separate bowl, whisk together remaining ingredients; gradually add to creamed mixture, and mix well. , Shape into two rolls; wrap in plastic. Chill 4 hours or overnight. , Preheat oven to 375°. Cut rolls into 1/4-in. slices; place 2 in. apart on greased baking sheets. Bake until lightly browned, 8-10 minutes. Remove to wire racks to cool.

I used raspberry gelatin in this recipe and the flavor was delicious. I loved the date filling. I can see why Grandpa started making them in October. Not sure how that would work for me... I might have them all eaten by Christmas. I kept going back to sneak a cookie and the flavors were better every time!

Number Of Ingredients 14

2 c sugar
1 1/2 c honey
1/2 pkg gelatine powder - your choice of flavour
1/2 tsp ground cinnamon
1 pinch ground cloves
1 c water
1 tsp vanilla extract
1 tsp baking soda
1 tsp baking powder
3/4 c butter or margarine
7 c all purpose flour
2 c dates - chopped
2 c apples - chopped
1 c water

Steps:

  • 1. Boil honey and sugar together. Stir in gelatine powder. I like orange flavour. Grandpa used to use orange or raspberry.
  • 2. In a large bowl, add the honey mixture to the remaining ingredients.
  • 3. Mix well, should form soft dough. Cover and let rest for 1 hour or overnight.
  • 4. Roll out thin and cut with a 2" circular cookie cutter.
  • 5. Put 1 teaspoon filling mix* in middle of circle. Moisten edges and fold over as if making a perogy and seal firmly.
  • 6. Put on cookie sheets.
  • 7. Bake at 350°F for 10 minutes or until done. Let cool and ice top with white icing.
  • 8. To Prepare Date Filling:
  • 9. In a saucepan, combine dates, apples and water. Cook, stirring constantly, until mixture thickens. Cool completely.
