My grandma used to make this all the time and my husband and I LOVED it. This delicious and easy to put together casserole with ground beef, peppers, onions, tomato sauce and cheese can be made as spicy or mild as you wish.

Number Of Ingredients 10

1 onion, finely diced
1 bell pepper, finely diced
1 jalapeno, seeded and finely diced (or 1/2 small can of diced jalapenos)
3 -4 garlic cloves, minced
1 lb ground beef
5 cups cooked white rice
24 ounces classico spicy red pepper sauce
2 tablespoons hot sauce (or to taste)
8 ounces cheddar cheese, shredded
6 -8 slices American cheese

Steps:

  • Preheat oven to 350°F.
  • Brown ground beef with veggies.
  • Stir in rice, sauces, cheddar.
  • Transfer to lightly greased casserole dish.
  • Cover with American cheese.
  • Bake at 350F for 30 minutes or until brown/bubbly.

1 pound lean ground beef (90% lean)
1 large onion, chopped
1 medium green pepper, chopped
1 can (15 ounces) tomato sauce
1 can (14-1/2 ounces) no-salt-added diced tomatoes, drained
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon salt
2-2/3 cups cooked brown rice
Chopped green onions, optional

Steps:

  • In a large skillet, cook beef, onion and pepper over medium heat 6-8 minutes or until beef is no longer pink and onion is tender, breaking up beef into crumbles; drain., Stir in tomato sauce, tomatoes and seasonings; bring to a boil. Add rice; heat through, stirring occasionally. Garnish with green onions, if desired.
