1 cup chopped onion
1/2 cup chopped celery
2 tablespoons butter, melted
3 cups fresh corn, cut from cob
1 1/2 cups peeled potatoes, cubed
1 1/2 cups water
2 chicken bouillon cubes
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried whole thyme
2 cups milk
1 cup half-and-half cream

Steps:

  • Saute onion and celery in butter in a large saucepan until tender.
  • Stir in next 7 ingredients; cover and simmer 15 minutes.
  • Add milk and half & half; cook stirring constantly, until thoroughly heated.

½ pound bacon
2 stalks celery, chopped
2 medium (2-1/2" dia)s small onion, diced
2 tablespoons margarine
salt to taste
ground black pepper to taste
1 (14.75 ounce) can cream-style corn
1 (15.25 ounce) can whole kernel corn
4 cups chicken broth
2 cups milk
6 small potatoes, cubed
2 carrot, (7-1/2")s carrots, chopped
2 tablespoons all-purpose flour

Steps:

  • Fry bacon in pan until almost done. Add onions and celery, and saute until lightly browned.
  • Transfer to a cooking pot. Add cream-style corn, kernel corn, butter, and broth. Add carrots and potatoes. Cook for about 15 minutes.
  • Mix together flour and a little water to form a paste.
  • Add milk and flour paste. You might want to add more flour paste, depending on how thick you like your chowder. Simmer for 30 minutes or until you are ready to eat. Add salt and pepper to taste.

½ cup diced bacon
4 medium potatoes, peeled and chopped
1 medium onion, chopped
2 cups water
3 cups cream-style corn
2 teaspoons salt
ground black pepper to taste
2 cups half-and-half

Steps:

  • Place the bacon in a large pot over medium-high heat, and cook until crisp. Drain and crumble, reserving about 2 tablespoons drippings in the pot.
  • Mix potatoes and onion into the pot with the crumbled bacon and reserved drippings. Cook and stir 5 minutes. Pour in the water, and stir in corn. Season with salt and pepper. Bring to a boil, reduce heat to low, and cover pot. Simmer 20 minutes, stirring frequently, until potatoes are tender.
  • Warm the half-and-half in a small saucepan until it bubbles. Remove from heat before it boils, and mix into the chowder just before serving.

Being from the Easy Coast, I've tried a lot of different chowders; however, my Mom's takes the cake. She makes a huge pot of this chowder every Christmas Eve and all of it is gone by Christmas night. Although it is not very healthy, it is an awesome treat once in awhile for any of us that love seafood! I normally throw in a dash of garlic and onion powder. Enjoy!

2 large onions, diced
3 carrots, sliced
7 potatoes, cubed
1 pound salmon, cut into chunks
1 pound cod, cut into chunks
1 pound scallops
1 pound shrimp, peeled and deveined
6 ounces cooked lobster meat, shredded
1 (6 ounce) can crabmeat, drained and flaked
2 (6.5 ounce) cans chopped clams, drained
4 ¼ cups heavy whipping cream
2 cups half-and-half
1 ½ cups butter, cut into chunks
salt and ground black pepper to taste

Steps:

  • Fill a large pot halfway with lightly salted water; bring to a boil. Add onions and carrots; cook until slightly tender, 10 minutes. Add potatoes; cook until tender, 15 to 20 minutes.
  • Stir in salmon, cod, scallops, shrimp, lobster, and crab; cook over medium heat until salmon and cod are firm but chunks are still slightly translucent in the center, about 10 minutes. Drain half the water from the pot and add clams, heavy cream, and half-and-half. Place butter chunks atop the soup; season with salt and black pepper. Cover and simmer, stirring occasionally, until salmon and cod are fully cooked and flake easily with a fork, about 30 minutes.

My kids grew up on this recipe so now, when they're home from college, it's a demanded meal. Great for Friday nights and Sunday afternoon. Awesome with a pale ale. Not a good recipe if you're on a diet!

1 lb chopped clam
6 slices thick slab bacon (cut into 1-inch squares)
10 small unpeeled yukon gold potatoes, cut into 1-inch cubes (or small white)
2 quarts fresh turkey broth (or chicken broth)
2 large carrots (peeled and sliced in 1/4 inch rounds)
1 large yellow onion (chopped)
2 -3 large celery ribs (trimmed and sliced thin)
1 cup flour
1/2 pint heavy cream
2 turkish bay leaves
1/4 cup chopped parsley
salt and pepper
1 teaspoon Tabasco sauce or 1 teaspoon hot sauce

Steps:

  • Lay out bacon in the bottom of a large stock pot over low heat. Render bacon slowly until nearly crisp but while grease is still very liquid (about 10 minutes).
  • Add onions, carrots and celery and cook until nearly soft. Turn up heat slightly if necessary (about 10 minutes).
  • Add potatoes to vegetables and mix well.
  • Sift in flour slowly, stirring constantly, until flour and bacon grease make a roux.
  • Add salt, pepper and hot sauce.
  • Add stock to cover vegetables (no more than 1" over).
  • Stir, add bay leaves and bring to a boil.
  • When just at boiling, reduce heat and simmer until potatoes are cooked through but not mushy (20-25 min.).
  • Add clams and increase heat until just boiling then remove from heat.
  • Stir in cream.
  • Ladle to bowls and garnish with parsley.

3 medium onions, chopped
4 medium white potatoes, chopped
2 tablespoons garlic, minced
4 tablespoons lemon juice
2 tablespoons butter
2 bay leaves
1/2 teaspoon thyme
1/2 teaspoon Old Bay Seasoning
1 teaspoon salt
1 teaspoon black pepper
1/2 cup white wine
2 tablespoons Worcestershire sauce
2 stalks celery, chopped
yellow celery leaves (add any)
1 cup carrot, chopped
2 1/2 lbs fish fillets, cubed
2 cups water, you can add more
1 (14 ounce) can stewed tomatoes

Steps:

  • Chop up the fish and sprinkle with lemon juice, put in a bowl and refridgerate till needed.
  • Saute onion and garlic with butter till golden brown.
  • Add thyme, old bay, salt, pepper, potatoes, bay leaves and celery leaves, sauté for a minute.
  • Add carrots and tomatoes, sauté for a minute, then add the water.
  • Simmer for 20 minutes with cover on.
  • Add fish, Worcestershire, wine, celery and cover, simmering for 15 minutes or until fish is done.
  • Serve with garlic bread and salad.

1/2 pound sliced bacon, diced
2 medium onions, chopped
6 cups cubed peeled potatoes
4 cups water
1 pound bay or sea scallops, quartered
1 pound lobster meat, cut into 1-inch pieces
1 pound uncooked medium shrimp, peeled and deveined
1 pound cod, cut into 1-inch pieces
1 pound haddock, cut into 1-inch pieces
1/2 cup butter, melted
4 teaspoons salt
4 teaspoons minced fresh parsley
1/2 teaspoon curry powder
2 quarts whole milk
1 can (12 ounces) evaporated milk
Oyster crackers, optional

Steps:

  • In a large soup kettle or Dutch oven, cook bacon over medium heat until crisp. Remove with a slotted spoon to paper towels; reserve drippings. Saute onions in drippings until tender. Add potatoes and water; bring to a boil. Cook for 10 minutes., Add the scallops, lobster, shrimp, cod and haddock. Cook for 10 minutes or until scallops are opaque, shrimp turn pink and fish flakes easily with a fork. Add the butter, salt, parsley and curry powder. Stir in milk and evaporated milk; heat through.
