1 (8 ounce) box Jiffy cornbread mix
1/2 cup mayonnaise
2 eggs
1/4 cup oil
2 tablespoons sugar

Steps:

  • Dump jiffy in bowl.
  • Add eggs and oil.
  • Add mayo and sugar.
  • Stir well, mixture will be thick.
  • Put in a 8 x 8-inch dish and cook at 350°F for 30-45 minutes.
  • Makes a pan of cornbread that will hold up to beans.

Very easy and good. This is my grandma's recipe from the 1950's. Grandma would often stir up a batch while the main dish for dinner was cooking. They are best hot and fresh.

2 c all purpose flour
1 tsp baking powder
4 Tbsp mayonnaise
1 c milk

Steps:

  • 1. Preheat oven to 425 degrees. Grease a muffin tin and set aside.
  • 2. In a bowl, combine flour, baking powder, mayonnaise, and milk. Stir together until smooth. Spoon the batter into a greased muffin tin, filling two-thirds full. Bake at 425 degrees for 12 to 15 minutes. Watch carefully because these can quickly burn.

This bread recipe is easy and very forgiving. It can be made with any flour, and the addition of any nut or dried fruit. It makes a dense, soft and chewy bread. It has been handed down through 5 generations and originated in the 1800's.

8 -11 cups flour, divided
4 teaspoons yeast
4 cups hot water
4 teaspoons salt
2/3 cup oil (original recipe calls for canola or other vegetable, we use olive oil)
1/3 cup sugar

Steps:

  • Place 4 cups flour in large mixer bowl with dough hook.
  • In separate bowl combine water, oil, sugar, yeast, and salt. With mixer on low pour liquid into mixer. Combine well.
  • Add flour 1 cup at a time, mixing well after each addition, until dough is not sticky and comes all together. Once all combined, allow mixer to knead on low 5-10 minutes.
  • Oil dough and bowl, cover with a cloth and put in warm area. Allow to rise until doubled (about an hour).
  • Turn out onto lightly floured surface and roll into log. Divide into 3 equal parts. Place into well greased bread pans.
  • Cover and let rise until doubled. Preheat oven to 375°.
  • Bake for 35 minutes.
