These is another good recipe from my Grandma , I enjoy this for lunch or for a dinner meal.

1 c cornmeal
1 c water, boiling
1 can(s) salmon
1 egg ; well beaten
3/4 tsp salt
1/4 tsp pepper

Steps:

  • 1. Mix together : cornmeal , water and the salmon.
  • 2. Then add the egg and salt and pepper to taste.
  • 3. Mix well : Make spoon patties and place into a fry pan. Fry SLOWLY on both sides.
  • 4. Place on a platter and sprinkle with some grated cheese. Garnish with a tomato.

2 tablespoons vegetable oil
½ medium onion, chopped
1 (6 ounce) package savory herb-seasoned stuffing mix (such as Stove Top®), crushed
½ cup salted butter, melted
3 medium eggs
2 tablespoons seafood seasoning (such as Old Bay®)
1 tablespoon dried parsley
1 tablespoon garlic powder
1 teaspoon onion powder
1 teaspoon dry mustard
1 teaspoon ground coriander
2 (14 ounce) cans salmon, drained and flaked

Steps:

  • Heat oil in a skillet over medium-high heat. Add onion and lightly sweat, about 5 minutes. Transfer onion to a bowl, reserving drippings in the pan.
  • Add stuffing mix, butter, eggs, seafood seasoning, parsley, garlic powder, onion powder, dry mustard, and coriander to the onion and mix well. Mix in salmon until well combined. Form mixture into 8 equal-sized patties (I use an old egg ring; works great).
  • Heat the same skillet over medium heat. Cook patties in the hot pan until golden brown and cooked through, 4 to 5 minutes per side.

1 (14.75 ounce) can canned salmon
1 egg
¼ cup chopped onion
½ cup seasoned dry bread crumbs
1 tablespoon olive oil

Steps:

  • Drain and reserve liquid from salmon. Mix egg, onion, bread crumbs and salmon together.
  • Make into patties. If mixture is too dry to form into patties, add reserved liquid from salmon.
  • In a frying pan, heat olive oil. Place patties in pan. Brown on each side, turning gently. Drain on paper towels and serve.

I loved salmon patties, and still eat them the same way as I did when I was a kid, simply dipped in ketchup! These I'm sure would also be good dipped in my homemade tartar sauce, a honey mustard sauce or a dilled sour cream and...

1 (16 oz.) can boneless skinless salmon (the regular tall can)
2 Tbl. very finely chopped onion
2 tsp. dried parsley
2 small eggs, slightly beaten, or 1 extra large or jumbo
1/2 tsp. lemon juice
1/8 tsp. pepper, or to taste
1/8 tsp. cayenne powder, or more to taste
1/3-1/2 cup finely crushed saltines or ritz, for stiff but not dry mixture
1 Tbl. vegetable oil
3 Tbl. butter

Steps:

  • 1. Drain salmon well, and remove skin and bones if not using boneless skinless. Place into medium mixing bowl and mash up with fork. Add all other ingredients except oil and butter and mix together (mixture should be stiff enough to form patties, but not too dry). Form into patties and place in a pre-heated skillet over medium heat with the vegetable oil and melted butter mixed together. Cook until deep golden brown on both sides. About 4 minutes per side, but watch so they don't burn and that they are nicely browned. Can sub 1/2 cup flour if preferred over crushed crackers. And if you prefer them "poofed" a little, add 1 1/2 tsp. baking powder. Serve with sauce of choice!

Salmon cakes are one of my go-to emergency meals. Every once in a while I like to use fresh salmon. Salmon is one of those products, like chicken, that's very easy to get into a rut with. People generally find a few recipes that work for them, and just stay with those, but this fairly simple preparation should be easy to add to anyone's rotation. Serve with lemon wedge and remoulade sauce. You can use any bread crumbs instead of panko breadcrumbs, if desired.

1 tablespoon extra-virgin olive oil
¼ cup minced onion
2 tablespoons minced red bell pepper
2 tablespoons minced celery
salt and pepper to taste
1 tablespoon capers
1 ¼ pounds fresh wild salmon, coarsely chopped
¼ cup mayonnaise
¼ cup panko bread crumbs
2 cloves garlic, minced
1 teaspoon Dijon mustard
1 pinch cayenne pepper
1 pinch seafood seasoning (such as Old Bay®)
1 tablespoon panko bread crumbs, or to taste
2 tablespoons olive oil, or as needed

Steps:

  • Heat extra virgin olive oil in a skillet over medium heat. Cook and stir onion, red pepper, celery, and a pinch of salt in hot oil until onion is soft and translucent, about 5 minutes. Add capers; cook and stir until fragrant, about 2 minutes. Remove from heat and cool to room temperature.
  • Stir salmon, onion mixture, mayonnaise, 1/4 cup bread crumbs, garlic, mustard, cayenne, seafood seasoning, salt, and ground black pepper together in a bowl until well-mixed. Cover the bowl with plastic wrap and refrigerate until firmed and chilled, 1 to 2 hours.
  • Form salmon mixture into four 1-inch thick patties; sprinkle remaining panko bread crumbs over each patty.
  • Heat olive oil in a skillet over medium-heat. Cook patties in hot oil until golden and cooked through, 3 to 4 minutes per side.
