2 cups whipping cream
1 can crushed pineapple or pineapple tidbits
2 large cans mandarin oranges
1 can fruit cocktail
1 bag of mini marshmallows

Steps:

  • Freeze the mixing bowl for 20 minutes before whipping the cream.
  • Add 1 tablespoon of pineapple juice from the can to the whipping cream as you whip it.
  • Stop when soft peaks form.
  • Drain the juice for all the cans of fruit and combine in a large bowl.
  • Add the bag of marshmallows.
  • Then, fold in the whipped cream.
  • Cover and put in the fridge until ready to serve.

Number Of Ingredients 19

SALAD INGREDIENTS
1 bunch seedless white grapes, removed from stem and washed
1 bunch seedless dark grapes, removed from stems and washed
4-5 medium delicious apples, cored, sliced into 8th's, and then into about 1/2 inch pieces. Leave skin on for color and extra fiber. (Peel if you wish.)
1 bottle maraschino cherries, seeded, stemmed and well drained, 8 oz
2 can(s) mandarin orange sections, well drained, 10.5 oz each
1 bunch celery hearts, cut into small cubes (leaves removed)
2 can(s) pineapple chunks, very well drained, 20 oz each
1 bunch bananas (4-5 medium), peeled and sliced
1 pkg miniature marshmallows (or large marshmallows cut into fourths w/ kitchen scissors)
1 1/2 lb walnut pieces
SALAD DRESSING
16 oz Cool Whip topping, thawed, two 8 oz tubs
2-1/2 c mayonnaise, light
2 tsp ground cinnamon
1/2 tsp ground cloves
2 Tbsp granulated sugar (or to taste)
2 tsp pure vanilla extract
1 Tbsp rum or almond extract (your choice, to taste)

Steps:

  • 1. FIRST, you will need 1 very large bowl for the salad and a medium mixing bowl for mixing dressing. (My VERY LARGE bowl is about 15 inches in diameter, and about 10 inches tall.) Wash and drain all fresh fruits and celery; allow to drain until as dry as possible. Drain all canned ingredients well.
  • 2. Remove grapes from stems, cut in half if you wish, and add to the large mixing bowl. Cut cherries in half, if you wish (and remove stems, if needed). Add all to the salad bowl, along with drained canned orange segments and pineapple chunks.
  • 3. Cut up apples and celery as directed in the ingredients list. dd to the large bowl (as per above).
  • 4. Peel and slice bananas, and add to the salad bowl.
  • 5. If using large marshmallows, cut them into quarters with kitchen shears into the salad bowl. If using miniature marshmallows, just add them to the salad bowl.
  • 6. Add walnut pieces to the salad bowl.
  • 7. To make the salad dressing, place thawed Cool Whip in a medium mixing bowl. Add mayonnaise and whisk them together. Add sugar, spices, and rum (or almond) extract.
  • 8. Mix the dressing well to thoroughly combined.
  • 9. Pour dressing over salad in a large bowl.
  • 10. Gently fold all ingredients with a rubber spatula until well coated with dressing.
  • 11. Cover and refrigerate for 1-2 hours before serving.

My great grandmother who was born in the late 1800's passed this recipe down to my Dad who has carried on the tradition of making this lusciously rich desert every Thanksgiving and Christmas as do I now. Its easy but its so good!

1 jar(s) marischino cherries in the juice
1 can(s) crushed pineapple
1 pkg kraft jet puffed marshmallows (not the miniature ones)
2-3 medium banana's
1/4 c sugar
1/2 qt whipping cream

Steps:

  • 1. Pour whipping cream in bowl (preferably glass cause plastic can have a bit of grease and the cream wont take if there's any oil or grease) and whip with an electric mixer until stiff peaks start to form. The same consistency as what whipped cream is supposed to be, obviously, lol.
  • 2. You'll need a good pair of scissors and a glass of water. Using clean scissors snip the marshmallows in half or quarters if you like but halves are easiest, dipping the scissors in the water to cut the marshmallows easier as it gets sticky. The miniature Marshmallows tend to get mushy too quickly so that's the reason I use the big marshmallows.
  • 3. Drain and add pineapple. Discard juice.
  • 4. Take the cherries out of the jar and save the juice. Cut the cherries over the bowl so the juice drips into the mixture.
  • 5. Slice bananas. I cut them in half down to the bottom of the peel and then cross cut them into 4ths but you can slice them how you like. Add to mixture. (I cut everything over the bowl and just let it fall right in).
  • 6. Give the mixture a stir or two and then add a little at a time, take your leftover cherry juice and a splash or two and mix it up til its nice and pink and has a slight cherry taste to it.
  • 7. Cover and Refrigerate for 3-4 hours or until marshmallows are softened. The only drawback to this dish is that the bananas will tend to brown by the next day. Its still good but over a couple of days it can get a little watery/oily texture to it. Not much you can do about that. However, the stuff never is around that long anyway because the family eats it up pretty quick. You can also add other things to this recipe like grapes, raisins or nuts. It's up to you. You can also substitute Cool Whip for the whipping cream but I like the real thing. Enjoy!
  • 8. *if you want to make double the recipe, obviously you're going to double the ingredients. For heart patients my father happens to be one and they told him to use Cool Whip instead of whipping cream. I love the real thing though.

GRANDMA'S HEAVENLY HASH

Some people call this Rocky Road candy, but our grandma called it Heavenly Hash. Grandma or mom almost always made it for us around Christmas time. Grandma used to wrap each piece individually in plastic wrap, but I'm afraid I don't have that kind of patience. Either way, it looks pretty stacked up on a decorative plate and tastes heavenly as it melts in your mouth. If using a microwave to melt chocolate and butter, stir thoroughly between 30-second bursts until chocolate is completely melted.

1 (12 ounce) package semi-sweet chocolate chips
1 cup butter
1 cup chopped walnuts
½ (10.5 ounce) package miniature marshmallows
1 teaspoon vanilla extract

Steps:

  • Heat chocolate bars, chocolate chips, and butter in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
  • Remove chocolate mixture from heat; stir in walnuts, marshmallows, and vanilla until completely coated. Spread mixture into 9x13-inch baking pan, gently pressing down with spatula to evenly flatten out. Refrigerate until hardened, 4 to 5 hours.

1 ½ cups water
¾ cup uncooked white rice
2 cups crushed pineapple, drained
1 (10.5 ounce) package miniature marshmallows
1 (4 ounce) jar maraschino cherries, halved
1 cup heavy cream
½ cup confectioners' sugar, or to taste

Steps:

  • In a saucepan bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes. Cool completely.
  • In a large bowl, combine rice, pineapple, marshmallows, cherries and about 1 tablespoon cherry juice. In a chilled bowl, whip the cream until peaks form. Fold in confectioners sugar. Fold whipped cream into rice mixture. Refrigerate for 2 hours.

1 (2 pound) package frozen hash brown potatoes, thawed
1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded Cheddar cheese
1 (8 ounce) container sour cream
½ cup melted butter
½ cup chopped onion
½ teaspoon salt
½ teaspoon ground black pepper
1 cup crushed cornflakes
½ cup melted butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix hash browns, cream of chicken soup, Cheddar cheese, sour cream, butter, onion, salt, and pepper together in a bowl. Arrange in a 9x13-inch baking dish. Sprinkle on top. Drizzle butter over the cornflakes.

2 pkg bag of tiny marshmallows (white)
1 pkg bag of cocoanut flakes
1 bottle food coloring drops (red or green)
2 pkg cool whip (original)
2 can(s) fruit cocktail, canned
2 pkg pecan pieces

Steps:

  • 1. Drain your Fruit Cocktail from it's syrup or juices real well...let it drain for about 10 minutes...then gently place in a plastic or ceramic mixing bowl (non aluminum or steel)
  • 2. Add your Pecan Pieces about a cup's worth and your tiny marshmallows about two cup's worth on top of the fruit mixture and add the cool whip and slowly enfold the marshmallow, fruit and nut through the cool whip...Don't over mix and pour it into a serving dish and promptly cover it with lid or saran wrap and keep it in the fridge while you make the cocoanut topping.
  • 3. Place the cocoanut in a mixing bowl and add a few drops of food dye (red or green..your choice or even use pastel dye for whatever your taste and design fancies...MIX the Cocoanut Flakes well with the dye until covered....when done....take the fruit cocktail whip and delicately sprinkle the colorized cocoanut flakes on the top...and recover until you are ready to serve.....sweet and simple!

A custardy, fruity wonderful salad. No wonder it was called heavenly!

3 egg yolks
2 Tbsp sugar
dash(es) salt
1 Tbsp vinegar
3 Tbsp pineapple syrup
2 c whipped cream
2 c seedless grapes
2 c miniature marshmallows
2 c pineapple bits
1 Tbsp butter
sliced banana, optional

Steps:

  • 1. Cook yolks, sugar, salt, vinegar and butter in double boiler until thick. Cool. Fold in remaining ingredients. Refrigerate overnight. If desired, add bananas just before serving.
